One thing I know for sure, is that my gram knew how to cook and bake... This cake is definitely one you will want to make for sure! Just plain DELISH!

Ingredients

2 cups apples, cored, peeled and chopped
1 cup sugar
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup oil
1 egg

Steps:

Preheat oven to 350°.
Grease and flour a loaf pan, or 9x9" cake pan, or makes 18 cup cakes.
Cut apples, and peel and chop into small pieces.
Add sugar, and mix and let set for 10 minutes while mixing dry ingredients.
Sift flour, salt, baking soda, cinnamon and nutmeg together well.
Add oil mixed with beaten egg, to apples.
Mix in dry ingredients, and pour into pan.
Bake at 350° for 30-45 minutes. Test at 30 minutes with a tooth pick in center of cake -- When it comes out clean, cake is done. DO NOT overbake.

This is another treat that came from my Grandmother. She said you can substitute the apples for blueberries for a different cake! Also, this could be used for muffins, except bake at 325F for 25 mins.

Ingredients

1/3 cup margarine
2 eggs
1 cup sugar
3/4 cup milk
2 cups flour
2 teaspoons baking powder
1 cup chopped apple

Steps:

Blend margarine, eggs, white sugar and milk together.
Fold in flour and baking powder.
Then fold in apples.
Bake in 8x8 pan at 350F for 50 minutes.
tip - toss apples in a little bit of flour before adding them in to prevent them from going to the bottom.
