GRANDMA'S PEAR PRESERVES
Grandma grew up in rural NC and always made these for the family. They are so good ... I hope you enjoy these as much as we have.

Steps:
- Sterilize jars and lids in boiling water for at least 10 minutes. Let simmer while making jam.
- In a large saucepan, combine pears, water, and lemon juice. Cover, and simmer for 10 minutes. Stir in pectin, and bring to a full boil. Stir in the white sugar, and continue boiling and stirring uncovered for 1 minute, until sugar is dissolved. Remove from heat, and stir in brown sugar, allspice, and nutmeg.
- Quickly fill jars to within 1/2 inch of the top. Wipe rims clean, and top with lids. Process jars in boiling water for 10 minutes to seal.

- Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

MY GRANDMOTHER'S PEAR CAKE RECIPE

- Preheat the oven to 180°C (350°F). Grease the sides of a 20-cm (8-inch) round cake pan with a bit of the butter, and line the bottom with parchment paper.
- Place the pears in a single layer at the bottom of the pan.
- In a medium mixing-bowl, beat the sugar and the eggs until the mixture pales slightly.
- In another bowl, combine the flour, salt, and baking powder. Add to the wet ingredients and blend well, but without overmixing. Pour in the butter, and blend again.
- Pour the batter evenly over the fruit, and bake for 40 minutes, until golden.
- Let the cake settle on a cooling rack for 10 minutes. Run a knife all around to loosen, and flip onto a serving plate.
- Let cool and serve, slightly warm or at room temperature.

GRANDMA'S FRESH APPLE CAKE
Moist cinnamon cake enfolding sliced fresh apples makes a delicious dessert or wholesome snack cake. This recipe came from my mother, Ann. I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

- Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.
- Spread into a greased 9" X 13" cake pan or pyrex dish.
- Bake at 350 degrees F for 30 to 45 minutes, until cake springs bakc when touched lightly, and apples are tender when pierced with a skewer.
- Cool and serve. Cover leftovers tightly with foil to retain moisture.

- Preheat the oven 180C/ 350F/Gas4. Grease and line the base of a 23cm round, deep cake tin.
- Cut the apples and pears into slices and toss with ½ the cinnamon and set aside.
- Crumble:
- 1. Rub the butter into the flour with your fingertips until it resembles fine breadcrumbs.
- 2. Add the remaining cinnamon and sugar; mix well and set aside.
- Cake:
- 1. Beat the butter and sugar in a large bowl until pale.
- 2. Add the remaining ingredients and beat until combined.
- 3. Pour the mixture into the cake tin, place fruit slices on the top and sprinkle with the crumble mixture.
- Bake for 50-55 minutes in the middle of the oven until firm and golden.
- Cool in the tin before transferring to a wire rack.
- Serve warm, or cold with a generous helping of creamy custard.
GRANDMA'S APPLE OR PEAR CAKE
My Grandmother and Great Grandmother made this for years for family functions. It was always apple cake until my Grandmother moved into a house that had pear trees. It's fantastic with pears also.

Stir each egg before adding the next one. When everything is frothy, add the prepared flour-baking soda mix. Stir the dough until it is fluffy.
- Remove the apples from the vinegar water and drain them well through a sieve. Now pour them into the dough, mix well and pour the mixture into a springform pan.
