GRAHAM CRACKER TOFFEE (AKA GRAHAM CRACKER CRACK)

- Preheat oven to 350F. Line a 9×13-inch pan with aluminum foil and spray with cooking spray.
- Place graham crackers in pan in a single, flat layer so pan is completely covered with them. You will have to break some crackers to fill in the smaller spaces at the edges. It's ok if there are slight gaps, doesn't have to be perfect; set aside.
- To a medium, heavy-bottomed saucepan with high sides, add the butter, brown sugar, salt, and heat over medium-high heat to melt. Stir constantly until butter has melted.
- After butter has melted, allow mixture to boil for about 4 1/2 to 5 minutes at a medium-fast boil (lots of bubbles). Stir constantly to prevent burning. As you approach the 4 minute mark, mixture should seem thickened with the consistency of medium-thick caramel sauce. I pulled mine off the heat at 4 1/2 minutes because it was thick enough.
- Evenly pour mixture over graham crackers.
- Bake for about 7 minutes, or until there's bubbling around the edges.
- Remove pan from oven, evenly sprinkle with chocolate chips, return pan to oven, and bake for about 2 minutes, or until chocolate chips are glistening and have softened.
- Use a spatula to smooth the chocolate chips into an even, smooth layer of melted chocolate.
- Evenly sprinkle with toffee bits.
- Allow toffee to cool for about 2 to 3 hours, or until chocolate has set up and dessert is sliceable.*

- Line cookie sheet with waxed paper. In small bowl, stir 1/4 teaspoon red food color into 1/4 cup of the frosting; blend well. In separate bowl, stir 1 small amount red food color into remaining 1 cup frosting; blend well.
- For each cookie, frost 1 inch of one corner of cracker with dark red frosting for Santa's hat. Place 1 marshmallow piece in corner for pom-pom.

- Peel and slice or dice peaches to desired size.
- Place peaches in bowl, and add sweetened condensed milk and lime juice.
- Mix until fruit is coated well.
- Allow to chill in refrigerator 15-20 minutes.
- Pre-heat oven to 375 degrees.
- Crush graham crackers or use store bought crumbs.
- Combine graham cracker crumbs, sugar, and salt.
- Pour butter over crumbs and stir well to moisten crumb mixture.
- Press mixture into 9 or 10 inch pie plate (I use a measuring cup as pictured above to get an even, packed crust).
- Bake for 8-10 minutes until edges turn brown
- Remove and allow to cool.
- Then pour peach filling into pie crust, chill until ready to eat, slice and enjoy!

- In a large bowl, use an electric mixer to combine the cream cheese, lemon juice, and vanilla extract.
- Once smooth, use a spatula to scrape down the sides of the bowl, then add the sugar and heavy cream. Mix on high speed for about 2 minutes, or until the batter is thick and smooth.
- Pour batter into a 13x9-inch (33x23-cm) baking dish lined with parchment paper. Use a spatula to spread the batter evenly and make the top as level as possible.
- Freeze for four hours.
- Fill a gallon-size plastic bag with the graham crackers. Use a rolling pin or meat mallet to crush the graham crackers until they are super-fine crumbs.
- Pour the flour, eggs, and graham cracker crumbs into 3 separate medium bowls.
- Heat the oil in a large pot until it reaches 350°F (180°C).

- In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
- Add the milk ½ cup (120 ml) at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.
- Repeat with the rest of the milk. The batter should be very liquidy and have no lumps.
