I was diagnosed with cancer last yr, and I got pretty fed up with all the chemicals that are put in our food by big corporations....therein I started making bread, and my hubby loves it! This isn't my grandmother's recipe, found this in a cookbook at my friend's house.

2 pkg (1/4 oz each) active dry yeast
2 c water, warm ( 110 to 115 degrees)
1/2 c sugar
1 Tbsp salt
2 eggs, beaten
1/4 c vegetable oil
6 - 7 c all purpose flour

Steps:

  • 1. In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, oil, and 3 cups of flour, beat until smooth. Stir in enough remaining flour,( I use about 6 1/2 cups) to form a soft dough.
  • 2. Turn onto a floured surface, knead until smooth and elastic, about 6 to 8 minutes. Place in a well greased bowl, turning once to grease top. Cover and let stand (rise) in a warm place until doubled about 1 hour.
  • 3. Punch dough down. (Use fingers to deflate dough, not your fist.) Divide dough in half and shape into 2 loaves. Place into 2 greased 9x5 loaf pans. Cover and let rise until doubled, about 1 hour. Bake at 375 degrees for 25 to 30 minutes or until golden brown. Remove from pans to wire racks to cool.

Yield 2 loaves (16 pieces each).

Number Of Ingredients 7

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°)
1/2 cup sugar
2 teaspoons salt
2 large eggs, room temperature
1/4 cup canola oil
6-1/2 to 7 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, oil and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Divide in half and shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover with kitchen towels; let rise in a warm place until doubled, about 1 hour. Preheat oven to 375°., Bake until golden brown, 25-30 minutes. Remove from pans to wire racks to cool.

  • Pour the warm water (between 95-115 degrees) in a stand mixer bowl. Sprinkle the yeast on top of the water and wait about 5 minutes for the yeast to activate. Then add the rest of the ingredients to the mixing bowl. With the paddle attachment, mix the ingredients until they are just combined and completely moistened. Then take off the paddle attachment and replace it with the dough hook. Knead the bread on medium speed for about 5-7 minutes.
  • Place the dough in a greased bowl and cover it with plastic wrap. Let it rise in a warm space for about 30 minutes or until doubled in size. Punch the dough down.
  • Take the dough ball, form it into a loaf and put it in a greased loaf pan (I use a 9"x5" size). and let it rise again for about another 25 minutes.
  • Bake at 375 for 35-40 minutes or until golden brown. Allow the bread to cool in the pan for 10 minutes, then move to a wire rack to cool completely.

  • The yeast puffs up and covers the surface of the water. If your yeast doesn't foam up within ten minutes you might need to use slightly cooler water or get some fresh yeast.
  • My grandmother always said that as a general rule run tap water on top of the underside of your wrist or forearm until you can just tolerate the heat. That is when you grab your large measuring cup, whatever heat resistant bowl you are using and add your water, sugar and then yeast.
  • Stir in 2 3/4 cups of the flour until incorporated. Cover with a warm damp cloth and place in a warm area for 45 minutes. My grandmother always left the bread in front of the window with the sun shining on it. This bread needs to rise in a warm area or it will not rise properly.
