RICE DRESSING
This came from the Justin Wilson Website. I only get to eat this when I'm going through LA on my way to see family in MS, so when I saw this I was overjoyed. Mostly posting this so I don't lose it!! :)

Steps:
- Preheat the oven to 350 degrees.
- In a large skillet over medium-high heat, sauté the onions, bell pepper, and parsley in the oil until the onions are clear.
- Then add the garlic and sauté another 5 minutes. Stir in the meat, making sure it mixes well with the vegetables, and cook until the meat is browned.
- Pour in the stock, taste for salt, then add the hot sauce and Worcestershire, and mix well.
- Stir in the rice, mix well, then pour into a small greased casserole dish and bake for 45 minutes.

CHEATER'S LOUISIANA DIRTY RICE OR RICE DRESSING
this recipe came from my aunt and it really does tastes almost like boudin, or homemade rice dressing. It usually disappears at potluck dinners. So easy and good!

Steps:
- combine all ingredients in a 9x13 pan, mixing well.
- Bake, covered, for 1 hour at 400 degrees. I sometimes stir mine midway through cooking since I can't seem to leave anything alone.

- In a large skillet, brown the sausage over medium heat until crumbly and cooked through, about 8 minutes. Remove from pan and drain excess grease.
- Add the celery, onion and green pepper to pan, cooking until softened but still crisp, about 3-4 minutes.
- Add the sausage back to pan along with chicken stock, salt, garlic powder, black pepper, bay leaf and poultry seasoning (or pinch of sage), if using. Stir and taste, adding additional salt if needed.
