GRANDMA'S STRAWBERRY SHORTCAKE
Here's a family-sized version of my grandma's summertime dessert. I can still taste the sweet juicy berries she piled over warm biscuits and topped with a huge dollop of fresh whipped cream. Steps:
- Preheat oven to 450°. Combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk egg and half-and-half. Add all at once to crumb mixture; stir just until moistened. , Spread batter into a greased 8-in. round baking pan, slightly building up the edges. Bake until golden brown, 16-18 minutes. Remove from pan; cool on a wire rack. , Beat heavy cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form. Split cake in half crosswise; butter bottom layer. Spoon half the strawberries over bottom layer. Spread with some whipped cream. Cover with top cake layer. Top with remaining berries and whipped cream. Cut into wedges.

MA'S ONE EGG CAKE
This was my Grandma's recipe. I believe it dates back to the depression. A moist and versatile cake that will please everyone. Really good with recipe #182807 or for strawberry shortcake or pineapple upside-down cake. You can double the recipe for a 10x13 pan or triple the recipe for a 12x16 pan.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Grease and flour a 9 inch x 9 inch pan.
- Sift dry ingredients together.
- Add shortening, the 2/3 cup milk, and the vanilla; beat for 2 minutes.
- Add the 1/3 cup milk and egg; beat for 2 more minutes.
- Pour into prepared pan.
- Bake for about 45-50 minutes or until done. You might check a little earlier because my oven runs cool. If doubling or tripling the recipe, you'll have to increase the cooking time substantially.
- UPSIDE DOWN CAKE:.
- If making pineapple upside down cake, use the strained juice in the batter, reducing the milk by the amount of juice used.
- Drop pieces of butter and sprinkle brown sugar on pan.
- Lay pineapple rings down.
- Pour cake batter on top.

GRANDMA'S BAKING POWDER BISCUITS
This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

- Preheat an oven to 450 degrees F (230 degrees C).
- Sift flour, sugar, baking powder, cream of tartar, and salt into a bowl. Use a pastry cutter to chop vegetable shortening into the flour mixture until it resembles coarse crumbs. Whisk egg and milk together in a separate bowl and slowly add milk mixture to flour mixture, stirring as you pour, until dough is moistened and well-mixed. Drop dough by spoonfuls onto an ungreased baking sheet.
- Bake in the preheated oven until biscuits have risen and are golden brown, 10 to 12 minutes.

- Combine strawberries with sugar and vanilla; mash slightly. Let stand at least 30 minutes, tossing occasionally., Preheat oven to 400°. For shortcakes, whisk together flour, 4 tablespoons sugar, baking powder, baking soda and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter by 1/3 cupfuls 2 in. apart onto an ungreased baking sheet. Brush with 2 tablespoons heavy cream; sprinkle with remaining 1 tablespoon sugar. Bake until golden, 18-20 minutes. Remove to wire racks to cool completely., For topping, beat heavy whipping cream until it begins to thicken. Add sugar and vanilla; beat until soft peaks form. To serve, cut shortcakes in half; top with strawberries and whipped cream.

GRANDMA'S RECIPE - APPLE SHORTCAKE
Delicious Apple Shortcake, the one you remember from your childhood

- Preheat Oven to 180C Bake- 355F
- Cream the butter and the sugar in a food mixer until pale, approximately 4 minutes
- Add eggs and blend well, then sift the dry ingredients and combine until the dough comes away from the side of the bowl. (If you know me from this blog you know I never sift anything so up to you!)
- Gently knead into a ball and fridge in plastic wrap for 30 minutes (at least).
- Roll out half of the dough on a well floured bench into desired shape and using rolling pin to carefully transfer the dough to the prepared greased dish and gently press in - trim off excess if needed.
- Sprinkle a small amount of white sugar and cinnamon onto the dough and then spoon the apple mixture onto the base.
- Repeat with the remaining dough - roll and gently lay on top of the apple mixture then gently press down - trim the edges until they are tidy.
- Feel free to make a pretty pattern or simple marks with a fork for added effect once cooked.
- Cook for 25-30 minutes until golden brown on top
- The most important aspect of cooking times for this recipe is that the bottom is cooked well - which is why I like to use a clear glass baking dish - the bottom needs to begin to brown. So if in doubt give it a few minutes longer so that it does not fall apart when you slice it.
- Remove from oven and allow to cool before slicing into squares, dust with icing sugar to serve.

- Preheat the oven to 500 degrees F (260 degrees C). Grease a cast iron pan with butter.
- Pour flour into a large mixing bowl. Cut cold butter into flour using a pastry blender until crumbly. Add buttermilk and mix well.
- Pat out mixture on a floured surface. Cut out biscuits using a floured cutter. Place into the prepared pan with sides touching.
- Bake in the preheated oven until golden, about 10 minutes.

GRANDMA'S EASY ONE EGG SHORTCAKE
This recipe can be used for either shortcake or upside down cake. Grandmom used to make this a lot and she put fresh strawberries, raspberries or blackberries on the shortcake. In the winter she would use canned peaches. She used pineapples for the upside down cake.
