Gorgonzola Herb Dressing image

This recipe is from the February 2001 issue of Gourmet Magazine. Use this as a salad dressing or a dip for veggies or chicken wings. This dressing keeps for 5 days, covered and chilled. Stir before using.

1/3 cup fresh Italian parsley
1/3 cup gorgonzola
1/3 cup sour cream
1/3 cup mayonnaise
1/3 cup buttermilk, well shaken
1 tablespoon white vinegar
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh chives, finely chopped

Steps:

  • Blend parsley, cheese, sour cream and mayonnaise in a food prcessor until smooth. Blend in buttermilk, vinegar, salt and pepper. Transfer the dressing to a bowl and stir in the chives.

2 teaspoons apple cider vinegar
1 teaspoon balsamic vinegar
1/3 cup plain yogurt
1/3 cup sour cream
1 1/4 cups gorgonzola, crumbled
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • In a medium bowl, whisk together the vinegars, yogurt, and sour cream until smooth. Stir in the crumbled cheese, salt, and pepper. Chill for several hours before serving.
