MEATLOAF WITH SALTINE CRACKERS



Meatloaf with Saltine Crackers image

Saltine cracker crumbs replace the usual breadcrumbs in this family-friendly meatloaf with a sweet glaze.

Olive oil for brushing
30 saltine crackers
2 1/2 pounds ground beef (85 percent lean)
1 large yellow onion (10 ounces)
1 large carrot (5 ounces)
2 medium cloves garlic
1/2 cup finely chopped flat-leaf parsley
2 large eggs
1 cup ketchup, divided
1 tablespoon Worcestershire sauce
2 tablespoons Dijon mustard, divided
2 teaspoons coarse salt
1 teaspoon coarsely ground pepper
2 tablespoons brown sugar

Steps:

  • Preheat oven to 375 degrees. Line a rimmed baking sheet with parchment paper, then fit the sheet with a wire rack. Brush a 10-by-5-by-3-inch loaf pan with olive oil and place on rack; set aside. Place saltines in the bowl of a food processor fitted with the steel blade; pulse until fine crumbs form. You should have about 1 cup crumbs. Transfer to a large bowl and add ground beef.
  • On the large holes of a box grater, grate carrot (should measure 1 cup grated) and onion (about 2/3 cup grated). Drain excess juice from onion. Add carrot and onion to meat mixture, then grate garlic on the fine holes of the grater (1 teaspoon). Add to bowl along with parsley, eggs, 1/2 cup ketchup, Worcestershire, 1 tablespoon Dijon, salt and pepper. Use hands to combine thoroughly. Transfer to prepared loaf pan.
  • Combine remaining 1/2 cup ketchup, 1 tablespoon Dijon and brown sugar in a small bowl. Stir until smooth and no sugar lumps remain.
  • Spread mixture evenly over top of meatloaf. Place in oven, atop wire rack and bake until a meat thermometer inserted into the center reads 160 degrees, about 1 hour 30 minutes. Tent with foil if top begins to brown too quickly. Remove from oven and let cool 1 hour before slicing. Serve.

This recipe was posted on the internet when "The Big Cook" cookbook was coming out. We tried it and loved it. It freezes well, making it perfect for a OAMC session or bulk cooking. Recipe is written for 1 loaf, multiply to make multiples. I usually make at least 2 when I include it in my meatloaf session.

1 1/2 lbs ground beef, raw
1 cup graham cracker crumbs
1/2 cup milk
1/4 cup ketchup
1/2 cup onion, chopped
2 eggs
1/3 teaspoon salt

Steps:

  • Mix all ingredients until thoroughly combined.
  • Place in loaf pan OR 8x8 pan.
  • Drizzle with ketchup or BBQ sauce if desired.
  • Bake at 350 degrees for 1 hour.
  • For freezing, I bake first then let cool. Wrap in foil and place in freezer bags for freezer.

1 cup cracker crumb
1/2 cup diced onion
1 egg
1 lb ground beef
1 (14 ounce) can tomato sauce
salt
pepper

Steps:

  • Mix cracker crumbs, ground beef, onion, egg, salt, pepper, and 1/2 can of tomato sauce in large bowl.
  • Divide into two small or one large loaf pan.
  • Pat mixture into loaf pans evenly.
  • Go wash your nasty hands, ewww!
  • Cover top of each loaf with rest of tomato sauce (you may use ketchup as well, if so you will only need a small can of tomato sauce. My family doesn't like the sweetness of ketchup in this dish.).
  • Cover with heavy duty foil, label, and freeze.
  • When ready to make, thaw loaves completely.
  • Preheat oven to 350 degrees F.
  • Bake thawed loaves 1-1/2 hours (depends on if you are using the large or smaller ones.).
  • Enjoy!

  • Soak 2 pieces of bread in milk. While breadcrumbs work well in a meatloaf, I find adding bread with milk makes the meatloaf much softer when baking in the oven.
  • Mix together the ingredients (except the ketchup) After soaking the bread for about 3-4 minutes, add in the ground beef, diced tomatoes, bell pepper, onion, egg, salt, pepper, and Worcestershire sauce.
  • Form into a loaf in a deep casserole dish. Move the meatloaf mixture into a deep casserole dish, and form into a loaf with your hands. You don't want to use a shallow pan because the meatloaf will release juices while cooking.
  • Bake for 1 hour, then spread the ketchup. Bake the meatloaf for one hour in the oven, until the meatloaf reaches 160 degrees with a meat thermometer. Once finished, spread the 1/2 cup of ketchup on top.
  • Serve with some typical Cracker Barrel sides. Make some Cracker Barrel Macaroni and Cheese, homemade biscuits, or green beans to serve as sides with your meatloaf!
