OLD-FASHIONED BANANA CAKE

3 very ripe bananas, mashed
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1/2 cup sour cream
1 teaspoon pure vanilla extract
Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)
6 ounces cream cheese, at room temperature
6 tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups sifted confectioners' sugar (1/2 pound)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
  • In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
  • Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

1 1/2 cups sugar
1/2 cup shortening
2 eggs
1 1/2 cups flour
3 tablespoons sour milk
1 teaspoon baking soda
3 mashed bananas
1/2 cup chopped nuts
1 cup brown sugar
1/4 cup milk
1/4 cup butter
1/2 teaspoon vanilla

Steps:

  • CAKE.
  • in large bowl, cream sugar, shortening and eggs until light and fluffy.
  • stir in remaining ingredients as listed.
  • pour into greased and floured 13x9 pan.
  • bake 15 minuted at 400, then 20 minutes at 350.
  • cake will remain moist.
  • while cake is cooking, blend all ingredients for icing (except vanilla) in small saucepan.
  • ICING.
  • bring all ingredients to a boil, stirring constantly.
  • when mixture reaches full rolling boil, boil for one minute.
  • let cool.
  • add vanilla.
  • beat and spread on warm cake.

¾ cup butter
2 ⅛ cups white sugar
3 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 ½ teaspoons baking soda
¼ teaspoon salt
1 ½ cups buttermilk
2 teaspoons lemon juice
1 ½ cups mashed bananas
½ cup butter, softened
1 (8 ounce) package cream cheese, softened
3 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Grease and flour a 9x13 inch pan. In a small bowl, mix mashed bananas with lemon juice, set aside. In a medium bowl, mix flour, baking soda and salt. Set aside.
  • In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture. Pour batter into prepared pan.
  • Bake in preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and place directly into freezer for 45 minutes. This will make the cake very moist.
  • For the frosting: In a large bowl, cream 1/2 cup butter and cream cheese until smooth. Beat in 1 teaspoon vanilla. Add confectioners sugar and beat on low speed until combined, then on high until frosting is smooth. Spread on cooled cake.

1 cup butter
12 ounces flour
1 1/2 teaspoons baking soda
2 teaspoons baking powder
4 eggs
1 1/2 cups mashed bananas
2 tablespoons evaporated milk
1 pinch salt
1 teaspoon vanilla

Steps:

  • Preheat oven to 180degrees Celsius. Grease and flour 10 inch round baking pan.
  • Sieve flour, baking soda, baking powder and salt together. Set aside.
  • Cream butter and sugar till light and fluffy.
  • Beat eggs in 1 at a time, only adding the next when the previous egg has been fully incorporated.
  • Add bananas and milk inches Mix well.
  • Add flour in and mix well.
  • Pour into baking pan and bake for 50 minutes or till a skewer in the middle comes out clean.
  • You may need to start tenting it inbetween the 50 minutes so that it does not overbrown.
