BAKED MACARONI
I suggested using a glass dish because you can see how brown the casserole is getting (and brown is a good thing). My family loves the crispy sides and topping.

Steps:
- Mix together the flour, 1/4 cup butter and the milk.
- Add cheese chunks and allow to melt (continually stirring and watching so cheese does not burn).
- Add the salt and pepper.
- Combine the ziti and cheese sauce.
- Put into casserole dish (I use glass) which has been well buttered with the remaining 1/4 stick of butter (use it all).
- Mix Ritz with enough butter to moisten the crackers (amount is entirely up to you, but make enough to cover the casserole completely) The more the better.
- Bake@ 350 degrees for approximately1 hour.
- Serve immediately.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 10 to 13 minutes or until al dente; drain.
- In a bowl mix together the eggs, milk, and pepper. In a casserole dish, place about a third of the cooked macaroni in one layer, sprinkle with 1/2 of the cheese, then layer the rest of the macaroni and cover with the remaining cheese. Coat evenly with the egg-milk mixture. Lastly, cut slices of butter and place them on top of the cheese.
- Bake in a preheated oven for 30 minutes or until the cheese is completely melted.

BAKED MACARONI- FILIPINO STYLE

Steps:
- In a saucepan, melt butter over low heat. Add the flour and stir until well mixed. Gradually add milk while stirring constantly to prevent lumps from forming.
- Once all the milk is added and sauce starts to thicken, add 1cup grated cheese. Stir again until it becomes smooth and no more lumps are visible. Remove from heat and set aside.
- In a large pot, heat oil over medium heat and stir-fry slices of hotdogs until cooked then remove from oil and set aside.
- Add butter to the remaining oil in the pot. Saute onion, garlic, and red bell pepper until onions are limp and aromatic. Add ground beef. Break the lumps with a wooden spoon and cook until no longer pink.
- Add the uncooked macaroni and mix. Cook for a minute or two.
- Pour in spaghetti sauce and season with salt and pepper. And cook for another minute or two, stirring frequently.
- Pour in the water and mix well. Cover the pot and cook for 5 minutes or until pasta is almost al dente. It will finish cooking in the oven. Season as needed and add the cooked hotdogs and mix.
- Transfer the content of the pot to a baking dish and pour the cheese sauce on top. Then top with remaining grated cheese.
- Bake on a preheated oven at 180°C for 15 minutes.
