HEARTY BEEF AND NOODLES
This is a longtime family favorite, and my kids always asked to bring home friends on nights we served it. Now my oldest son is in the Army and has had his wife call home for the recipe. Here's hefty "man food" at its easy best! -Sylvia Streu, Norman, Oklahoma

- In a large skillet, brown beef in oil on all sides; remove and keep warm. In the same skillet, saute onion until tender. Add garlic; cook 1 minute longer., Return beef to the pan; stir in the soup, water, cream, coffee and gravy mix. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until meat is tender, stirring occasionally., Meanwhile, cook noodles according to package directions. Add the sour cream, paprika and pepper to skillet; heat through. Drain noodles. Serve with beef.

BEEF AND NOODLES
I was looking for a recipe for beef and noodles that didn't use any sort of condensed soup. I found one at Better Homes & Gardens and made a few changes to come up with this. I use Homemade Noodles (recipe 27344) for the noodles, and they absorb a lot of liquid so this is pretty thick - if you like it thinner, adjust accordingly (I've not tried this with purchased noodles but they may make a difference as well).

Steps:
- Add oil to a large dutch oven over medium heat.
- Sprinkle the flour over the meat and toss to evenly coat cubes with flour.
- Brown half of the coated meat in hot oil. Remove from pan. Brown the remaining meat and remove. Set aside.
- In the same pan, brown the onion and garlic, adding more oil, if necessary. Drain off any excess fat. Return all meat to the pot.
- Stir in the broth, wine, marjoram, and pepper. Bring to a boil; reduce heat. Simmer, covered, for 1-1/2 to 2 hours or until meat is tender.
- When meat is tender, remove with a slotted spoon and set aside to cool briefly.
- In the meantime, stir noodles into broth. Bring to a boil; reduce heat to low.
- Shred beef and add back to pot with noodles.
- Cook, uncovered, for about 30 minutes or until noodles are tender and mixture is thick. Add additional broth or water if necessary (if noodles are absorbing it all).

- Place vegetable oil in a large skillet and place skillet over medium-high heat. Once hot, add chuck roast and sear for 3-4 minutes per side.
- Using a large slow cooker, add minced garlic, diced onions, onion soup mix, beef stock, Worcestershire sauce, salt and pepper; stir until well combined.
- Add chuck roast and cook on HIGH for 3-4 hours or LOW for 5-6 hours. Once the beef is tender enough to fall apart easily, break roast into bite-sized pieces. Reserve 4 cups of cooking liquid from slow cooker to make gravy.
- Meanwhile, cook egg noodles according to package instructions.
- To serve, place egg noodles on a large plate and top with beef.
- Pour several spoonsful of gravy on top of beef before serving.
- Using a small bowl, add cornstarch and water; whisk together until well combined. Set bowl aside.
- Using a large saucepan, add butter and place over medium-low heat. Once butter has melted, add flour; continue sautéing, stirring frequently, for 4-5 minutes or until mixture turns golden brown.
- Add 4 cups of reserved liquid from the slow cooker along with the ketchup and apple cider vinegar; stir until well combined. Increase heat to medium-high and bring mixture to a boil.
- Once boiling, add cornstarch mixture. Using a whisk, stir until mixture is well combined.
- Continue cooking, stirring often, for 3-5 minutes, or until gravy thickens noticeably.
- Reduce heat to low to keep gravy warm.

- Heat a skillet over medium-high heat; cook steak, working in batches, until seared and browned on all sides, about 5 minutes. Transfer seared steak to a plate.

- Preheat the oven to 325 degrees F (165 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef, bell pepper, and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. - Add ground beef, onions, garlic and salt to a large skillet over medium high heat. Cook, stirring often, until beef is browned.
- Add beef bouillon cubes to water and stir to dissolve. Add to skillet and stir.
- Add tomato juice, Worcestershire sauce, celery salt and pepper to skillet and stir. Bring to a boil.
- Reduce heat to medium low. Cover and simmer for 20 minutes, stirring occasionally.

GRANDMA'S BEEF AND NOODLE RECIPE

- 1. Drain liquid from beef and spoon out any fat you can see at the top.
- 2. Use a fork to separate the bigger pieces of meat into smaller bites.
- 3. In a large sauce pan boil the water, beef broth, and bouillon cube. Mix every couple of minutes until the bouillon cube dissolves.
- 4. Meanwhile in a small saucepan, add the butter and melt on medium heat until browned a bit.
- 5. Add the cream of mushroom and mix completely. Add to boiling water/broth and mix completely.
- 6. Add the canned beef and mushrooms and wait for mixture to start boiling again. Then add the noodles and mix entirely.
- 7. Turn off heat and cover. Cook for 30 minutes or until noodles are soft.
- 8. Serve with sour cream on top and enjoy!
