GRADUATION CUPCAKES

Graduation Cupcakes image

Chocolate cupcakes, whipped mint chocolate chip cream cheese frosting, and a graduation cap and tassel! These Graduation Cupcakes or should we say "cap"-cakes are perfect for impending Graduation parties!

Provided by Aubrey Cota

Categories     Dessert

Time 45m

Number Of Ingredients 12

15.25 ounce box Kroger chocolate cake mix or brownie mix (prepared in cupcake form, according to package directions.)
1 cup unsalted butter (softened)
8 ounces cream cheese (room temp)
½ tsp pure vanilla extract
½- 1 teaspoon pure mint extract
Green food coloring (2-3 drops)
4 cups powdered sugar (sifted)
1/3 cup mini chocolate chips
pinch of salt
24 squares package Kroger Graham Crackers (broken into squares (24 squares needed, so 12 crackers))
12 ounce bag milk chocolate chips (reserve a few for decorating)
Yellow licorice (I bought the stuffed kind)

Steps:

  • Cook cupcakes according to package directions. If using brownie mix (fudgier), then fill liners a little fuller, you will get fewer cakes, and they will be denser.
  • Let cupcakes cook completely.
  • Mix frosting by beating the butter with a hand mixer in a medium sized bowl until fluffy (1-2 minutes)
  • Add in cream cheese, and whip until smooth.
  • Add in extracts (vanilla and mint), to preferred taste
  • Add food coloring
  • Beat together.
  • Slowly add powdered sugar. Whip until fluffy.
  • Add a pinch of salt, and whip again until free of lumps.
  • Fold in mini chocolate chips.
  • Pipe onto cooled cupcakes.
  • Melt chocolate by putting it in a microwave safe bowl, and heating in 20-second increments, stirring between each. When silky and smooth, dip crackers in, and coat. Use a fork to hold graham cracker above the bowl, and lightly tap to get excess chocolate off.
  • While chocolate is still wet, place a chocolate chip in the center. Then place a piece of yellow licorice off the side, like a tassel. I cut the licorice into 4 strips, and then cut bigger chunks off the end and inserted the thin strips into the center so it resembled a tassel (see photo).
  • Place graduation cap graham cracker on top of frosting. Enjoy!

Provided by Katrina Bahl

Categories     Dessert

Time 1h15m

Number Of Ingredients 16

1 1/2 cups flour
2/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
10 tablespoons butter (softened)
1 1/2 cups sugar
1 cup buttermilk
3 eggs
2 teaspoons McCormick® Pure Vanilla Extract
1 tablespoon McCormick® Black Food Color
16 oz dark chocolate frosting
1 to 2 teaspoons McCormick® Black Food Color
12 graham cracker sheets (halved (24 squares))
24 pieces string licorice (2-inch lengths)
24 round chocolate candies (such as Junior Mints or dark brown M&Ms)

Steps:

  • PREHEAT oven to 350°F. Line a muffin tin with 24 paper liners or coat generously with no stick spray. Whisk together flour, cocoa powder, baking powder, baking soda and salt in a medium bowl. Set aside.
  • CREAM the butter and sugar until fluffy and lighter in color in the bowl of your mixer. Slowly add buttermilk, eggs and vanilla. Slowly add the dry ingredients to the wet ingredients in your mixer bowl until incorporated, about 2 minutes. Add up to 1 tablespoon black food color. Spoon batter into prepared tin, filling 3/4 full.
  • BAKE for 15 to18 minutes until a cake tester or toothpick inserted into cupcake comes out clean. Cool cupcakes on a wire rack.
  • PLACE frosting in a microwave-safe bowl and heat on HIGH for 1 minute until melted. Stir in 1 to 2 teaspoons black food color until desired color is reached. Using a fork, dip graham cracker squares into the frosting. Let excess frosting drip off. Place on parchment paper to cool and harden (at least 30 minutes).
  • MEANWHILE use sharp scissors to cut licorice strips into tassels. Unwrap cupcakes (if you used paper liners), trim tops to level if necessary, and turn cupcakes upside down. Use a drop of frosting to secure graham cracker squares onto tops of cupcakes. Place a licorice strip and a chocolate candy on top of each, securing with a drop of frosting.

Categories     Chocolate Recipes

Time 1h25m

Yield 24 servings

Number Of Ingredients 7

1 pkg. (2-layer size) chocolate cake mix
1 env. KOOL-AID Orange Flavor Unsweetened Drink Mix
1 pkg. (4 oz.) BAKER'S White Chocolate, melted
12 graham crackers, broken crosswise in half (24 squares)
2 cups thawed COOL WHIP Whipped Topping
2 chewy fruit snack rolls, any color
24 jelly beans

Steps:

  • Heat oven to 350ºF.
  • Prepare cake batter as directed on package. Blend in dry drink mix; spoon into 24 paper-lined muffin cups. Bake 20 to 25 min. or until toothpick inserted in centers comes out clean; cool completely. Meanwhile, spread 1 tsp. melted chocolate onto each graham square to completely cover top of graham; place in single layer on baking sheet. Refrigerate until firm.
  • Remove liners from cupcakes; place cupcakes upside-down on plate. Use wooden spoon handle to poke deep hole in center of each cupcake, being careful to not poke through to bottom of cupcake. Spoon COOL WHIP into resealable plastic bag. Cut small piece off one bottom corner of bag; use to pipe COOL WHIP into holes and onto tops of cupcakes, reserving small amount of COOL WHIP for later use. Top cupcakes with grahams, chocolate sides up, to resemble graduation caps.
  • Use fruit rolls to make tassels for caps. (See tip.) Add 1 tassel and jelly bean to top of each graham square, securing each with dab of remaining COOL WHIP.
