6 eggs
1/2 cup milk
1 tsp salt
2-3 cups all-purpose flour

Steps:

  • Combine milk and eggs, beat to combine. Add salt and stir to incorporate into egg mixture.
  • Add flour a little at a time until it forms a solid dough.
  • Roll out dough onto floured surface about 1/8″ thick. Cover the top of the dough with flour. Roll up like a jelly roll, starting at the edge, roll all the way across. Cut 1/4 inch slices across the roll. Shake out and drop into boiling broth, one at a time. When all are in the broth, bring to boil and cook about 1 minute.

Number Of Ingredients 4

2 cups flour
Pinch of Salt
4 eggs
1 tablespoon olive oil

Steps:

  • Combine flour and salt in a large bowl. Create a well in the middle, and then whisk in olive oil and eggs. Stir until a solid dough ball forms (making sure to pull flour from the sides as you do this.) Wrap in plastic wrap, and chill for at least 30 minutes (longer is better!)
  • Unwrap dough, and with a rolling pin, roll out into a sheet that is about 1/4 inch thin.
  • Using a pizza cutter, make a long cut down the center of the dough, cutting it in half. Then, cutting the other way, cut long strips of pasta (start at one end, and cut until you reach the cut that was made to divide the dough in half -- see picture)
  • Lay noodles on a cookie sheet.
  • Either cook immediately, or leave out to dry. If cooking immediately, place in boiling water for 3-5 minutes, then bring down from a boil. We just brought the chicken soup to a boil, and put them in right before serving. If cooking after they've been dried, bring pot to a boiling water for about 8-10 minutes.

2 cups all-purpose flour
1/2 teaspoon salt
2 large egg yolks
1 large egg
1/3 cup water
1 tablespoon olive oil
6 cups chicken broth

Steps:

  • In a small bowl, combine the flour and salt. Make a well in the center. In another bowl, beat the egg yolks, egg, water and oil; pour into well. Stir to form a stiff dough., Turn dough onto a well-floured surface; knead 8-10 times. Divide into thirds. Roll each portion to 1/8-in. thickness. Cut noodles into 1/4-in. strips; cut the strips into 2-in. lengths. Cook immediately in boiling broth for 5-7 minutes or until tender; drain.

3 large eggs
2 large egg yolks
¼ cup water
1 teaspoon sea salt
3 cups all-purpose flour, or more as needed
4 (32 ounce) cartons chicken broth

Steps:

  • Combine eggs, egg yolks, water, and salt in a bowl; beat with an electric mixer until combined. Beat in 2 cups flour. Mix in 1 cup flour with a wooden spoon. Add more flour to make it as thick as you can stir. Divide dough into 4 equal balls.
  • Generously dust a pastry cloth, a rolling pin, and 4 sheets of waxed paper with flour. Roll each ball of dough on the pastry cloth until 1/8 to 1/4 inch thick. Let dough sit for 45 minutes. Flip each piece of dough (it will be hard to flip) and let sit for another 45 minutes.
  • Stack pieces of dough together and cut into noodles. Let noodles dry for about 3 hours.
  • Bring chicken broth to a boil in a large pot. Add noodles and cook, uncovered, until soft with no bite and the broth has thickened, 15 to 20 minutes.

½ teaspoon baking powder

Steps:

  • Combine egg, salt, milk. Add flour. (For thicker noodles add baking powder to flour before mixing.) Separate into two balls.
  • Roll out dough, and let stand for 20 minutes.
  • Cut into strips and spread to dry--dust with a little flour. Let dry for approximately 2 hours.
  • Drop into hot soup--cook for about 10 minutes.

Gina: Few dishes are as soothing or as comforting as this creamy stew of poached chicken and tender egg noodles. As kids, when any of us were feeling low, we could always count on my mom (these days she's known as Grandma Jean) to have a pot of this soup on the stove. It seemed to me that anytime I had a bowl of it I was instantly cured. I'm not sure if it was the combination of ingredients, or the love my mother put in every pot, but I know that now, when I make it for my family, they feel the same way. Grandma Jean would simmer a whole chicken for hours (Grandma Jean took her time with everything). We, however, who always seem to be pressed for time, have thankfully found a way to create similar flavors with a shortcut (don't tell Grandma!). We poach sliced chicken breasts to juicy perfection in the stock, and then add green peas and lemon juice for a final layer of fresh flavors and color. Number Of Ingredients 15

3 tablespoons butter
3 large shallots, chopped
2 celery stalks, thinly sliced
4 ounces button mushrooms, thickly sliced
2 carrots, sliced into thin half-moons
Kosher salt
3 tablespoons all-purpose flour
6 cups Chicken Stock (page 28) or canned low-sodium chicken broth
One 10-ounce bag egg noodles
2 tablespoons vegetable oil
4 boneless, skinless chicken-breast halves, sliced diagonally into 1/2-inch strips
1 1/2 cups half and half
One 10-ounce box frozen peas
2 tablespoons chopped fresh flat-leaf parsley or dill
Freshly ground black pepper

Steps:

  • Melt the butter in a large pot over medium-high heat. When the butter begins to bubble, add the shallots, celery, mushrooms, carrots, and a pinch of salt, and cook until the vegetables are starting to soften, about 5 minutes. Add the flour, and cook, stirring frequently, until the vegetables are coated, about 2 minutes. Gradually stir in the chicken stock. Bring the soup to a simmer, stirring frequently, and cook until the vegetables are tender and the soup has thickened slightly, about 15 minutes.
  • Meanwhile, bring a large pot of water to a boil. Generously salt the water, and cook the egg noodles until they are just tender, about 7 minutes (this will vary from brand to brand, so check the bag for an accurate cooking time). Drain the noodles in a colander, transfer them to a bowl, toss them with the vegetable oil to prevent sticking, and set them aside.
  • Add the chicken slices to the soup pot, and simmer until the chicken is cooked through, 4 to 5 minutes. Add the half-and-half. Stir in the reserved noodles, the peas, and the parsley or dill, and simmer for another 5 minutes, until heated through. Season with salt and plenty of black pepper.
  • This soup can be prepared a day in advance (just allow the dish to cool slightly after cooking, then cover and refrigerate).
