GRANDMA'S OLD FASHIONED APPLE PIE

Grandma's Old Fashioned Apple Pie image

My Grandma's Old Fashioned Apple Pie recipe with an amazingly flaky crust and delicious apple cinnamon filling.

Provided by Laureen King

Categories     Dessert

Time 2h

Number Of Ingredients 13

For Filling
8-10 apples peeled and sliced
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 tsp cinnamon
2 tbsp Minute tapioca
For Pie Crust
2 1/2 cups all purpose flour
1 tsp salt
1 1/2 tsp sugar
1/2 cup butter (chilled)
1/2 cup lard (chilled)
5-7 tbsp ice cold water

Steps:

  • For the Pie Crust
  • Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
  • Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
  • Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.
  • Add more water a tablespoon at a time until mixed and dough sticks together when pressed. Don't make too wet, just enough water to have dough come together.
  • DO not overmix or your pie crust will be tough.
  • Divide in half, cover with plastic wrap and chill for 30 minutes.
  • While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
  • Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
  • Place one in bottom of pie plate.
  • Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
  • Sprinkle top with white sugar and cinnamon.
  • Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.

GRANDMA'S FLAKY DOUBLE PIE CRUST

Grandma's Flaky Double Pie Crust image

This is my grandma's recipe. She was known for her pies. This crust is so light and flaky. Just delicious! My change to this recipe is my rolling technique. I roll between 2 sheets of parchment paper. Grandma rolled on a floured board. But it works for me!

Provided by Debbie Sue

Categories     Pies

Time 45m

Number Of Ingredients 7

2 1/2 c flour
1 tsp salt
1 tsp sugar
1 c crisco
1 egg, slightly beaten
1 Tbsp lemon juice
3 Tbsp cold water

Steps:

  • 1. Mix flour, salt, and sugar in a mixing bowl. Using a pastry blender (or 2 knives), cut in the Crisco, until pea size pieces form.
  • 2. Add egg, lemon juice, and water, one tablespoon at a time. Toss with a fork until dough will form a ball. Wrap dough in plastic wrap and chill for 30 minutes.
  • 3. Divide dough in half, and form two, 5 inch discs. Roll a disc between 2 sheets of lightly floured parchment paper, to desired size.
  • 4. Carefully place rolled dough into a 9" pie plate. Fill with fruit filling, and top with remaining rolled dough.
  • 5. Trim, fold, and crimp edges. Cut a few vents in the top of the pie. Bake at 425 degrees, for 40 to 50 minutes.

  • Place the water and vodka in a cup and add 1-3 ice cubes to keep cold. In a food processor fitted with the dough blade, add the butter, shortening, flour, sugar, and salt. Pulse 8 to 12 times, until the butter is the size of peas.
  • With the food processor running, pour in the water and vodka (not the ice) until it forms a ball. This should take 10-15 seconds at most.
  • On a floured surface, dump out the dough and quickly shape into a round disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  • After 30 minutes, place the unwrapped disk on a floured board and gently roll into a circle starting from the center to the outside, turning a quarter turn and flouring the disk/rolling pin until the dough is larger than your pan. For a 9″ pie pan, roll into a 12″ circle. Allow to rest for 5 minutes so the gluten can relax again.

  • Measure flour and salt into large bowl. Using a pastry blender, cut butter into dry ingredients until you have a fine crumble. Crack egg into measuring cup; add vinegar and then enough water to make 7/8 of a cup, more or less. Use fork to whisk egg mixture together. Pour egg mixture into dry ingredients almost all at once. (I usually hold out about a quarter of a cup.) Mix with the fork, gently gathering the dough from the outside of the bowl. Add the rest of the liquid if necessary. Do not over mix. Alternatively, you can use a stand mixer - just be sure not to over mix.
  • As soon as the dough comes together, turn it out onto a floured surface. Use your hands to carefully press the dough together---you're not kneading here, just binding the ingredients together in a solid mass.
  • Divide dough evenly into two, then roll out on a liberally floured surface. Fold the dough in half for easy lifting, then move into a pie pan. (I just use a simple glass pie pan like this.)
  • For a single crust pie like pumpkin or lemon merengue, tuck the dough edges under and then crimp all around. For a filled pie, add a generous amount of filling, and top with the second crust.
