Steps:
- Combine the lard, suet and water into the strong flour, along with the salt and pepper
- Work with your hands for a few minutes, turn out onto a work surface when it looks shaggy, and continue to knead (like bread dough for 5 minutes) until you have a firm springy dough, wrap in cling film and refrigerate while you prepare the filling, if the dough will not form keep working with damp hands it will get there.
- Dice all of the vegetables to around 1cm, chop the herbs and mix in a bowl.
- Now dice the skirt, it has a very obvious grain, first cut into large batons with the grain about 1 1/2 inch thickness. Turn 90 degrees and slice 1/2 cm approx against the grain
- Season well and thoroughly mix
- Cut chilled dough into 4, keep the dough covered with cling film while not in use, form 1 piece into a ball and then flatten with your hand to form a round disc.
- Roll the pastry to the size of a large dinner plate, 10 - 12 inches, you do not need flour for this. Arrange 1/4 of the filling just below the centre.
- Place a small slice of butter on top of the filling (opt) I have a fetish for butter and think its makes everything better, it will create a little extra steam inside while baking. Lift the far side over the filling and form a semi circle
- Firmly press the edges together (no water or egg required) and then crimp, have fun with this and don't obsess about perfection. Use 1 finger on 1 hand to hold the dough down and 1 finger of the other hand to fold and press the pastry over. Tuck the edges under
- Firmly press the pasty into shape, pierce a small hole to allow steam to vent and arrange all four on baking sheets lined with baking parchment. Brush well with beaten egg, sprinkle with sea salt or seeds before baking
- Bake at 170c for 1 hour 15 mins, you can't eat them until they've cooled down, they are best eaten warm or room temp with loads of ketchup, the last image is of me looking very pleased with my pasties. - For the pastry: Sift the flour, confectioners' sugar, and salt into a mixing bowl and add the butter and lard. Using your fingers, 2 knives, or a pastry blender, cut the butter and lard into the dry ingredients until mixture resembles fine crumbs. In a small bowl, whisk the egg yolk and water together and add to the flour mixture. Mix quickly, but thoroughly, until mixture just comes together to form a dough. Knead briefly until pastry is smooth with no cracks; the trick to making this delicate pastry easy to work with is kneading it just enough so that it can be rolled out and manipulated without breaking but yet retains its lovely crumbly texture. Press into a flattened disk shape and wrap in plastic. Refrigerate for at least 30 minutes and up to overnight before proceeding.
- Remove the pastry from the refrigerator and unwrap. Allow to soften slightly, then place on a lightly floured work surface and roll the pastry to a thickness of 1/4-inch. Using a small plate or saucer as a guide, cut out 6 (6-inch) rounds. (Scraps may be combined and reformed if you cannot get 6 rounds out of the first batch.) Stack the pastry rounds onto pieces of plastic wrap or parchment paper (with pieces between each round to keep them from sticking together) and refrigerate while you prepare the filling.
- For the filling: Preheat the oven to 400 degrees F.
- Remove the pastry circles from the refrigerator. In a mixing bowl, combine the meat, onion, carrot, potato, salt and pepper and mix until thoroughly combined. Place the pastry circles on a clean work surface and place about 1/2 cup of the filling in the center of 1 side of the pastry. Using the beaten egg, brush the edges of the pastry and then bring the unfilled side over the filled side so that edges meet. Press edges together to seal and then crimp using your fingers or a fork. Repeat with the remaining turnovers and then transfer to a baking sheet. Brush the tops of the turnovers with the remaining egg and then cut several slits into the top of each pastry. Bake for 20 minutes, or until pastry is golden brown around the edges. Reduce the heat to 350 degrees F and continue to bake until the pasties are golden brown. Remove from the oven and allow to cool for 10 to 15 minutes before serving.
GORDON RAMSAY'S CORNISH PASTIES
Adapted from Gordon Ramsay's Great British Pub Food, these pasties largely resemble the original Cornish pasties, but with a little twist - the recipe uses different cuts of beef, namely rump or sirloin, while the meat and vegetables are precooked to add more flavor.

- Combine flour, salt, and butter until they resemble coarse breadcrumbs, then add 9 tbsp of water to form the dough-add more if needed. Knead the dough for a few minutes, then form into a ball, cover with cling film and leave to rest in the fridge for at least 30 minutes.
- Cut the vegetables and meat into equal, 1 cm pieces, and season with salt and pepper. Sauté the meat in the mixture of 1 tbsp olive oil and 10 g butter for 1-2 minutes, then transfer to a plate.
- In the same pan, add the rest of the butter and fry the vegetables for 5-7 minutes until slightly golden. Add the juices from the beef and cook till the vegetables are tender, then combine with the beef and leave to cool.
- Preheat the oven to 220°C. Make four equal pieces of dough and roll out each one to a 3-4 mm thick circle; trim each to 25 cm in diameter - help yourself with a dinner plate to measure that out. Evenly divide vegetables and meat onto each one and sprinkle with salt and pepper once more.
- Cover the edges of the pastry with the beaten egg, then fold in half and crimp the edges to prevent the filling from leaking. Place the pasties onto a large baking sheet and brush them with the beaten egg, transfer in a preheated oven and bake. After 10 minutes, lower the temperature to 180 °C and bake for another 20-25 minutes. Cover with greaseproof paper if the pasties start to get overly brown.
