- In a large saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Add cheeses; stir until melted., Place vegetables in a 2-qt. baking dish coated with cooking spray; sprinkle with ham. Pour sauce over ham. Place bread crumbs in a small bowl; spray with butter-flavored spray. Sprinkle around the edge of casserole. , Bake, uncovered, at 350° for 25-30 minutes or until heated through and bubbly.

Notes: Denise Marshall elevates classic broccoli in cheese sauce by using gorgonzola. You can prepare the casserole through step 3 up to 1 day ahead; cover and chill. Uncover and continue with step 4.

- Preheat oven to 350°. In a 5- to 6-quart pan over high heat, bring about 3 quarts water to a boil. Rinse broccoli and trim off and discard tough stem ends; if skin on stalks is tough, peel stalks. Cut broccoli into 1-inch pieces. Add to boiling water and cook just until barely tender when pierced, 3 to 5 minutes. Drain.
- Rinse and dry pan. Add 1/4 cup butter to pan and melt over medium heat. Stir in flour and salt until smoothly blended; cook until bubbly, about 1 minute. Add milk and stir over medium-high heat until mixture is boiling and thickened, about 3 minutes. Add cream cheese and gorgonzola; whisk until smoothly blended. Stir in broccoli. Pour into a shallow 2 1/2- to 3-quart casserole.
- In a blender or food processor, whirl bread cubes into coarse crumbs; you should have about 1 1/3 cups. In a small bowl, mix crumbs with 1 tablespoon melted butter. Sprinkle evenly over broccoli mixture.
- Bake until casserole is hot in the center and crumbs are golden, 20 to 30 minutes.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine 1/2 the mushroom soup and an equal amount of water in a saucepan over medium heat. Add chicken. Bring to a simmer and cook until chicken is no longer pink in the center, 3 to 5 minutes.
- Heat 1 frozen, unopened bag of cauliflower and broccoli mix in the microwave until hot, 4 to 6 minutes. Let stand about 2 minutes; open bag and transfer vegetables to a bowl. Repeat with remaining bag.
- Melt butter in a saucepan over medium heat. Add milk and salt; stir in remaining cream of mushroom soup. Add flour slowly, stirring constantly with a whisk to prevent lumps. Add Cheddar cheese. Cook and stir until cheese sauce is thick, 5 to 7 minutes. Add garlic powder.
- Layer half the cooked vegetables into the bottom of a baking pan or casserole dish. Add half of the cooked chicken. Pour in half the cheese sauce. Add a light layer of bread crumbs. Add remaining vegetables, remaining chicken, and remaining cheese sauce. Top with a light layer of bread crumbs. Cover pan with aluminum foil.
- Bake in the preheated oven until bubbling, 20 to 30 minutes.

- Preheat the oven at 170°C.
- Clean and cook the cauliflower florets in salted water with the lemon juice, until done.
- Mix the gorgonzola with the mascarpone.
- Melt 30 g butter in a pan, add flour. Mix and add the milk.
- Mix in the cheese as soon as the mixture starts to cook.
- Keep stirring over low heat with a wooden spoon, until thickened.
- Add salt, pepper and nutmeg to taste.
- Fry the garlic with the 10 g of butter and the olive oil, add the cauliflower and bake for 3-4 minute Pepper and salt to taste.
- Put the cauliflower in an ovenproof dish, put sauce on top and bake 15 minute in the oven until it starts to brown.

- Preheat oven to 350 degrees F (175 degrees C).
- Put broccoli and cauliflower in separate saucepans and pour enough water into the saucepans to cover the vegetables completely; bring each to a boil and cook until tender, 3 to 4 minutes. Drain each and mix in a 11x7-inch baking dish.
- Beat eggs in a bowl until creamy. Mix mayonnaise, onion, and 1/2 cup Cheddar cheese into the eggs; pour over the vegetables. Pour melted butter over the broccoli mixture and top with the remaining Cheddar cheese. Sprinkle croutons over the entire dish.

- Preheat oven to 375º.
- Clean cauliflower and separate into florets.
- Bring large pot of water to a boil and cook florets for about 10 minutes or until just cooked but not soft. Rinse florets in colander under cold water to stop the cooking process. Pour evenly into shallow into baking dish and set aside.
- Over high heat in medium sauté pan add butter and onions. Cook for about 3-5 minutes to soften and color onions.
- Add milk and flour and whisk to blend. Cook until bubbling nicely, then add gorgonzola and blend in until smooth.
- Pour evenly over cauliflower in baking dish. Sprinkle with chopped walnuts, bread crumbs, salt and pepper.
- Place in oven for 15-20 minutes, or until bubbly and golden brown. Garnish with chopped parsley and serve.

- 1. Thaw Frozen Broccoli and cauliflower. Drain any water that comes out of it.Put in a Casserole dish. Sprinkle seasoning salt on top of broccoli and cauliflower. Top with the cheese.
- 2. Put crushed Cornflakes on top .
- 3. Melt stick of Butter or Margarine and Pour over top of cornflakes. Cover with Aluminum Foil.

This is a great side dish & it has become a holiday tradition in my family. It is a perfect match with a prime rib meal. This dish can easily be converted to a main dish by adding fettuccine & beef medallions. Also quite good with shrimp.

- 1. Using a a medium size sauce pan, melt butter on medium-low heat. Add garlic & saute, stirring frequently. Add flour to create a roux & continue stirring until golden in color.
- 2. Using a whisk, stir in cream & blend until smooth. Add fresh grated nutmeg & cracked pepper. Increase heat to boil, whisking sauce until completely free of lumps & sauce is velvety smooth. Reduce heat to a simmer, allowing sauce to thicken while stirring. Remove pan from heat, add gorgonzola & continue whisking until the sauce is creamy smooth.
- 3. Stir in steamed broccoli florets, making sure to coat evenly. Salt to taste. Serve immediately while hot. ENJOY!
