This Gorgonzola Dipping Sauce recipe is similar to Blue Cheese dressing, but I think even better. This is great with Italian-Style Chicken Wings, as well as veggies and grilled meats. Awesome!

- Combine all the ingredients in a medium-sized bowl and mix them well.
- Cover with plastic wrap and refrigerate for at least 1 hour. (Can be made several days in advance of serving).

- In a small saucepan over low heat, combine the butter, Gorgonzola cheese, green onion, garlic and pepper. Warm slowly for about 5 minutes, shaking the pan occasionally until the sauce is nice and creamy. This sauce may also be cooked on a cool part of your grill while grilling meat.

GORGONZOLA DIPPING SAUCE
You can use this yummy sauce for dipping garlic bread, celery sticks, carrots, peppers, cucumbers and anything else you can think of dipping. I have also served this with little chicken skewers as a great appetizer.

Steps:
- Make roux first by melting butter in a small saucepan. Slowly add flour and cook, stirring constantly, until mixture has browned. Set aside to chill.
- In medium saucepan, heat oil. Add garlic and sauté a minute or two. Add milk and cream and bring to a boil. Reduce heat and simmer 10 minutes, then add cheeses and pepper.
- Cook about 15 minutes until cheeses are completely melted, stirring constantly.
- Add roux in small portions, mixing well after each addition so that roux is incorporated.
- Continue adding portions of roux until mixture is the consistency of melted chocolate. Add salt to taste.
- Serve with toasted garlic breadsticks and veggies of choice.

SAKE GORGONZOLA SAUCE RECIPE

- Combine the sake, butter, and garlic into a saucepan over medium heat.
- Cook and stir for 3 minutes, until the mixture has thickened and reduced in volume by one half.
- Add the cream to the sake mixture, then stir for 3 minutes, until reduced by one fourth.
- Season with basil, parsley, salt, and pepper.
- Stir the gorgonzola cheese and parmesan cheese slowly into the sake mixture.
- Simmer and stir continuously for 3 minutes, until smooth.
- Simmer for 5 more minutes, until the flavors have combined.
- Serve over pasta, and enjoy!

- In a food processor, place low-fat mayonnaise, low-fat sour cream, Gorgonzola cheese, dill, garlic, salt and pepper. Blend until smooth. Sprinkle gelatin into mixture. Allow it to soften for approximately 5 minutes. Blend to mix in gelatin. Cover and chill in the refrigerator until serving.

GORGONZOLA SAUCE
Steps:
- Bring the heavy cream to a full boil in a medium saucepan over medium-high heat, then continue to boil rapidly for 45 to 50 minutes, until thickened like a white sauce, stirring occasionally.
- Off the heat, add the Gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt and serve warm. If you must reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.
GORGONZOLA SAUCE
Serve over fresh or dried fettuccine, rigatoni or penne. For 20 ounces of pasta. Can also be used as a dipping sauce with crudités, if kept over a warm flame. Have the cheese, and other ingredients at room temperature 2 hours before cooking.

- Trim any rind from the cheese. Put into a 4 - 6 cup saucepan with the milk and the butter. Warm gently.
- Break up any bits of Gorgonzola until it has dissolved. Simmer for just a moment. Remove from heat.
- Cook pasta. Drain.
- When pasta is nearly done, return sauce to stove. Add cream, and a little salt and pepper. Turn the heat to medium high, and stirring all the while, reduce a little, like for Alfredo sauce. Stir in the Parmesan cheese. Toss with pasta in a heated dish, or in pasta pan, and serve in warm bowls with more grated cheese along side and a pepper mill.

CREAMY GORGONZOLA DIPPING SAUCE
This paired well with my asperagus appetizer, but you can dip just about anything in it. Blue cheese can be used for this as well. Blue cheese is sharper than Gorgonzola , so the flavor will be more intense. For very mild cheese flavor you could try some crumbled feta. It is delicious no matter what crumbly cheese you try.

- In a large saucepan start by melting the butter on medium heat. When fully melted add the minced garlic. Once fragrant (but not burnt) pour in the Heavy Cream and turn the heat up high. Make sure to whisk the cream so it does not burn, and to also incorporate the melted butter.
