1/2 medium onion, sliced thinly
1/2 cup light sour cream
1/2 cup low fat Kraft mayonnaise
2 tablespoons dry sherry (optional)
4 teaspoon s fresh lemon juice
teaspoon 1/4 to 1/2 curry powder
1 1/4 pounds cod fillets

Steps:

  • 1. Preheat oven to 375°F. Cut cod into 4 portions. Coat a shallow baking dish with non stick cooking spray. Scatter onion over bottom of dish.
  • 2. Stir sour cream and remaining ingredients (except cod fillets) together in a bowl until smooth. Coat fillets with sour cream mixture. Put fillets on top of the onions and spread remaining sauce evenly over top of cod.
  • 3. Bake fish 20 to 30 minutes, depending on thickness, until center turns opaque. Garnish with thin slices of lemon and parsley.

4 tablespoons (divided) butter
1/2 package - 1/2 sleeve buttery round crackers (e. g. Ritz), crushed
1 pound thick-cut cod loin
1/4 cup dry white wine
1 tablespoon fresh parsley, chopped
1 tablespoon green onion, chopped
1/2 lemon, juiced
1 lemon, cut into wedges

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
  • Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
  • Coat both sides of cod in melted butter in the baking dish.
  • Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
  • Garnish baked cod with parsley and green onion. Serve with lemon wedges.
  • Note: Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
