Easy Gourmet Chicken Pizza image

This Balsamic Glazed Chicken Arugula Pizza recipe is made with a premade gourmet crust, baked chicken, fresh arugula, pancetta and finished with a balsamic glaze.

2 Table5 Four Cheese Pizzas
8 oz boneless chicken breast (chopped)
1/2 cup onion (diced)
3 oz pancetta (finely diced)
1 cup fresh arugula
1 tbsp extra virgin olive oil
balsamic glaze (for drizzling)
salt and fresh cracked pepper (to taste)

Steps:

  • Preheat oven to 425 degrees F.
  • While the oven is heating, chop the chicken breasts into small bite-size pieces.
  • Finely dice the onion and pancetta.
  • Heat the olive oil in a sauté pan over medium heat and add chicken.
  • Cook for 3-4 minutes, stirring often.
  • Add onions and pancetta to pan and cook for another 7 minutes or until onions are soft and chicken is done. Set aside and cover to keep warm.
  • Cook pizza for 12-15 minutes then top with arugula, chicken mixture, salt and pepper and drizzle with balsamic glaze.
  • Slice and enjoy!

1 cup warm water (110 degrees F/45 degrees C)
1 tablespoon honey
2 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
3 ½ tablespoons peanut butter
3 tablespoons brewed black tea
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons chili oil
1 tablespoon minced fresh ginger
2 teaspoons honey
1 boneless chicken breast half, cooked and sliced into thin strips
2 tablespoons toasted sesame seeds
1 tablespoon paprika
1 small fresh red chile pepper, finely chopped
1 teaspoon salt
4 green onions, sliced
1 cup grated mozzarella cheese
1 carrot, peeled and grated
¼ cup chopped fresh cilantro

Steps:

  • Pour warm water into a small bowl; stir in honey until dissolved. Add the yeast, stirring until dissolved. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine the flour and salt. Add yeast mixture and olive oil; stir well to combine. When the dough has pulled together, turn it out onto a lightly floured surface and knead in more flour until the dough is no longer sticky. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Punch down the risen dough on a floured surface. Divide into two equal portions. Allow the dough to relax for a minute, then roll each portion out into a thin circle. Place on lightly oiled pizza pans.
  • To make the peanut sauce, place peanut butter, tea, rice vinegar, and soy sauce in a blender. Add chili oil, ginger, and honey; process until smooth.
  • In a medium bowl, combine the chicken, sesame seeds, paprika, chile peppers, salt, and 3 tablespoons of the peanut sauce. Mix until the chicken is evenly coated. Spread the remaining peanut sauce evenly over pizza dough. Top with chicken, green onions, and cheese.
  • Bake in preheated oven for 20 minutes or until cheese is lightly browned. Garnish with carrots and cilantro.

1 cup warm water (110° to 115°)
2-3/4 cups bread flour
1 tablespoon plus 2 teaspoons olive oil, divided
1 tablespoon sugar
1-1/2 teaspoons salt, divided
1/2 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 small onion, halved and thinly sliced
1/2 each small green, sweet red and yellow peppers, julienned
1/2 cup sliced fresh mushrooms
3 tablespoons prepared pesto
1-1/2 cups shredded part-skim mozzarella cheese
1/4 teaspoon pepper

Steps:

  • In a large bowl, dissolve yeast in warm water. Beat in 1 cup flour, 1 tablespoon oil, sugar and 1 teaspoon salt. Add the remaining flour; beat until combined., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour., In a large nonstick skillet over medium heat, cook the chicken, onion, peppers and mushrooms in remaining oil until chicken is no longer pink and vegetables are tender. Remove from the heat; set aside. , Punch dough down; roll into a 15-in. circle. Transfer to a 14-in. pizza pan. Build up edges slightly. Spread with pesto. Top with chicken mixture and cheese. 1 (10 ounce) can refrigerated pizza crust
½ cup Ranch-style salad dressing
1 cup shredded mozzarella cheese
1 cup shredded Cheddar cheese
1 cup chopped tomatoes
¼ cup chopped green onions

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a pizza pan or medium baking sheet.
  • Place chicken in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear. Cool, then either shred or chop into small pieces.
  • Unroll dough, and press into the prepared pizza pan or baking sheet. Bake crust for 7 minutes in the preheated oven, or until it begins to turn golden brown. Remove from oven.
  • Spread ranch dressing over partially baked crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Return to the oven for 20 to 25 minutes, until cheese is melted and bubbly.

1 cup prepared pizza sauce
1 cup prepared barbecue sauce
2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/2 cup shredded gouda cheese
1 thawed chicken breast
1/2 cup barbecue sauce
1 teaspoon garlic salt
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon dried basil
1 scallion, thinly chopped
1 tablespoon olive oil
1/2 red onion, sliced thin

Steps:

  • Dice chicken breast into bite size pieces.
  • Heat sauce pan on medium heat, add olive oil. Add chicken, salt, pepper and basil. Heat till cooked through.
  • Remove chicken from pan. Add 1/2 cup BBQ sauce and mix till all chicken is evenly coated.
  • Combine 1 cup BBQ sauce and 1 cup pizza sauce. Spread over pizza crust evenly.
  • Spread 2 cups Mozzerella Cheese even over sauce. Next evenly distribute the diced Chicken, Scallions and Red Onions over the Mozzarella. Finally top with Cheddar and Gouda cheese.
  • Sprinkle the Garlic Salt over the pizza and drizzle BBQ Sauce over the top. Cook in the oven at 400 degrees for 15 minutes or till cheese is golden.

  • 1. Marinate cut up chicken in above ingredients in a Ziploc bag for 8 hours or overnight. 2. Place chicken on pizza dough. 3. Thicken marinade with starch and pour over chicken and crust. 4. Top with provolone and mozzarella. 5. Bake in 400 degree oven for 12 minutes 6. Top with chopped green onions and pine nuts and bake 2 more minutes

  • Cut the chicken into 1-inch cubes. Heat a large cast-iron skillet over high heat until hot. Add 1 tablespoon of Avocado oil and turn down the heat to medium-high. Quickly cook the chicken for a total of about 4 minutes. Turn them every minute or so. Remove from the skillet and set aside for later.
  • In the same skillet turn the heat to high. When hot, add olive oil to coat the bottom of the pan and add your sliced onions. Stir well to coat the onions and turn the heat down to medium and cook for 10 minutes, stirring frequently as not to burn.
  • Add a pinch of salt and turn the heat down to medium-low and continue cooking for about 20 more minutes, stirring occasionally, until the onions are soft and nicely browned.
  • While the onions are cooking, preheat the oven to its hottest setting – 550°F is preferred (or as hot as your oven will go) and place a pizza stone in the oven to preheat as well.
