Number Of Ingredients 17

6 - 8 lb. bone-in ham (ask butcher if you don't see it)
1 cup (approximately) orange juice
2 cups (approximately) lemon-lime soda
1 cup of brown sugar
½ cup white vinegar
1 teaspoon of dry mustard
1 teaspoon of ginger
Sauce: 1 egg
5 Tablespoons water
5 Tablespoons vinegar
¼ cup sugar
1 Tablespoon of flour
1 Tablespoon of dry mustard
¼ teaspoon (or to taste) celery seed
¼ teaspoon salt
¼ teaspoon pepper
1/2 cup whipping cream

Steps:

  • Stir together first 6 ingredients (other than the ham) in a roaster pan with a lid
  • Place ham, fat side up, in roaster pan, and baste the juicy mixture over the ham.
  • Cover and bake at 300 degrees for about ½ hour per pound (it's not exact, and at the low heat, it's hard to mess up but the key is LOW and SLOW!) Baste occasionally with the juices at the bottom of the pan.
  • Beat together sauce ingredients (except whipping cream) and cook and stir on LOW heat until mixture thickens.
  • Cool completely to room temperature, covering with saucepan lid.
  • Whip ½ cup whipping cream
  • When cool, fold in whipped cream.
  • Chill and serve with ham.

1 cup cubed fully cooked ham
1 (12 fluid ounce) can evaporated milk
1 (10.75 ounce) can condensed cream of chicken soup
1 small onion, minced
⅓ pound processed cheese food (such as Velveeta®), cubed
½ cup crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
  • Mix egg noodles, ham, evaporated milk, cream of chicken soup, onion, and processed cheese food in a 9x13-inch baking dish until evenly distributed.
  • Bake in preheated oven until bubbly and cheese food is melted, about 1 hour. About 5 minutes before end of baking, sprinkle chips atop casserole and return to oven; bake for 5 minutes more.

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

1 country-cured ham (16 pounds)
Beaten Biscuits

Steps:

  • The afternoon before you plan to serve the ham, fill a very large kettle or pot or your sink with water. Soak ham 4 to 8 hours to lose some of the saltiness; change the water 2 or 3 times, if possible. Rinse well, and scrape off any mold or green rind.
  • Wrap ham well in aluminum foil. Place on a baking sheet. At 7 p.m. the night before you plan to serve the ham, preheat the oven to 500 degrees. Place the wrapped ham in a large roasting pan filled with 1 inch of water, and bake for 30 minutes. Turn off the oven, but do not open the door. At 10 P.M., turn the oven back on to 500 degrees. Bake the ham for 15 minutes more. Turn off the oven, but do not open the door. Leave the ham in the closed oven overnight.
  • Remove ham from the oven, then remove the aluminum foil. Using a very sharp knife, trim the rind and all the fat from the ham. Serve the ham warm or at room temperature; cut with a ham-slicing knife into very thin slivers.

2 carrots, sliced thin

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9x13 inch baking dish, combine the ham, potatoes, carrots and mushrooms.

1 (5 pound) fully cooked ham
1/2 c honey
1 c brown sugar

Steps:

  • 1. Preheat oven to 325 degrees. Score ham. Wrap ham in foil and bake for 30 minutes. Meanwhile, to make glaze, combine honey and brown sugar in a small saucepan. Simmer until sugar is dissolved.
  • 2. After the ham has baked 30 minutes remove from oven. Uncover and spread honey glaze over ham. Re-wrap and continue baking for about 1 more hour. Remove from oven and unwrap. Allow to sit for 10 minutes before cutting.

1 country (dry cured) ham
1 liter Dr. Pepper
1 cup sweet pickle juice, optional

Steps:

  • Unwrap ham and scrub off any surface mold (if you hung in a sack for 6 months you'd have mold too). Carefully remove hock with hand saw. (If this idea makes you eye your first aid kit, ask your butcher to do it. But make sure you keep the hock, it's the best friend collard greens ever had.)
  • Place ham in cooler and cover with clean water. (As long as it's not too dirty you can use what southerners call the "hose pipe"). Stash the cooler in the bushes. If it's summer, throw in some ice. If it's freezing out, keep the cooler inside. Change the water twice a day for two days turning the ham each time.
  • Preheat oven to 400 degrees F.
  • Place ham in a large disposable turkey-roasting pan and add enough Dr. Pepper to come about halfway up the side of the ham. Add pickle juice if you've got it and tent completely with heavy-duty foil. Cook for 1/2 hour then reduce heat to 325 degrees F, and cook another 1 1/2 hours.
  • Turn the ham over, insert an oven safe thermometer (probe-style is best) and cook another 1 1/2 hours, or until the deepest part of the ham hits 140 degrees F (approximately 15 to 20 minutes per pound total).
  • Let rest 1/2 hour then slice paper-thin. Serve with biscuits or soft yeast rolls.
  • Cooks note: Even after soaking, country ham is quite salty, so thin slicing is mandatory. If you're a bacon fan, however, cut a thicker (1/4-inch) slice and fry it up for breakfast.

2 quarts apple cider or apple juice
1-1/2 teaspoons whole peppercorns
1 bay leaf
Whole cloves
1 cup applesauce
1 tablespoon prepared horseradish
2 teaspoons ground mustard

Steps:

  • Place ham in a Dutch oven or large kettle. Add cider, peppercorns and bay leaf. Add enough water just to cover; bring to a boil. Reduce heat; cover and simmer for 1 hour., Drain, reserving 3 cups cooking liquid; discard peppercorns and bay leaf. Remove skin from ham if desired; score the surface with shallow cuts, making diamond shapes. Insert whole cloves in the center of each diamond. Combine applesauce, horseradish and mustard; rub over ham., Place ham on a rack in shallow roasting pan; pour reserved liquid into pan. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 140°. Remove from the oven; cover with foil and let stand for 10-15 minutes before slicing.

1 (12 pound) whole ham
1 liter ginger ale (such as Vernors®)
1 cup brown sugar
1 (8 ounce) can pineapple slices, drained, reserve juice
toothpicks
1 (4 ounce) jar maraschino cherries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.
  • Pour ginger ale into the roasting pan. Rub brown sugar over the ham. Attach pineapple slices to outside of ham with toothpicks. Secure a cherry into the middle of each pineapple slice again using toothpicks. Pour reserved pineapple juice into pan with ginger ale. Tent aluminum foil over the ham.

1 large country ham
2 can(s) coke
1 c brown sugar
2 tsp cinnamon

Steps:

  • 1. Rinse ham and soak in water overnight.
  • 2. Place Reynolds wrap in roaster pan, enough to completely wrap the ham. Pour two cans of Coke over ham. Sprinkle brown sugar on top of ham then sprinkle the cinnamon on top of the ham.
  • 3. Seal the ham tight and bake 45 minutes at 375 degrees. Then start timing your cook time for the ham (15-18 minutes per lb.).
  • 4. Remove ham from oven and allow to cool. After cooling take the skin off and score the top of the ham and sprinkle with more brown sugar and cinnamon. Put ham back into the oven to brown it. Watch closely and be careful not to burn the ham.

  • Place the ham under warm running water and scrape any surface mold, seasonings, cobwebs, [Editor’s Note: Um, ew!] or any other matter from the ham with a stiff brush. Place the ham in an 8-gallon stock pot and fill it with enough water to cover the ham. Let the ham soak for 24 hours, changing the water as often as possible, ideally once every 6 hours.
  • Change the water a final time and transfer the pot to a stovetop. Add the bay leaves, mustard seeds, and vinegar and bring to a boil over high heat. Lower the heat to medium and simmer for 2 hours, topping with fresh water as necessary.
  • Remove the ham from the stock pot and turn off the heat. When the ham is cool enough to handle, use a sharp knife to shave off the skin (but not the fat) from the ham. Score the surface of the ham—meaning fat and any exposed flesh—in a diagonal pattern. Place a single clove in the center of each scored diamond. Pat the ham thoroughly on all sides with the brown sugar.
