APPLE GORGONZOLA FRITTATA
"After a few chilly days hiking in the Adirondack Mountains, I got the idea for this recipe at a nearby diner, where they served an apple omelet. I added my own touches, and this is the result," writes Harry Renninger of Laplata, Maryland.

- In a small bowl, whisk the eggs, cream, salt and pepper; set aside. In another bowl, toss apple with lemon juice; set aside. , In a 7-in. ovenproof skillet, saute onion and celery in oil until tender. Add garlic; cook 1 minute longer. Discard garlic. , Reduce heat. Add egg mixture to skillet; sprinkle with apple and cheese. Cover and cook for 4-6 minutes or until eggs are nearly set., Uncover; broil 3-4 in. from the heat for 2-3 minutes or until eggs are completely set. Let stand for 5 minutes before cutting.

Steps:
- Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.
- Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
- Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.)
- Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
- Top with tomato and onions. Cut into 8 wedges to serve.

HERBED GORGONZOLA MUSHROOM FRITTATA

- Position a rack 6 inches below a broiler's heating element, and preheat.
- Heat a large heatproof nonstick skillet over medium-high heat, add the olive oil. Add the mushrooms, tossing briefly, and then cook until browned, about 12 to 15 minutes. Toss in the scallions once the mushrooms begin to brown, about 2/3 of the way of cooking. Stir in 1 cup parsley and tarragon.
- Meanwhile, whisk the eggs with the mushroom broth and season with salt and pepper. Sprinkle in gorgonzola and stir gently to combine.
- Reduce heat to medium and pour the eggs into the skillet, stirring gently so that the mushrooms and herbs are evenly distributed. Continue cooking and gently stirring until the eggs begin to set, about 4 minutes.
- Place skillet under the broiler and cook until the frittata is set, about 3 to 4 minutes. Slide frittata out of skillet if desired, sprinkle with remaining tablespoon parsley, and cut into wedges.

SPINACH GORGONZOLA FRITTATA BREAKFAST BISCUITS
These breakfast biscuits were a big hit at a brunch meeting. Great to keep in your freezer for a quick breakfast. Cheaper than the drive thru and tastes soooo much better!

Steps:
- Preheat oven to 350.
- Spray 12 muffin tin with olive oil spray.
- Beat together the eggs and milk.
- Add spinach, gorgonzola and grated parmesan, mix well.
- Add salt and pepper to taste.
- Evenly portion the egg mixture into the 12 cups of the muffin tin.
- Bake at 350 for 20-30 minutes, just until the tops begin to brown.
- Remove each mini frittata from muffin tin and top with a slice of cheese. The heat will melt the cheese.
- Slice open biscuits and place one mini frittata inside each biscuit.
- Serve warm.
- To freeze: Allow them to cool completely and wrap individually in plastic wrap, then in foil. Freeze.
- To reheat: Remove foil and microwave 1-2 minutes on high (depending on the power of your microwave).
- Variation: Omit the spinach and gorgonzola, add crumbled, cooked sausage to each muffin tin before adding egg mixture.
