SHARON'S JAMAICAN FRUIT CAKE
A dark, rich fruit cake for wine and fruit lovers! This is a recipe I use at Christmas and for Birthdays. I prefer to use Jamaican Red Label Wine and White Rum. But you may use your Favorites....ENJOY!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 9 inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in eggs, then add rum, lime juice, vanilla, almond extract, and lime zest. Stir in mixed fruit, wine, and molasses. Sift together flour, baking powder, nutmeg, allspice, cinnamon, and salt. Fold into batter, being careful not to over-mix. Pour into prepared pans.
- Bake in preheated oven for 80 to 90 minutes, or until a knife inserted into the center comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

MOIST CHRISTMAS CAKE (NO ADDED SUGAR OR FAT)
This recipe is really moist with a great flavour. Because of the natural sugars in fruit it is naturally sweetened. I have used this cake for all special occasions and everyone just loves it. Especially when they find out there is no added sugar or fat!

Steps:
- Line base and sides of 20cm squared cake tin with paper.
- Place mixed fruit, apricots, undrained pineapple, orange juice and spice in a saucepan.
- Bring slowly to boil, simmer uncovered 2-3 minutes, remove from heat.
- Cover and allow to cool.
- Stir egg yolks (optional) and soda into fruit mixture.
- Whip egg whites stiffly in large bowl.
- Fold in fruit mixture, then fold in flour, making a firm mixture.
- Spread into cake tin, bake in moderate oven (160c) for 1 1/2 hours.
- Cover the hot cake with foil and allow to cool in the pan.
- On special occasions, you may decorate the top with glace cherries and a few almonds.
- Take care- all nuts have a high fat content.
- The pineapple can be replaced by 3/4 cup water and 1 cup mashed pumpkin.
- or 3/4 cup water and 1 cup pureed pie apricots Add the pumpkin or apricots after the fruit mixture has cooled.
- The water is added to the dried fruit so it can be boiled.
RICH FRUIT CAKE

Steps:
- Cream Grace Hello Margarine and sugar until light and fluffy. Gradually beat in eggs one at a time. Stir in vanilla or almond flavouring. Combine flour, baking powder, breadcrumbs, mixed spice or nutmeg and mix well. Fold the flour mixture into the creamed mixture alternately with the Grace Browning, fruit wine, rum, soaked mixed fruits, cherries and crushed peanuts. Scrape batter into a greased and lined 325 cm (10 inch) baking tin. Bake for 1 1/2 hours at 180°C/350°F or until a skewer inserted comes out clean. Allow to cool.Note: Serve with Butter Brandy SauceYield: 12 slices
DIABETIC CHRISTMAS CAKE
I was looking for a recipe for my DH who adores his fruit cake. I found this on the A.B.C. and he loved it. Soaking time for the fruit is not included in the preparation time

Steps:
- Mix the sultanas, raisins, brandy and water, and then soak overnight.
- Mix seived pumpkin, eggs, apple concentrate and milk.
- Add the soaked fruit, nuts and spices, then sifted flour and bicarbonate of soda. Return bran left in sieve to flour mixture. Mix well with wooden spoon.
- Spoon into a lightly greased 20cm cake tin.
- Bake for 10 minutes at 200C, then turn down the heat and bake at 180C until cooked through and browned. (approx. 1-1/4 hours).
- Using the apple concentrate gives the sweetness to this cake.
