Steps:
- For the Pie Crust
- Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
- Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
- Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.
- Add more water a tablespoon at a time until mixed and dough sticks together when pressed. Don't make too wet, just enough water to have dough come together.
- DO not overmix or your pie crust will be tough.
- Divide in half, cover with plastic wrap and chill for 30 minutes.
- While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
- Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
- Place one in bottom of pie plate.
- Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
- Sprinkle top with white sugar and cinnamon.
- Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.

GRANDMA OPLE'S APPLE PIE
This is a recipe for apple pie that I got from allrecipes.com and it is THE BEST apple pie I have ever had. It is different that ordinary apple pie, the fresh apples are placed in the crust, covered in a lattice top and smothered in a decadent sauce. Whoever Grandma Ople is, I would really like to thank her for she sure knows how to make a mean apple pie!For my crust, I use a recipe for pie crust that includes vinegar and is found on this site.

Steps:
- Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
- Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
- Bake 15 minutes at 425°F (220°C). Reduce the temperature to 350°F (175°C), and continue baking for 35-45 minutes.
- Note: you might want to set a baking sheet under the pie to catch any drips.
APPLE PIE FROM GRANDMA'S KITCHEN
There's nothing that says "home" quite like a nice, home-baked apple pie. This recipe was adapted from the 1941 New American Cookbook that my mother and grandmother used. This wonderful pie is the perfect ending to a great meal for company or for a special treat for your family. It smells heavenly while it's baking and turns...

Steps:
- 1. Preheat oven to 425 degrees. Lightly spray a 9" pie plate with cooking spray and set aside.
- 2. Lightly roll out 1/2 pie crust to 1/8" thickness, about 2 1/2 inches larger than pie plate. Fold in half and fit into pie plate. Trim the edges to fit the pie plate. Place crust in oven for about 5 minutes, remove from oven and set aside. This step will prevent your bottom crust from becoming soggy.
- 3. In large bowl, mix apples, sugar, spices, lemon juice and flour. Pour into bottom crust and dot with butter. Moisten the edge of the crust with cold water.
- 4. Roll out the remaining pie crust to about 1/8" thick and about 1" larger than the diameter of the plate. Fold in half and place over the apples with the folded half in the center. Carefully unfold and adjust over the apples. Gently press edges together and trim to fit the pie plate. Using a fork dipped in flour, press edges together or crimp edges with fingers. Using a sharp knife, make a few slits in the crust, about 1/2" in length.
- 5. Brush crust with milk and sprinkle with raw sugar. Place aluminum foil strips around the edge of the crust.
- 6. Line a cookie sheet or pizza pan with aluminum foil and place on the bottom rack in the oven. Place pie on the top rack and bake for about 40 minutes. Remove pie from oven and remove foil. Return to oven and bake for about another 10 minutes or until crust is evenly golden.
GRANDMA'S APPLE PIE
You'll elicit oohs and aahs every time you serve slices of this classic apple pie. The crisp crust is a nice complement to the tender apples.

- Add flour into a large bowl. Then add in 1 cup of lard broken up into chunks. Then use a fork or pastry cutter and start mixing the lard into the flour. Mix it together just long enough that it starts to incorporate and create a crumbly mixture. You don't want to overdo it and it's okay if there are still some big chunks of lard.
- Start adding in ice water to your dough mixture. Start with about 1/3 of a cup and gently start mixing it into the dough. If your dough still seems dry and is not sticking together, add in a tablespoon of water more at a time until your dough comes together.During this phase keep in mind that less is better. If you over mix the dough that is what creates a tough crust.
- Once your dough has come together, split the dough into two portions. One being bigger than the other. The larger portion will be for the bottom crust and the smaller portion will be for the top crust.

- Measure flour and salt into large bowl. Using a pastry blender, cut butter into dry ingredients until you have a fine crumble. Crack egg into measuring cup; add vinegar and then enough water to make 7/8 of a cup, more or less. Use fork to whisk egg mixture together. Pour egg mixture into dry ingredients almost all at once. (I usually hold out about a quarter of a cup.) Mix with the fork, gently gathering the dough from the outside of the bowl. Add the rest of the liquid if necessary. Do not over mix. Alternatively, you can use a stand mixer - just be sure not to over mix.
- As soon as the dough comes together, turn it out onto a floured surface. Use your hands to carefully press the dough together---you're not kneading here, just binding the ingredients together in a solid mass.
- Divide dough evenly into two, then roll out on a liberally floured surface. Fold the dough in half for easy lifting, then move into a pie pan. (I just use a simple glass pie pan like this.)
- For a single crust pie like pumpkin or lemon merengue, tuck the dough edges under and then crimp all around. For a filled pie, add a generous amount of filling, and top with the second crust.
