- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Beat the egg and onion together in a mixing bowl. Add the turkey, Italian bread crumbs, liquid smoke, Worcestershire sauce, salt, and pepper. Mix until evenly combined and form into 4 patties. Press each patty into the panko crumbs and set aside.
- Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). While the burgers are cooking, brush the mushrooms with olive oil and cook on the grill along with the Canadian bacon. Just before the turkey burgers are done, top with the grilled Canadian bacon slices and the Gouda cheese. Cook until the cheese melts.
- Spread the hamburger buns with mustard and mayonnaise. Place a turkey burger onto each bottom bun and top with the portobello mushroom slices. Sandwich with the remaining bun halves and serve.

- Place turkey into a large bowl with egg, salt, pepper, parsley, poultry seasoning and milk. Stir to combine. {Mixture may seem a little wet, but once it starts cooking, the egg will help hold it's shape together.}
- Preheat indoor griddle to medium-medium high heat.
- Divide meat into 4 even patties. Cut butter into skinny half tablespoon pats. Press butter into the center of each patty forming the meat around it.

- Add all ingredients EXCEPT THE OLIVE OIL to a large bowl. Use your hands to combine ingredients.
- Form into four patties. If you're not grilling immediately place the patties on a plate and cover with plastic wrap in the refrigerator. (Ground turkey is very soft and it will firm up the refrigerator. Don't let it sit out any longer than necessary.)
- Heat the grill to medium-high heat.
- Brush olive oil on both sides of each burger. Gently place each patty on the grill.

- Use a spoon to scrape out the gills from the underside of the mushroom cap. Cut the cap into 1-inch pieces and transfer to a food processor. Add the shallot and parsley and pulse until chopped.
- Transfer the mushroom mixture to a large bowl. Add the turkey, olive oil, Worcestershire sauce, 1 teaspoon salt, and pepper to taste; gently mix with your hands until just combined. - Put oven rack in middle position and preheat oven to 350°F.
- Cook shallot in oil with salt and pepper in an 8-inch skillet over moderate heat, stirring occasionally, until golden, 2 to 3 minutes, then transfer to a bowl. Add turkey and mix gently but thoroughly.
- Turn out turkey mixture onto a sheet of wax paper and divide into 8 equal mounds. - Purée tomatoes with water, vinegar, and salt in a blender or mini food processor, scraping down sides as necessary, then blend in mayonnaise.
- Cut rolls in half horizontally (if necessary) and spread cut sides with tomato mayonnaise. Serve burgers on rolls with lettuce.
GOURMET MEXICAN TURKEY BURGERS

- If using corn tortillas, toast in pre-heated, 400-degree oven about 15 minutes before turning and toasting for 15 more minutes or until crunchy. Break tortillas into smaller pieces and add a few at a time to the food processor until all are ground to crumbs. Add these crumbs or crushed tortilla chip crumbs to turkey. Combine remaining ingredients, except for oil. Add that to turkey. Form turkey into flat patties that are a little thinner in the middle than on the sides.
