FRIED APPLES - GRANDMA CARR'S RECIPE
This recipe is actually skillet cooked, not fried, but we always called it fried. Back in the 1950's, in the fall, there were lots of apples on the farm and Grandma made this recipe. It is so good! Of course, brown sugar, butter, cinnamon, and apples.... How can you lose? Cracker Barrel restaurants serve a version of this dish and its very popular there.

Steps:
- Melt butter in large skillet over medium heat. Stir in sugar, cinnamon, and cornstarch. Mix well. Stir in water. Add apples. Cook over medium heat, stirring, until apples are tender. Makes 4-6 servings.

- Melt butter in a large cast-iron or other ovenproof skillet. Add apples and 1/2 cup sugar; stir to mix well. Cover and cook over low heat for 20 minutes or until apples are tender, stirring frequently. , Add cinnamon and remaining sugar. Cook and stir over medium-high heat 5-10 minutes longer. If desired, serve with ice cream.

GRANDMA'S APPLE PIE
You'll elicit oohs and aahs every time you serve slices of this classic apple pie. The crisp crust is a nice complement to the tender apples.

- Line a 9-in. pie plate with bottom crust; trim crust even with edge of plate. Set aside. , In a large bowl, toss apples with lemon juice. Combine the sugar, flour, cinnamon and nutmeg. Arrange half of the apples in pastry shell; sprinkle with half of the sugar mixture. Repeat layers. Dot with butter. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush with milk and sprinkle with additional sugar. , Cover edges loosely with foil. Bake at 425° for 20 minutes. Remove foil; bake 30-35 minutes longer or until crust is golden brown and filling is bubbly. Serve warm if desired or cool on a wire rack.

GRANDMA'S APPLESAUCE PIE
This is one of the recipes I remember most from my childhood. My grandmother always had this on hand for her grandkids who came to visit. It was invented especially for us kids because it had no "chunks" of apple in it. There was no surprise that the adults loved this pie, just as much as we did.

Steps:
- Prepare pastry for 2 crust pie shell, using your favorite recipe for pie shells.
- Roll out 2 balls of dough until they measure large enough to fit your pie pan.
- Line bottom of 8" pie pan with one of the rolled out pastry pieces.
- Set the other rolled-out dough aside for a bit.
- Bake the shell for 10 to 15 minutes at 375 degrees; set aside.
- In a mixing bowl, combine beaten eggs, applesauce, sugar and seasonings.
- Pour mixture into 8" prepared pie shell.
- Add top pastry to pie and seal edges.
- With tines of a fork, prick holes on top of pie shell to vent.
- Bake at 450 degrees for 10 minutes, then turn oven down to 350 degrees and continue baking 30 more minutes.
- Note: If you like a more custard-y pie, try adding 1/2 to 1 cup of milk to the above ingredients before pouring into the pieshell (use a 9" shell in this case).

Traditional savory dish, great with roast pork or pork chops. Chilled with some added bacon bits, it makes a great summer BBQ salad.

- Heat the butter in a skillet over medium heat until the foam subsides. Cook and stir the onion until translucent, about 5 minutes. Add the apples, and cook and stir until the onion and apples are starting to brown and the apples are soft, about 10 more minutes. Sprinkle on salt to taste.

This is how my mom has made this dish for us. Posting for my family. Very good, down home comfort food at its finest. These are great with pork chops, chicken, country fried steak or even mush!

Steps:
- Wash and slice cooking apples (adjust amount per how many you are feeding).
- I generally use Jonathon, or any other cooking apples.
- In an iron skillet, fry bacon until done. Remove bacon, drop in the prepared apples stir well, sprinkle with white sugar, add the water, and the cinnamon if desired. Put the lid on the skillet and continue to stir every once in a while until apples are done to your tastes.
- You can also put the bacon back in the apples before they are done, I generally only cook 2 pcs of bacon and maybe 4-5 apples for the two of us.
