My mother made these hearty meatballs when we were growing up, and now my kids love them, too. My daughter likes to help shake the meatballs in flour. -Karin Ness, Big Lake, Minnesota

1 large egg, lightly beaten
1/2 cup crushed saltines (about 10 crackers)
1/4 teaspoon seasoned salt
1/4 teaspoon pepper
1/2 pound ground beef
1/2 pound bulk pork sausage
1/4 cup plus 2 tablespoons all-purpose flour, divided
2-1/2 cups reduced-sodium beef broth, divided
Hot mashed potatoes
Minced fresh parsley, optional

Steps:

  • Mix first 4 ingredients. Add beef and sausage; mix lightly but thoroughly. Shape into 1-in. balls; toss with 1/4 cup flour, coating lightly., In a large skillet, brown meatballs over medium-high heat. Add 2 cups broth; bring to a boil. Reduce heat; simmer, covered, until meatballs are cooked through, 5-6 minutes., Remove meatballs with a slotted spoon. Mix the remaining flour and broth until smooth; add to pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Return meatballs to pan; heat through. Serve with mashed potatoes. If desired, sprinkle with parsley.

This is my grandmother's recipe for meatballs. It's very quick and easy, and they come out very tasty. They can be served with spaghetti, or as meatball subs, or any way you'd like to serve meatballs.

1 pound ground beef
½ cup bread crumbs
1 large egg
2 tablespoons grated onion
⅛ teaspoon ground black pepper
⅛ teaspoon ground nutmeg
salt to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix ground beef, bread crumbs, egg, onion, black pepper, nutmeg, and salt together in a bowl; form into small balls. Arrange balls on a baking sheet.
  • Bake in the preheated oven for 10 minutes. Flip meatballs and continue baking until cooked through, 12 to 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Family recipe straight from Sweden. This is a favorite dish any time that I make it and is often requested by my foodie friends. Serve with mashed potatoes. Enjoy!

1 pound ground beef
½ pound bulk pork sausage
¾ cup bread crumbs
½ onion, diced
½ cup milk
1 egg
1 tablespoon chopped fresh parsley
1 ½ teaspoons salt
1 teaspoon Worcestershire sauce
⅛ teaspoon ground black pepper
1 teaspoon vegetable oil, or as needed
2 cups boiling water
¾ cup sour cream
½ cup all-purpose flour
1 teaspoon paprika
⅛ teaspoon ground black pepper

Steps:

  • Mix beef, sausage, bread crumbs, onion, milk, egg, parsley, salt, Worcestershire sauce, and pepper in a large bowl. Form into meatballs.
  • Heat oil in a skillet over medium-high heat. Pan-fry meatballs in batches, turning as needed, until browned and heated through, 6 to 8 minutes.
  • Mix boiling water, sour cream, flour, paprika, and pepper together in a deep saucepan over low heat. Add the meatballs and let simmer until thickened and heated through, 15 to 20 minutes.

My Swedish grandma has been making these meatballs forever, and they are my absolute favorite meal. I hope you like them as much as I do.

4 slices white bread
1/2 cup milk
2 eggs
1 lb ground beef
3 tablespoons parmesan cheese, grated
1 teaspoon dried parsley flakes
1/4 teaspoon dried oregano, crushed
1 teaspoon salt
1 dash black pepper
1/3 cup vegetable oil
1/2-1 lb fine egg noodles, cooked (Mrs. Grass recommended)
3 tablespoons salted butter
1/4 cup flour
1 (10 ounce) can beef broth
1/2 cup half-and-half
salt and pepper
1/4 teaspoon dill weed

Steps:

  • For the meatballs, tear bread into small pieces. Add the milk and let soak several minutes (stir around).
  • Add eggs and beat until mixed.
  • Add bread mixture to ground beef along with parmesan, parsley flakes, oregano, salt, and pepper.
  • Roll mixture into small balls 1 to 1 ½ inches in diameter.
  • Place 1/3 cup oil in a pan and sauté meatballs until brown.
  • Remove the meatballs from pan, discard the oil.
  • For the sauce, in the same pan over low heat, melt the butter and whisk in the flour and let cook for a few minutes but don't let it brown (should be glossy).
  • Whisk in broth and cream and cook stirring constantly until thick and satiny.
  • Add salt and pepper to taste. Stir in dill.
  • Add meatballs to sauce and simmer about 10 minutes, turning several times.
  • Serve over noodles.

  • If you are not using pre-ground meat, chill the venison and pork fat until it is almost freezing by sticking it in the freezer for an hour. Cut both the meat and fat into chunks that will fit into your grinder. Grind through your fine die in a meat grinder. If you do not have a meat grinder, you can use a food processor, set on pulse. Don’t crowd the processor and chop the meat in pulses until you get something that looks like ground meat — it will not be as good as with a grinder, but it is easier than hand-mincing everything, which is also an option. Put the meat in the fridge.
  • Pour the milk into a pot and set it on low heat. Cut the crusts off the stale bread and break it into pieces. Add the pieces to the pot. They will begin to absorb the milk. Turn off the heat and mash everything into a paste. Let it cool to room temperature.
  • In the meat bowl, add the grated onion, salt and spices. Crack the eggs into the bowl, then pour the bread-milk mixture in. With clean hands, gently mix everything together. Do not knead it like bread, and do not squeeze things together. Just gently work the mixture: Think cake, not bread. When it is mostly combined — you need not get everything perfect — grab a tablespoon and scoop up some. Roll it into a little ball with your palms.
  • Gently roll the meatballs in the flour; you’ll probably need about a cup. You may need to re-shape them before putting them onto a cookie sheet lined with wax or parchment paper.

Let meatballs cook/warm on low for 2-3 hours. Approximately 40 minutes before serving, saute onions in butter until translucent. Add half and half, adding a dash of the previously used spices, nutmeg and ginger and instant coffee. Salt to taste.Thicken slightly, and add to meatball mixture. Cook in crock pot for 1/2 hour. Serve over wide noodles or mashes potatoes.
