Grace Vegetable Oil
COATING:

Grace Caribbean Traditions Black Pepper
Grace Pimento, Ginger and Garlic Seasoning

SAUCE:
Grace Pineapple Juice
chicken stock*
ginger, grated
Grace Tomato Ketchup
Grace Pineapple slices, diced

Steps:

  • Clean chicken in a mixture of Grace White Vinegar and 4 cups water. Blend the next eight ingredients with the remaining 1 cup water. Pour the marinade over the chicken, rub in and leave chicken to marinate for 2 hours or overnight. Place chicken pieces along with the marinade in a heated heavy bottom skillet. Cover and simmer over medium heat for 30 minutes. Combine flour, baking powder, black pepper, Grace Pimento, Ginger and Garlic Seasoning and salt in a bowl and mix well. Remove skillet from flame; drain chicken pieces from the seasoned liquid and coat in the flour mixture. Heat Grace Vegetable Oil in a skillet and use to fry the coated chicken pieces until golden brown; drain on absorbent paper. Combine Grace Pineapple Juice, en-GBchicken stock, ginger, ketchup and the diced Grace Pineapple Slices in a saucepan over medium flame. Bring to a boil, lower flame and cook for about 15 minutes.To Serve: Drizzle pineapple sauce over the fried chicken and serve with boiled rice and a tossed vegetable salad.Recipe Note: en-GBChicken Stock: Boil 1 packet Grace Cock Soup Mix with 2 cups water for about 5 minutes. Strain and use as directed.

Mix 1/2 level cup of this blend with 2 cups unbleached breading flour for frying one fryer chicken or up to 16 drumsticks. Follow Recipe #393795 for brining, preparation and frying instructions.

2/3 cup nonfat dry milk powder
9 tablespoons fine sea salt
4 tablespoons egg white powder (cornstarch okay)
2 tablespoons Accent seasoning (optional)
1/2 tablespoon garlic powder
10 tablespoons ground peppercorns (6 Tbsps black, plus 4 tbsps white)
4 tablespoons dalmatian ground sage
3 tablespoons sweet paprika
2 tablespoons ground coriander
2 tablespoons ground ginger
1 tablespoon celery salt
1 tablespoon ground savory
1 1/2 teaspoons ground allspice
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground parsley
1 1/2 teaspoons ground vanilla beans

  • NOTES: FOR AUTHENTIC RESULTS, PREPARE RECIPE EXACTLY AS DIRECTED. MSG (ACCENT SEASONING) IS IN THE ACTUAL ORIGINAL RECIPE, BUT MAY BE OMITTED IF NECESSARY. EGG WHITE POWDER IS SOLD IN HEALTH FOOD STORES. YOU MAY SUBSTITUTE EGG WHITE POWDER WITH CORNSTARCH. FINELY GRIND REQUIRED HERBS AND SPICES SEPARATELY IN A CLEAN SPICE MILL OR COFFEE GRINDER. USE A PEPPER MILL TO MEDIUM-GRIND TELLICHERRY PEPPERCORNS. I RECOMMEND MCCORMICK BRAND TELLICHERRY BLACK PEPPER AND GROUND GINGER, SPICE ISLANDS BRAND GROUND SAGE AND CARDAMOM, SPICE APPEAL BRAND GROUND SAVORY, AND WILLIAMS-SONOMA BRAND GROUND TAHITIAN VANILLA BEAN.
  • MEASURE the BASE MIXTURE and 11 SECRET HERBS AND SPICES into a large re-sealable container (this includes the prepared BARBECUE SEASONING recipe).
  • BREAK up any clumps (and dry milk powder) using the back of a spoon.
  • SEAL the container.
  • SHAKE container to mix well.
  • STORE container sealed and store in a cool dry place.
  • WHEN ready to use, measure 1/2 level cup of this mixture plus 2 cups unbleached breading flour into a large re-sealable container.
  • SEAL the container with flour and seasoning; SHAKE well until thoroughly combined.

1 tsp sea salt flakes
1 tsp black pepper, freshly ground
1 tsp paprika
1 tsp garlic granules
1 tsp onion granules
1 tsp dried thyme
1 tsp dried oregano

Steps:

  • Measure out all the ingredients in a bowl and stir together well. They can also be lightly combined in a blender or crushed together using a pestle and mortar to create a finer powder, if you prefer. Sprinkle over chicken before baking, roasting or frying.
