HOMEMADE MAC AND CHEESE
This is a nice rich mac and cheese. Serve with a salad for a great meatless dinner. Hope you enjoy it.

Steps:
- Cook macaroni according to the package directions. Drain.
- In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
- Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

SIMPLE MACARONI AND CHEESE
A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
- Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
- Fold macaroni into cheese sauce until coated.

Steps:
- 1. Preheat the oven to 350
- 2. Using a very large pot, bring salted water to a boil for macaroni. Boil for about 9-10 minutes. Do not overcook!
- 3. Turn off heat, drain macaroni and return to pot.
- 4. Add cheeses to macaroni
- 5. In a large bowl, whisk butter, sourcream, eggs, salt, pepper and milk until well combined.
- 6. Pour mixture into the pot with the cheese and macaroni. Mix well.
- 7. Spray a large roasting pan (I use the foil pan, since cleaning my own roasting pan is a pain and I'm lazy like that! lol)
- 8. Pour contents of pot into the roaster, even out with spoon.
- 9. Sprinkle extra cheese on top if you desire.
- 10. Bake for about 45-50 minutes, or until browning begins to occur on the top and sides.
- 11. Remove from oven..let stand for 10-15 minutes..ENJOY!
GQ - MAGNIFICENT MAC & CHEESE
Steps:
- Step 1 1. Heat oven to 375 degrees. Bring a large pot of salted water to a boil. Drizzle the oil into the boiling water, add the pasta, and cook according to package instructions. Drain well. Step 2 1. Meanwhile, heat the milk in a small saucepan, but do not allow it to boil. Melt 6 tablespoons of the butter in a large (4-quart) pot and add the flour all at once. Cook over low heat for 2 minutes, stirring with a whisk. Whisk in the hot milk and cook for a minute or two more, until thickened and smooth. Remove from heat and stir in the cheeses, salt, pepper, and nutmeg. Add the cooked pasta and stir well. Pour into a 9-by-13-inch baking dish. Step 3 1. Arrange the tomato slices on top. Melt the remaining 2 tablespoons of butter; toss with the fresh breadcrumbs to coat evenly, and sprinkle all over the top of the casserole. Bake for 30 to 35 minutes, or until the sauce is bubbly and the pasta is browned on top. Let rest 5 minutes before serving.
