GRAHAM CRACKER TOFFEE (AKA GRAHAM CRACKER CRACK)

Graham Cracker Toffee (aka Graham Cracker Crack) image

If you're looking for a recipe that will disappear at holiday parties or cookie exchanges, these graham cracker toffee bars are a guaranteed winner.

Provided by Averie Sunshine

Categories     Dessert

Time 3h24m

Number Of Ingredients 6

about 10 full-size honey graham crackers, or enough to cover pan (I used low-fat)
1 cup (2 sticks) unsalted butter
1 cup light brown sugar, packed
1/2 teaspoon salt, or to taste
2 cups semi-sweet chocolate chips
1/3 cup toffee bits

Steps:

  • Preheat oven to 350F. Line a 9×13-inch pan with aluminum foil and spray with cooking spray.
  • Place graham crackers in pan in a single, flat layer so pan is completely covered with them. You will have to break some crackers to fill in the smaller spaces at the edges. It's ok if there are slight gaps, doesn't have to be perfect; set aside.
  • To a medium, heavy-bottomed saucepan with high sides, add the butter, brown sugar, salt, and heat over medium-high heat to melt. Stir constantly until butter has melted.
  • After butter has melted, allow mixture to boil for about 4 1/2 to 5 minutes at a medium-fast boil (lots of bubbles). Stir constantly to prevent burning. As you approach the 4 minute mark, mixture should seem thickened with the consistency of medium-thick caramel sauce. I pulled mine off the heat at 4 1/2 minutes because it was thick enough.
  • Evenly pour mixture over graham crackers.
  • Bake for about 7 minutes, or until there's bubbling around the edges.
  • Remove pan from oven, evenly sprinkle with chocolate chips, return pan to oven, and bake for about 2 minutes, or until chocolate chips are glistening and have softened.
  • Use a spatula to smooth the chocolate chips into an even, smooth layer of melted chocolate.
  • Evenly sprinkle with toffee bits.
  • Allow toffee to cool for about 2 to 3 hours, or until chocolate has set up and dessert is sliceable.*

FRIED CHEESECAKE BARS RECIPE BY TASTY

Fried Cheesecake Bars Recipe by Tasty image

Here's what you need: cream cheese, lemon juice, vanilla extract, granulated sugar, heavy cream, all-purpose flour, large eggs, graham crackers, canola oil, strawberry sauce, whipped cream, powdered sugar

Provided by Katie Aubin

Categories     Desserts

Yield 12 servings

Number Of Ingredients 12

8 oz cream cheese, 2 packages, softened
1 tablespoon lemon juice
½ teaspoon vanilla extract
½ cup granulated sugar
2 cups heavy cream
1 cup all-purpose flour
4 large eggs, beaten
18 graham crackers, crushed
4 cups canola oil, for frying
⅓ cup strawberry sauce, for serving
2 cups whipped cream, for serving
½ cup powdered sugar, for serving

Steps:

  • In a large bowl, use an electric mixer to combine the cream cheese, lemon juice, and vanilla extract.
  • Once smooth, use a spatula to scrape down the sides of the bowl, then add the sugar and heavy cream. Mix on high speed for about 2 minutes, or until the batter is thick and smooth.
  • Pour batter into a 13x9-inch (33x23-cm) baking dish lined with parchment paper. Use a spatula to spread the batter evenly and make the top as level as possible.
  • Freeze for four hours.
  • Fill a gallon-size plastic bag with the graham crackers. Use a rolling pin or meat mallet to crush the graham crackers until they are super-fine crumbs.
  • Pour the flour, eggs, and graham cracker crumbs into 3 separate medium bowls.
  • Heat the oil in a large pot until it reaches 350°F (180°C).
  • Remove the cheesecake batter from the freezer and use the parchment paper to lift it out of the pan. Cut the cheesecake into 12 4x3-inch (10x7-cm) bars.
  • Take a piece of cheesecake and toss it in the flour. Tap off any excess flour, dip the piece in the egg, and then toss it in the graham cracker crumbs. Dip it back in the egg again, then toss in the graham cracker crumbs once more. Repeat with the remaining cheesecake pieces.
  • Fry the breaded cheesecake, 2 or 3 bars at a time, until golden brown, 30-60 seconds.
  • Drain the cheesecake bars on a wire rack or paper towels.
  • Serve with strawberry sauce, whipped cream, and powdered sugar.
  • Enjoy!

10 FUN SUMMER RECIPES FOR KIDS - INSANELY GOOD

From insanelygoodrecipes.com
5/5 (1)
Published 2021-06-17
Category Recipe Roundup
  • Veggie Faces Pizza. Getting kids to eat their veggies is one of the few things more difficult than keeping them entertained for a solid two months. These veggie pizzas might just do the trick, though.
  • Grilled Cheese. I’ve never met a child who didn’t love grilled cheese sandwiches, so this classic was an obvious choice for the list. With some bread, butter, and cheddar cheese, you can brighten any child’s day.
  • Ants on a Log. Ants on a log are another fun way to get your kids interested in “playing” in the kitchen and eating their veggies. As with the veggie face pizzas, you’ll have a lot of leeway with the ingredients in this recipe.
  • Peanut Butter Sandwich. PB&J’s are another classic sandwich idea for kids of all ages. Pick your child’s favorite bread, crunchy or creamy peanut butter, and their favorite flavor of jelly.
  • Hungry Hippos Sandwich. This is a peanut butter sandwich alternative that’s a little healthier and a lot more fun for your kids. You’ll use flatbread instead of bread, and be sure you cut out the hippo heads before turning them over to your children to decorate.
  • Peanut Butter and Banana Smoothie. The next time your child asks for a milkshake on one of those hot summer days, make them one of these five-ingredient smoothies instead.
  • No-Bake Fruit Pizza. You can whip up this no-bake fruit pizza in about 15 minutes. It’s sweet, light, and refreshing, and it’s the ideal summer treat for kids.
  • Yogurt Parfaits. Yogurt parfaits are another phenomenal treat. They’re so sweet that your children will think they’re getting to eat dessert for breakfast (or whenever you make them).
  • Graham Cracker Faces. When it comes to children, especially young ones, the more fun they have with their food, the more likely it is that they’ll eat it and enjoy it.
  • Ice Cream in a Bag. Ice cream in a bag is one part tasty treat, one part science experiment, and one part kitchen adventure. All you’ll need are some Ziploc bags and five simple ingredients – sugar, salt, ice, vanilla extract, and half-and-half.
