This is the best banana bread I've ever tasted. It's always moist and tasty. I got the recipe from the Vanderbilt Medical Student Mates Cookbook. Preheat oven to 350 degrees

1 1/3 cups sugar
1/2 cup butter, softened
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon baking powder
2 cups all-purpose flour
1 teaspoon vanilla
1 1/4 cups mashed ripe bananas
3/4 cup broken pecans

Steps:

  • Cream sugar and butter.
  • Add eggs, one at a time, mixing well after each addition - use a mixer.
  • Stir baking soda into buttermilk and add to mixture.
  • Sift baking powder with flour and blend into creamed mixture.
  • Add vanilla and banana and mix.
  • Stir in pecans.
  • Pour into greased and floured 9"x5" loaf pan. (May also use 4 mini loaf pans.).
  • Bake at 300 degrees F for about 1 1/2 hours or until loaf tests done with a toothpick. (Bake for 50-60 minutes for mini loaves.).
  • Cool for 20-30 minutes before removing from pan.

1/2 cup Oil (peanut, sunflower, walnut, other light oil)
1/2 cup Butter (melted, room temperature)
2/3 cup Buttermilk
2 cups banana (mashed, very ripe - should almost be a liquid)
1/2 tablespoon lemon juice
4 large eggs (room temperature)
1 3/4 cups white sugar
3/4 cup brown sugar
1/2 teaspoon vanilla extract
3 1/2 cups all-purpose flour (all-purpose)
2 teaspoons baking soda
1/2 teaspoon kosher salt (kosher salt - if you use regular table salt use 1/4 less)
2/3 cup pecans (optional... toasted and coarsely chopped)
1/2 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350F.
  • Grease and lightly flour 2 loaf pans.
  • Beat the oil, butter, eggs, vanilla, both sugars and buttermilk until well blended.
  • Beat in the banana and lemon juice.
  • Mix the flour, baking soda and salt and stir into the banana mixture until well blended.
  • Add the chopped pecans (and chocolate chips if using) and gently stir into the batter by hand.
  • Spoon into two greased loaf pans and bake at 350f for 1 hour or until a toothpick stuck into the center of a loaf comes out clean. *IMPORTANT oven times vary from place to place and oven to oven... Start checking at the 50 minute point!
  • Cool in pans for 15 minutes then gently turn out and finish cooling.
  • Dust cooled loaves with Confectioner's sugar.

I've been making this for so long, it's another family favorite. The smells in your kitchen will bring the mailman to your door! This recipe makes 8 loaves, so be prepared! If I'm going through the mess and time why not make up a bunch. They freeze up really good and make perfect gifts! Enjoy!

2 1/2 c shortening (i use crisco)
5 c white sugar
10 large eggs
5 c mashed blackened bananas
10 c all purpose flour
5 tsp baking soda
1 tsp baking powder
2 1/2 tsp salt
1 2/3 c buttermilk (or mix up 2 teaspoons lemon juice in whole milk)

Steps:

  • 1. Preheat oven at 350 degrees prepare 8 bread pans, grease and flour. Do not use spray. If you add nuts you may be able to squeeze out another loaf! You can also make up a bunch of mini loaves.
  • 2. In a large mixing bowl add your shortening and sugar, mix well. Add your eggs, blend well.
  • 3. Add your bananas, blend well.
  • 4. In another mixing bowl add your flour, salt, baking soda and baking powder. Whisk that to blend evenly.
  • 5. Gradually alternate your flour mixture and buttermilk to the wet ingredients beginning and ending with the flour.
  • 6. After everything is mixed, fill your prepared pans about 1/2 full.
  • 7. Bake 4 loaves at a time for about 45 to 50 minutes or until a tooth pick comes out clean. DO NOT OVER BAKE, just when the bread is baked and looks a tad wet just at the top I take them out.
  • 8. Remove them right away from your pans. I flip them on their sides then after 5 minutes flip them on their other side.
  • 9. I couldn't resist and cut one while it was still hot and put a little butter on it! All gone!

Grandma's Banana Bread! This buttery, moist bread is quick and easy to make! Perfect way to use up those bananas sitting on the counter.

8 tbsp unsalted butter (room temperature)
¾ cup light brown sugar ((160g))
2 large eggs
1/4 cup buttermilk
2 cups all purpose flour ((240g))
½ tsp salt
1 tsp baking soda
3 ripe bananas (mashed (approx 1½ cups))

Steps:

  • Preheat oven to 375℉. Spray loaf pan with baking spray or rub with butter and flour. Set aside.
  • In a large mixing bowl cream the butter.
  • Add in the sugar and cream the sugar and butter together using medium speed. Will be light and fluffy.
  • Add in the eggs and buttermilk. Mix until combined.
  • Mash bananas and add into the batter.
  • In a separate bowl combine the dry ingredients: flour, salt, and baking soda. Stir to mix. Slowly add to the wet ingredients while mixing.
  • Pour batter into the prepared loaf pan.
  • Bake for approximately 30 minutes covered with loosely with foil. Remove then continue baking for an additional 30 minutes or until fully cooked, top will be a golden brown. (foil helps to prevent too much browning)

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 medium overripe bananas, (mashed with a fork (about 1 cup))
2 large eggs
1 cup buttermilk
1/2 cup canola oil (or your preferred cooking oil)
1 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F. Spray a 9 by 5 inch loaf pan with cooking spray and set aside.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
  • In a large bowl, whisk together the mashed banana and the eggs. Add the buttermilk, oil, sugar, and vanilla and mix well.
  • Stir the dry ingredients into the wet ingredients until just combined. Do not over mix. Pour the batter into the prepared baking pan.
  • Bake for 1 hour to 1 hour and 10 minutes. When a toothpick is inserted into the center of the bread, it should come out with moist crumbs but with no raw batter on it.
  • Let the bread cool in the pan for 10 minutes. Remove the bread from the pan and place on a cooling rack to cool completely before slicing. Store covered in the refrigerator*.

1/2 cup pecan pieces or 1/2 cup walnut pieces

Steps:

  • Cream sugar and shortening.

This is one of those recipes that is so simple yet so amazingly good, that you keep thinking there has to be more to it. It's hard to mess up sweet breads like this, but this is the best of the best. There is something magic in its simple ingredients, and when I experiment with it, I always find I still like the original...

1/2 c butter
1 c sugar (i've tried brown (love brown), and it works, but white is best in this recipe. it lets the other favors shine)
2 eggs
1/2 tsp salt
1/2 tsp baking soda
1 1/2 c (takes about 3) over ripe bananas, mashed
2 c flour
1/2 c nuts, optional (i like pecans)

Steps:

  • 1. Cream butter, sugar & eggs. Add salt & baking soda; mix well. Beat in the bananas. Add the flour. Stir in nuts if using.
  • 2. Pour into a LARGE buttered loaf pan (mine measures 4 1/4" x 8 1/4" on the bottom, 5 1/2" x 9 1/2" on the top, 2 3/4" tall.) If pan is not big enough, it will not cook all the way in the center. If you have a smaller pan, don't use all the batter in one pan. The recipe says to let sit at room temp. For 20 min. I never do.
  • 3. Bake at 350 degrees F for about 45- 60 min., until toothpick inserted in the center comes out clean. Let cool 5-10 minutes before loosening sides and inverting, letting it cool the rest of the way on a cooling rack.
  • 4. Great out of the oven, even better the next day, if it doesn't get eaten first! Wrap up after it cools completely to keep it moist.
