This old-fashioned Icebox Fruitcake recipe is a traditional holiday dessert that's overflowing with decadent ingredients, like Graham cracker crumbs, pecans, maraschino cherries, and mini marshmallows.

1 cup pecans
1 jar maraschino cherries (10 oz)
1 tablespoon cherry juice
1 cup raisins
1 cup shredded coconut (firmly packed)
1 1/2 cups mini marshmallows
1 can sweetened condensed milk (14 oz)

Steps:

  • Finely crush graham crackers and coarsely chop pecans and drained cherries.
  • Combine all ingredients in a large mixing bowl and mix well.
  • Turn out into a lightly buttered 9x13 baking dish and press flat into the pan with your hands. Chill for at least 6 hours.

1 lb raisins
1/2 lb pecans
1 (16 ounce) jar maraschino cherries
24 big marshmallows
1 (14 ounce) can condensed milk

Steps:

  • Crush the graham crackers into fine crumbs.
  • Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
  • Chop the nuts; drain and cut cherries in half (if they are whole).
  • Melt marshmallows in milk.
  • Mix all ingredients together.
  • Pack into regular sized loaf pan.
  • Refrigerated overnight and cut with a hot knife.
  • Coconut is an optional ingredient.
  • Cook time is refrigeration time.

6 ounces red candied cherries, coarsely chopped
6 ounces green candied cherries, coarsely chopped
6 ounces candied pineapple, coarsely chopped
2 (14 ounce) cans sweetened condensed milk
1 ½ cups chopped pecans

Steps:

  • Line one 9x5 inch loaf pan with plastic wrap, allowing wrap to hang over edges a few inches.
  • In a large bowl, combine the graham crackers, red and green cherries, pineapple, pecans, and the sweetened condensed milk, using your hands mix thoroughly. Place mixture into lined pan and cover well.
  • Freeze for at least 8 hours or overnight before serving. When ready to serve; invert onto a serving platter, remove pan and plastic wrap, and slice. Store any remaining cake in the freezer.

1 jar (8 oz.) red cherries, quartered, drained
1 1/2 cups broken nuts (any type)
1 cup raisins
1 cup flaked coconut
2 Tbsp orange rind
1 cup all-purpose flour, divided
1 tsp baking powder
1 tsp salt (optional)
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 in ner-seal packets HONEY MAID GRAHAM CRACKERS (finely rolled) (2 1/2 cups)
1 1/4 cups butter or margarine
1 1/2 cups light brown sugar, packed
6 eggs, separated
1/2 cup orange juice

Steps:

  • In a very large bowl combine first seven ingredients with 1/2 cup flour. In another bowl, mix remaining flour with next 5 ingredients.
  • In another large bowl, beat butter and sugar until creamy. Gradually add egg yolks and beat until thick and creamy. Add graham cracker mixture, blend well. Then stir into fruit mixture with orange juice. Can substitute juice from cherries. Beat egg whites until stiff but not dry. Fold in graham mixture. Can use a tube pan if you choose or several smaller pans for personal sizes.
  • Bake at 325 degrees F. If tube pan approx 1-1 1/2 hours, if smaller pans 1/2 hour.

3/4 cup chopped dates
1/4 cup halved candied cherries
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves

Steps:

  • Line a 9x5-in. loaf pan with waxed paper; coat the paper with cooking spray; set aside. In a saucepan, combine milk and orange juice concentrate. I like fruitcake as long as it doesn't have a lot of strange fruit in it. I like dates, candied cherries, raisins, and walnuts. So that limits a lot fruitcakes although I have changed recipes to suit my taste. I also like graham crackers, so when I found this on the cracker box years ago, I had to try it. I liked it.

1 (4 ounce) container candied green cherries (no mint flavor)
2 (4 ounce) containers candied red cherries
1 1/2 cups walnuts (coarsely chopped) or 1 1/2 cups pecans (coarsely chopped)
1 cup raisins
1 cup flaked coconut
2 tablespoons grated orange rind
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon

My mother made one of these Icebox Fruitcakes almost every year for us at Christmas. Prepare the dry ingredients first, then melt the marshmallows with milk. Stir everything together, press into a dish and refrigerate overnight. It's easy.

½ lb. Pecans, chopped
½ lb. English Walnuts, chopped
½ lb. Brazil Nuts, chopped
½ lb. Raisins, chopped
1 10z bag Miniature Marshmallows
½ lb. Graham Crackers, crushed
1 can Evaporated Milk, 12 ounce
½ cup Sweetened Flake Coconut
½ cup Maraschino Cherries with juice, chopped

Steps:

  • Prepare all the dry ingredients ahead of time as directed.
  • Chop the pecans, walnuts, brazil nuts, and raisins as needed.
  • Crush or chop the graham crackers.
  • Chop the maraschino cherries, saving the juice. Set aside for now.
  • Place the chopped nuts in a large mixing pan.
  • Add the chopped graham crackers.
  • Add the coconut.
  • Mix dry ingredients together to fully combine.
  • Place the marshmallows in a medium size sauce pot.
  • Add the milk.
  • Place the pot over Medium Low heat on your stove top.
  • Constantly stir this mixture until the marshmallows are fully melted.
  • Pour the marshmallow mixture over the crushed nuts and graham crackers.
  • Add the chopped cherries with juice.
  • Mix well, until fully combined.
  • Lightly butter a 9 x 13 x 2 casserole type dish or pan.
  • Place the mixture in the dish, spread evenly and press firmly.
  • Store in refrigerator until ready to serve.
  • Enjoy!

Butter the bottom and side of each foil covered loaf pan with butter. Do not skimp on this part.
