GRANDMA'S THANKSGIVING SWEET POTATO YAMS
This is an EASY recipe that my grandmother used to make. This is one of my favorites of hers. I don't like sweet potatoes, but I love these. I got the recipe from a friend of hers (she has passed) and decided to share. It's delicious and a sweet treat.

Steps:
- Boil sweet potatoes until fork tender. Allow to cool. Peel the sweet potatoes and slice into 1" slices.
- In a bowl, stir together karo syrup, sugar, cinnamon, nutmeg, and vanilla.
- Arrange sweet potato slices in 11"x14" casserole dish.
- Pour mixture over potatoes.
- Slice margarine into slices and arrange on the top.
- Bake uncovered at 350 degrees for 20 minutes. Remove and mix the slices around. Put back in oven for 10-20 minute Serve hot.

GREAT-GRANDMA'S CANDIED YAMS
This is my great-grandma's candied yams recipe. I started making them a few years ago, now everyone asks for them every year. The secret I think is in the orange juice and slow cooking.

Steps:
- Bring a large pot of water to a boil over high heat. Add yams and boil for 10 minutes. Drain and rinse twice with cold water. Soak in cold water for 15 minutes.
- While yams are soaking, preheat the oven to 275 degrees F (135 degrees C).
- Mix white sugar, brown sugar, cinnamon, and nutmeg together in a small bowl.
- Peel and cut yams into chunks and place in a large baking dish. Dot with butter and sprinkle with sugar mixture so all yams are coated. Carefully pour enough orange juice into the bottom of baking dish to measure 1/2 inch.
- Bake in the preheated oven, basting often, until yams are tender and the liquid is thick and sticky, 3 to 3 1/2 hours. Sprinkle with mini marshmallows. Turn on the oven's broiler. Broil until marshmallows are melted and toasty, about 5 minutes.

CHEF JOHN'S CANDIED YAMS
Sure, everyone knows orange-fleshed sweet potatoes aren't really yams, but it makes for a shorter name. I'm not a huge sweet side dish person, but I make an exception for these candied yams that use lemon instead of orange juice as a sweetener.

Steps:
- Stir salt into 2 quarts cold water in a large pot. Transfer sweet potato pieces to pot and place over high heat; bring to a simmer. Reduce heat to medium-low and simmer until potatoes are not quite tender but still cooked, 5 to 7 minutes. Use the tip of a knife to test for doneness. Drain.
- Place brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne, and pinch of salt in a skillet. Place over medium-high heat, stirring until glaze ingredients melt and start bubbling. Continue cooking, stirring occasionally, until mixture begins to thicken up, 4 to 6 minutes.
- Transfer drained sweet potatoes to skillet. Raise heat to high and cook and stir until potatoes are coated with glaze and very tender, and glaze has thickened, 5 to 8 minutes. Transfer to serving dish; garnish with chopped nuts.

Steps:
- Combine all ingredients except sweet potatoes in 2 quart saucepan.
- Bring to a boil stirring occasionally.
- Reduce heat and simmer about 45 minutes, stirring occasionally.
- Place sliced sweet potatoes in an ungreased 9x13 dish in a single layer cut side up.
- Pour syrup over potatoes coating all pieces.
- Bake at 400 degrees until bubbly about 45 minutes basting every 15 minutes.

MY GRANDMA'S CANDIED YAMS WITH PINEAPPLE
Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

- Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
- In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
- Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
- Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.
GRANDMA KAWAMOTO'S CANDIED YAMS
Steps:
- Peel yams. Cut into 1 inch thick sliced rounds. If the slices are too large in diameter, cut in half. Place in a 6 quart pot, in two layers. Dot with butter, add pinch of salt, sprinkle with brown sugar evenly over the top, and pour water to the top of the first layer of yams. Cook on medium heat, rotating the top layer to the bottom half way through. Baste with the liquid throughout cooking time. Should take approximately 45 minutes to cook.
GRANDMA'S CANDIED YAMS
This is an old family favorite. Simple to make and delicious.

- 1. Using a knife, poke holes in sweet potatoes. Place potatoes on a large baking sheet lined with foil, bake at 350 for 1 hour. 2. Let potatoes cool completely. After cooled, peel and slice into 1 ½ inch rounds. In an ungreased 9x13 baking dish put 1 layer of sweet potatoes, 1 cup of brown sugar and 1/3 of the bag of marshmallows. Put another layer of sweet potatoes the other 1 cup of sugar Cover and Bake at 325 for 3 hours, or until juice is the consistency of thick syrup, basting occasionally. Add remaining marshmallows and put under broiler until lightly browned.

- Preheat your oven to 350°F. Slip the skins off the roasted sweet potatoes and slice them into 1 1/2-inch-thick rounds. Lay the rounds flat on the bottom of a baking dish just large enough to hold them in a single layer with about half an inch separating each round.
- In a small bowl, stir together the sugar, cinnamon, salt, and nutmeg. Sprinkle each round with equal parts of the sugar mixture and dot the top of each round with cold butter. Grate the orange zest right over the sweet potatoes. Cover with foil and bake for 30 minutes. Remove the foil and bake another 10 minutes so things caramelize a little.
- Common sense tells you to serve these warm, but I actually prefer them room temperature. Do whatever works for you.
