CHICKEN GORGONZOLA

Chicken Gorgonzola image

Chicken breasts are sauteed to a golden brown then topped with a rich, savory Gorgonzola sauce. Serve with steamed green beans and fresh crusty bread if you are looking for a winner to impress your dinner guests. This dish is so decadent it tastes exactly as though you ordered it at a fine Italian restaurant, but the secret is how simple it actually is to make! This sauce is also a wonderful accompaniment to pork chops, ravioli, or whatever strikes your fancy! It is very versatile, so the possibilities are endless!

Yield 4

Number Of Ingredients 17

1 cup fresh basil leaves
2 ½ tablespoons extra-virgin olive oil
2 ½ tablespoons chopped walnuts
2 ½ tablespoons grated Parmesan cheese
3 cloves garlic, peeled
1 tablespoon extra-virgin olive oil
4 boneless, skinless chicken breasts
1 cup sliced baby bella mushrooms
½ cup thinly sliced onion
2 cloves garlic, minced
½ cup Gorgonzola cheese, divided
¼ cup white wine
½ lemon, juiced
2 tablespoons chicken broth
1 teaspoon brown sugar
salt and ground black pepper to taste
2 tomatoes, seeded and chopped

Steps:

  • Combine basil leaves, 2 1/2 tablespoons olive oil, walnuts, Parmesan cheese, and garlic in a food processor; process until pesto is smooth.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken until golden brown, about 5 minutes per side. Transfer to serving platter.
  • Cook and stir mushrooms in a single layer in the same skillet until tender, about 5 minutes. Add onion; cook until translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add half of the Gorgonzola cheese; cook until slightly melted. Pour in wine and stir to scrape up brown bits from the bottom of the skillet. • Serve each chicken breast on a plate topped with sauce.

CREAMY ONE POT CHICKEN AND ORZO RISOTTO WITH BACON

Creamy One Pot Chicken and Orzo Risotto with Bacon image

Creamy One Pot Chicken and Orzo "Risotto" with Bacon is an easy, comforting and soul-satisfying dinner that's also super versatile!

Provided by By: Carol | From A Chef's Kitchen

Categories     Pizza and Pasta

Time 45m

Number Of Ingredients 11

8 slices bacon (halved and sliced lengthwise to make 16 mini strips)
2 tablespoons unsalted butter
1 small onion (finely chopped (approximately 1 cup))
½ teaspoon salt
4 cloves garlic (minced)
1 heaping cup dried orzo pasta
2-3 cups chicken broth (or as needed)
¼ cup heavy cream (or whipping cream)
½ cup grated Asiago cheese (or Parmesan or Romano cheese, plus more for serving)
2 cups diced cooked chicken
Chopped fresh parsley (optional)

Steps:

  • Place the bacon in a high-sided skillet or sauté pan. Heat to medium-high. When the bacon begins to cook, reduce heat to medium and brown until crisp. Transfer to a paper towel-lined plate. When cool to the touch, crumble half the bacon leaving the remaining mini strips for garnish.
  • Save 1 tablespoon of the bacon fat in the pan and discard the rest.
  • Add the butter to the bacon fat in the pan over medium-high heat. Add the onion and salt. Reduce heat to medium-low and cook 8 - 10 minutes or until onion is very soft. (The salt is going to help sweat and soften the onion and keep it from browning.)
  • Add the garlic and cook briefly until fragrant (15 seconds). Add the orzo and stir 1 - 2 minutes or until it turns golden in color.
  • Slowly add 2 cups of the chicken broth. Bring to a boil then reduce heat to medium low. Simmer uncovered for 12 - 15 minutes or until the pasta is al dente and much of the liquid has been absorbed. (If necessary, add additional broth to keep it from becoming dry.)
  • Stir in the cream, cheese and chicken. Continue to stir until the cheese has melted and the chicken is heated through. Stir in the crumbled bacon. Season to taste with salt if desired.
  • Serve in bowls with additional cheese if desired. Garnish with chopped fresh parsley if desired and reserved bacon strips.

GORGONZOLA, LEEK AND WALNUT ORZOTTO

Gorgonzola, leek and walnut orzotto image

Orzo replaces rice in this cheesy risotto-style recipe. Less stirring is required making it quick and easy to make - ready to serve in 30 minutes it's perfect for any day of the week.

Provided by delicious. magazine

Categories     Delicious recipes for one person

Time 30m

Yield Serves 2 as a main, 4 as a starter

Number Of Ingredients 10

Handful walnut pieces
Knob of butter
1 onion, finely chopped
2 leeks, trimmed and finely sliced
160g orzo
200ml dry white wine, plus an extra splash
500ml fresh chicken stock, kept hot on the hob, plus 1-2 ladles boiling water (optional)
Handful fresh parsley, quite finely chopped
85g gorgonzola dolce, crumbled
Juice ½ lemon

Steps:

  • Heat the oven to 180°C/160°C fan/gas 4. Put the walnuts in a baking tray, then toast in the oven for 8-10 minutes until fragrant. Chop, then set aside. Turn off the oven.
  • Melt the butter in a large frying pan over a medium-high heat. Once sizzling, add the onion with some salt and cook for 5-6 minutes. Add the leeks and cook for 5 minutes or until softened, then add the orzo and stir to coat in the butter. Turn up the heat, pour in the 200ml wine and bubble until almost completely evaporated.
  • Pour in the hot stock, 2 ladles at a time. Once the liquid is almost gone, add more. There's no need to stir as much as with a rice risotto - the odd turn will do. Keep adding the stock this way until you run out. If the orzo needs more liquid to cook, add a couple of ladles of boiling water.
  • Once the orzo is just cooked and the sauce is creamy, stir in most of the walnuts and parsley, and all the gorgonzola and lemon juice, plus an extra splash of wine. Taste, season, divide among plates and top with the remaining nuts and parsley. Serve.
