My grandma knew how to make the best pies every year for Thanksgiving. The crust is tender and flaky and so easy to make! You will never buy from the store again!

1 1/4 cups all purpose flour
1/4 teaspoon salt
1/3 cup shortening
4 to 5 Tablespoons cold water

Steps:

  • In a medium bowl stir together flour and salt. With a pastry blender cut in shortening till pea-sized.
  • Sprinkle water on one tablespoon at a time tossing with a fork. Push moistened dough to the side. Mix till all flour is moistened. Don't mix too much or the crust will be hard.
  • Form into a ball and roll out on the floured surface. Turn and flour the dough a few times till it's the size you need.

This was my dad's favorite pie, and my mom got the recipe from his mother. It's been replicated all over the internet in the past few years. I think the first incidence can be documented to 1995.

1/2 pie crust
1 1/2 cups cut rhubarb, in 1 inch pieces
1/2 cup sugar
2 large eggs, beaten (extra large eggs are even better)
1/2 cup sugar (yes, another 1/2 cup)
1 cup whole milk (not skim milk)
cinnamon

Steps:

  • Place 1/2 pie crust into pie plate.
  • Put the rhubarb in the crust and cover with 1/2 cup sugar.
  • Add the other 1/2 cup sugar to the milk and beaten eggs, and pour mixture over rhubarb.
  • Sprinkle top with cinnamon.
  • Bake at 350 degrees for 45 minutes; let cool before serving to allow custard to set.
  • Note from Julie: this was my dad's favorite pie, and my mom got the recipe from his mother.
  • Note, again: I've been on the 'net for a very, very long time, and this is one of the earliest recipes that I submitted to any search engines. What I can say: it's a tried and true recipe, one we've been using for well over 50 years. It's what my mom will be serving at Christmas this year... what else can I say?

1 teaspoon salt
1 ¼ cups shortening
1 egg, beaten
1 tablespoon distilled white vinegar
4 tablespoons water

  • In large bowl mix flour and salt. Cut in shortening with two butter knifes.
  • In separate bowl, mix together egg, vinegar, and water. Drizzle wet mixture into dry mixture, cutting it in.
  • Roll out dough, and fit into two 9 inch pie pans.
  • Bake at 425 degrees F (220 degrees C) for 12 minutes.

This rhubarb custard pie is a beautiful way to mellow the tartness of rhubarb in a smooth, creamy filling.

Pastry for nine inch double crust (or single, if preferred)
1 cup + 1 tablespoon granulated sugar (cane sugar preferred)
3 tablespoons flour, divided (may substitute gluten free flour blend)
2 eggs, beaten
3 cups diced fresh rhubarb

Steps:

  • Preheat the oven to 450° F. Roll out half of the pastry dough. (Keep the dough for the top crust chilled.) Line the pie plate with the bottom crust.
  • Combine 1 cup of sugar with 2 tablespoons of flour. Mix in eggs and rhubarb. Sprinkle the remaining tablespoon of flour into the bottom of the crust. Pour rhubarb filling into the bottom crust.
  • Roll out top crust (if desired). Cut vent holes or weave into lattice. Apply to top of pie. Crimp edges to seal.
  • Sprinkle 1 tablespoon of sugar over the crust. (Skip if using a single crust.)
  • Bake at 450 F for 10 minutes to set the crust. Reduce the oven temperature to 350 F and bake about 30 minutes more or until the custard is set. Cool before serving. Store any leftovers in the refrigerator.

My Grandma's Old Fashioned Apple Pie recipe with an amazingly flaky crust and delicious apple cinnamon filling.

For Filling
8-10 apples peeled and sliced
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 tsp cinnamon
2 tbsp Minute tapioca
For Pie Crust
2 1/2 cups all purpose flour
1 tsp salt
1 1/2 tsp sugar
1/2 cup butter (chilled)
1/2 cup lard (chilled)
5-7 tbsp ice cold water

Steps:

  • For the Pie Crust
  • Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
  • Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
  • Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.
  • Add more water a tablespoon at a time until mixed and dough sticks together when pressed. Don't make too wet, just enough water to have dough come together.
  • DO not overmix or your pie crust will be tough.
  • Divide in half, cover with plastic wrap and chill for 30 minutes.
  • While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
  • Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
  • Place one in bottom of pie plate.
  • Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
  • Sprinkle top with white sugar and cinnamon.
  • Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.

Back in 1912, my 13 year old grandmother ran away from home and the 12 brothers & sisters she was stuck caring for, and took a position of head baker at the Black Bear Hotel in downtown Duluth. It was a different time, back then; Pie ruled and was King, Queen and Princess. She made 50 pies per day, Monday through Friday, but on the weekends, she made upward of 75 to 100 pies. This is the ONLY crust she used for her 1000's of pies! This year, 2012, this recipe is now over 100 years old and in constant use throughout the generations. I also wanted to add, that I found out by accident that rolling out the crust between two Silpat mats is a dream come true: peels right off, NO stick! Happy Baking!

2 cups all-purpose flour (I ONLY use King Arthur brand)
3 tablespoons confectioners' sugar
3/4 teaspoon salt
1/2 cup chilled butter, cut into 6 pieces (chilled hard)
3 tablespoons lard or 3 tablespoons Crisco, chilled
1 large egg, beaten lightly
1 tablespoon apple cider vinegar (but, I've used pear, champagne or other flavoured vinegars)
1/4 cup ice water

Steps:

  • ALL INGREDIENTS AND TOOLS MUST BE ICE COLD, INCLUDING FLOUR AND SUGAR! MEASURE IN ADVANCE AND PLACE IN REFRIGERATOR FOR 1/2 AN HOUR BEFORE MAKING CRUST.
  • Measure flour, confectioner's sugar, and salt into work bowl of food processor. Pulse quickly 2-3 times.
  • Uncover bowl, add butter and lard/shortening, process 5-10 seconds until JUST blended.
  • Through feed tube, add beaten egg and vinegar and 1/2 of the water. Pulse 2-3 times.
  • Watching dough constantly, slowly drizzle the remaining water into the dough as processor is turning, STOPPING INSTANTLY when the dough begins to clump together. (It will look lumpy, rough and riddled with the yolk and butter. THIS IS NORMAL!).
  • Turn dough onto Saran Wrap. press into rough circle of pie pan shape, wrap and chill for at least 30 minutes.
  • Take off Saran Wrap. Roll chilled dough out between 2 layers of parchment paper. Lay into pan, fill and bake. Happy Baking!

For the Crust:
1 3/4 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1/3 cup granulated sugar​
For the Filling:
1 cup granulated sugar
1/4 cup cornstarch
1 dash salt
2 cups whole milk
4 large egg yolks
2 tablespoons unsalted butter, cut into small pieces
2 teaspoons vanilla extract
For the Meringue Topping:
4 large egg whites, room temperature
1/4 teaspoon cream of tartar
6 tablespoons granulated sugar
1/2 teaspoon vanilla extract

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. In a medium bowl, combine the graham cracker crumbs, butter, and sugar; mix to blend.
  • Use 3/4 of the graham cracker mixture to cover a deep-dish pie pan. Press the mixture well with your fingers to cover the bottom and sides of the dish. Set aside the remaining mixture for later use.
  • Bake the crust for 10 minutes. Remove the pie crust from the oven and set it aside to cool.
  • Reduce oven temperature to 325 F.
  • In a heavy, medium saucepan , combine the granulated sugar, cornstarch, and salt. Whisk in the milk and egg yolks, then place the pan over medium heat. Cook, whisking constantly, until the mixture begins to thicken and gently boil, or about 5 to 6 minutes.
  • Continue cooking, whisking, until very thick, about 1 to 2 minutes longer. Remove from heat and whisk in the butter, a few pieces at a time. Stir in the vanilla and mix well.
  • Pour the hot filling into the cooled graham cracker pie crust. Set aside.
  • In a mixing bowl, beat the egg whites at high speed until foamy.
  • Add the cream of tartar and gradually add the sugar. Continue beating until stiff peaks form.
  • Stir in the vanilla extract and gently fold.
  • Spread the meringue mixture to top the prepared pie.
  • Sprinkle with the reserved graham cracker mixture and place the pie in the oven for 12 to 15 minutes, or until the meringue is browned.
  • Chill the pie for at least 4 hours before serving.
  • Enjoy.
