CHOCOLATE WALNUT KAHLUA BALLS (NO BAKE)
I have made these using dark rum, Grand Marnier and Bailey's Irish Cream, you can use any three with success.. I usually make these treats around the holiday season, but of coarse you can make them at any time. I make one batch using semisweet chocolate and one with white chocolate, these really should chill overnight before serving them, you'll be lucky if they make until the next day LOL! Yield is only estimated depending on the size of the balls --- you will LOVE these! :)

Steps:
- Stir the chocolate over simmering water in a double boiler until melted and smooth; remove from heat.
- Whisk in 1/2 cup sugar and corn syrup then the Kahlua.
- In a small bowl mix together the chopped walnuts and crushed wafers; add in the chocolate mixture and mix well.
- Shape into small balls.
- Place powdered sugar in a shallow bowl.
- Roll each ball in the powdered sugar to coat.
- Place in an air-tight container and refrigerate overnight.
ESPRESSO-GRAND MARNIER BALLS
I must confess that I have always adored these uncooked, boozy little Christmas balls, a sort of mock truffle, made from ground cookie crumbs, nuts, liqueur, and corn syrup. This recipe is the ultimate version after many holiday seasons of experimenting. They require at least a week of aging, tucked away in a tin out of sight and out of mind. Once unveiled they are the perfect sweet to end a gala evening.

Steps:
- Pulverize the chocolate wafers and hazelnuts together in a food processor. Add the confectioners' sugar and process to combine.
- Dissolve the espresso in the Grand Marnier and add to the chocolate crumbs along with the corn syrup. Process until the mixture forms a moist mass.
- Break off small pieces of the dough and roll them into 1-inch balls. Place the granulated sugar in a shallow bowl and roll each ball in the sugar to coat. Store loosely packed between layers of waxed paper in a cookie tin.
- Let age 1 week before serving.

TRIPLE CHOCOLATE COOKIE BALLS
I love almost anything chocolate and especially Oreo cookies. I make these with my grandchildren at Christmas time every year and add them to plates of goodies for their teachers and our neighbors.

- Beat pudding mix and milk in medium bowl with whisk 2 minute Add cookie crumbs; mix well.
- Shape into 42 (1-inch) balls. Freeze 10 minute Dip in semi-sweet chocolate; place in single layer in shallow waxed paper-lined pan.
- Refrigerate 20 minute or until firm. Drizzle with white chocolate; refrigerate 10 minute or until firm.

- 1. Put cream, butter and sugar into saucepan over medium heat. Bring to boil, stirring often. Remove from heat.
- 2. Add Grand Marnier, chocolate and crumbs. Mix well. Shape into 42 balls.
- 3. Roll in chocolate sprinkles. Chill or freeze.
NO-BAKE CHOCOLATE KAHLUA CHRISTMAS BALLS
Steps:
- 1. Melt the chocolate chips in evaporated milk in a pot over low heat, stirring constantly, until well blended. Remove from the heat and set aside to cool for about 30 minutes. Combine all remaining ingredients except the coconut; stir into the chocolate mixture, blending well.
- 2. Shape the mixture into 1- to 1 1/2-inch balls (if the dough is too moist, add up to 1/3 cup more cookie crumbs), then roll in coconut. Let air-dry for 2 hours on waxed paper. Transfer to an airtight container; store in refrigerator. Serve in pleated, brown-paper candy cups.
MIKE'S GRAND MARNIER CHOCOLATE CHIP COOKIES
Memories of university.... The temperature seems a little low, though I got the recipe directly from Mike. It's been a number of years since I've made them. You might have to up the temperature.

- Cream margarine, sugars, vanilla and Grand Marnier in a large mixing bowl.
- Add eggs, beating well after each addition.
- Add baking soda and flour and stir until blended.
- Stir in oats, then chocolate chips.
- Drop by the tablespoonfuls 5 cm apart onto ungreased cookie sheets.
- Bake at 300°F for 5-10 minutes or until done. Allow to cool somewhat before removing from cookie sheet.
