This is the easiest recipe for making them and the end result is a very flaky pastry that takes little to no time to prepare. Fill the pastry with whatever filling you like. 1 c butter, softened
8 oz cream cheese, softened
2 c all purpose flour
8 oz fruit bakers filling or fruit preserve of your choice
1 c powdered sugar

Steps:

  • 1. Combine the softened butter and softened cream cheese until they are mixed together.
  • 2. Add the flour to the butter and cream cheese mixture until all the flour is combined (do not over mix).
  • 3. Form the dough into a ball and chill the dough overnight or freeze in the freezer and defrost before use.
  • 4. Preheat the oven to 350 degrees
  • 5. Divide the dough and in half. Leave one half in the fridge to stay cold. Roll the dough on a well floured surface to an 1/8 inch.
  • 6. Using a square 2 1/2 inch cookie cutter or with a pizza cutter make squares. Note: They do not need to be perfect squares)
  • 7. Once the squares are made add a teaspoon of your filling to each of the squares (do not overfill or the kolackys may burst open while baking.
  • 8. To form the kolackys take two opposite corners and pinch them together (you should have a triangle shape).Fold the pinched corner down and pinch again to make sure it is sealed.
  • 9. Place on a cookie sheet and baking the Kolackys for 7-9 minutes or until puffed and golden brown.
  • 10. Remove the Kolackys from the oven and allow to cool before dusting with confectioner sugar.

A cookie recipe given to me by my husband's Polish grandma (busia) that I have to double because they fly off the plate -- one recipe for them and one for me! My favorite Solo filling is Apricot, but any are wonderful.The pronounciation is "Kolatchkie", but I've never seen it spelled any other way than Kolacky! (Dough can be refrigerated and cookies frozen after making.)

Number Of Ingredients 5

3 cups sifted flour
1 1/2 cups butter
1/2 cup sour cream
1 (8 ounce) can solo brand filling
sifted confectioners' sugar

Steps:

  • Cut butter into flour with two forks to resemble small peas, as you would pie crust. Stir in sour cream with serving spoon and mix well.
  • Form into 2 balls and store, covered, in refrigerator to chill. Taking out one ball at a time, dust each with flour and roll on floured surface to approximately 1/8 thickness. (Note: If dough starts tearing, it may need more flour or to be chilled a bit more.).
  • Cut with larger round cookie cutter or coffee cup, Fill center with approximately 1-2 teaspoons Solo, Bring up each side and pinch to close.
  • Bake at 350 dg. for 12-15 minutes, until bottiom of cookie is just beginning to brown. Cool on wire racks then dust with powdered sugar. Enjoy!
