PECAN FINGERS



Pecan Fingers image

You can't go wrong with the combination of butter and pecans in this recipe. I never serve these cookies without receiving requests for it.

Yield about 4 dozen.

Number Of Ingredients 6

1 cup butter, softened
1/2 cup confectioners' sugar
2 cups all-purpose flour
1/2 teaspoon salt
1 cup finely chopped pecans
Additional confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans. , Shape tablespoonfuls into 2-in. fingers. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 15-18 minutes or until lightly browned. Roll warm cookies in confectioners' sugar; cool on wire racks.

These are usually in my Christmas cookie repertoire. This recipe is based on one from Grandma's Pantry Cookbook by Alan Robbins and Trudy Smoke.

1 cup unsalted butter, softened
1/2 cup confectioners' sugar
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons vanilla extract
1 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees farenheit.
  • Beat butter and sugar together, in bowl, until creamy and fluffy.
  • Gradually add the flour until well mixed in, then salt, vanilla and pecans.
  • Shape level teaspoons of dough into 2-inch-long fingers.
  • Place on ungreased cookie sheet.
  • Bake for 15 to 20 minutes or until lightly browned.
  • Cool before eating.

3 eggs, separated
1 teaspoon almond extract
1/4 teaspoon salt
1/3 cup sugar
1/2 cup sifted cake flour
1 teaspoon baking powder

Steps:

  • Beat egg yolks until thick and light-yellow colored.
  • Beat in almond extract.
  • Beat egg whites until stiff.
  • Continue beating adding salt and sugar, until whites are glossy and very stiff.
  • Fold egg yolks into egg whites.
  • Fold in sifted flour and baking powder.
  • Drop batter by the tablespoonfuls onto an ungreased cookie sheet forming fingers about 1x3in.
  • Bake in a 350F oven for 10 minutes.
  • Remove from tray immediately and cool.

A little puff of pecan-y goodness. Melts in your mouth. Perfect for the holidays. I have had this in my Christmas Cookie repertoire for many years.

Number Of Ingredients 7

1/2 cup salted butter, softened
2 tablespoons sugar
1 teaspoon vanilla
3/4 cup finely chopped pecans
1 cup cake flour
1/4 teaspoon salt (or less)
powdered sugar, reserved

Steps:

  • Preheat oven to 300°.
  • Put on some Christmas music.
  • Chop pecan in a food processor or by knife.
  • Beat butter until soft with a mixer. Add sugar, vanilla, and pecans. Carefully add flour and blend well.
  • Coat hands with flour. Use a teaspoon scoop or a teaspoon and shape into cherry-size and place on a parchment-lined or greased cookie sheet.
  • Bake at 300° 15-20 minutes.
  • (These should be light in color. Do not brown!) While cookies are still quite warm, roll them in confectioner's sugar. When cool, roll in confectioner's sugar again.

1/4 cup butter, softened
1/4 cup chopped pecans
1 tablespoon granulated sugar
1/2 teaspoon vanilla
3 tablespoons boiling water
1/2 cup granulated sugar, to roll cookies in

Steps:

  • Peheat oven to 375*.
  • Combine Bisquick, butter, pecans sugar & vanilla in a medium size mixing bowl.
  • Add water & stir vigorously with a fork until dough forms a ball & cleans the bowl.
  • Shape dough into 24- 2 !/2" long fingers.
  • Place on ungreased cookie sheet.
  • Bake 10-12 minutes at 375*.
  • While still warm roll each finger in granulated sugar.
  • Makes 2 dozen cookies.

2 (3 ounce) packages ladyfingers, split, separated
1 cup coffee, freshly brewed, room temperature, divided
8 ounces cream cheese (I use low-fat)
2 cups milk (I use skim)
2 (4 ounce) packages instant vanilla pudding (I use FF and Sugar Free)
8 ounces Cool Whip, divided (I use lite)

Steps:

  • Brush sides of ladyfingers with about 1/4 cup of coffee.
  • Place ladyfingers on bottom and up side of 2 quart serving bowl.
  • Beat cream cheese and remaining 3/4 cup coffee in large bowl with wire whisk until smooth.
  • Gradually beat in milk until smooth.
  • Add pudding mixes.
  • Beat with wire whisk until blended.
  • Gently stir in 1/2 of the coolwhip.
  • Spoon into prepared bowl.
  • Cover.
  • Refrigerate 1 hour or until set to serve.
  • Top with remaining coolwhip.
