GOOSEBERRY DESSERT

Betty Janzen CLEMSON, SOUTH CAROLINA A Mennonite friend gave me this delicious recipe when I first got married. Most of u s grow our own gooseberries here in South Carolina, and I enjoy trying a variety of dishes and desserts with them.

1-1/2 cups all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup cold butter, cubed
1 egg
1/4 cup milk
FILLING:
1 cup sugar
2 tablespoons quick-cooking tapioca
2 cans (15 ounces each) gooseberries, drained
TOPPING:
1 tablespoon milk
3 tablespoons sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt; cut in the butter until crumbly. In a small bowl, whisk egg and milk. Gradually add to flour mixture, tossing with a fork until dough forms a ball. Cover and refrigerate for 20 minutes or until easy to handle., For filling, in a large bowl, combine sugar and tapioca. Gently stir in gooseberries; let stand for 15 minutes. Divide dough in half. Roll out each portion to an 8-in. square. Place one portion in the bottom a greased 8-in. square baking dish. Top with filling and remaining pastry., Cut slits in pastry; brush with milk. Combine sugar and cinnamon; sprinkle over the top. Bake at 375° for 30-35 minutes or until lightly browned. Serve warm.

Looking for a tasty gooseberry recipe? This is it! Juicy, tart gooseberries with a buttery, crispy topping makes this gooseberry crumble an easy dessert that will disappear fast! Enjoy with ice cream or as is!

Number Of Ingredients 12

Baking spray or butter (to grease baking dish)
5 cups gooseberries (cleaned of debris and tough ends removed (top and tail), about 1 3/4 pounds)
1/4 cup sugar (use a little more (another 1/4 cup or so) if you like things sweeter or if your berries are on the tart side)
1 tablespoon lemon zest or orange zest
2 tablespoons lemon juice or orange juice
1.5 tablespoons cornstarch
2/3 cup all-purpose flour
1/3 cup brown sugar
1/4 teaspoon ground cinnamon
pinch ground nutmeg
pinch salt
1/3 cup cold unsalted butter (shredded or cubed (5 tablespoons))

Steps:

  • Grease a 9 to 10-inch round baking dish (or similarly sized baking dish) with baking spray or grease with butter and set aside.
  • To a bowl, add gooseberries, sugar, zest, juice and cornstarch, stirring to combine until there are no streaks or big clumps of cornstarch remaining. Pour into prepared baking dish. Set aside.Note: One of the great things about crumbles, is the berry syrup at the bottom of the dish after it has baked. It's delicious spooned over the crumble and ice cream. If, however, you want things more set/less juice, you can add a little more cornstarch, about another 1/2 tablespoon or so.
  • To make crumble, in a bowl, whisk together the flour, sugar, cinnamon, nutmeg and salt.
  • Add cold butter to the crumble. Use a pastry cutter (or two knives) to cut butter into the flour mixture until you have coarse crumbles and some buttery clumps. Set aside.
  • Preheat oven to 350 degrees Fahrenheit.
  • Sprinkle crumble topping over the gooseberry filling. Place the dish on a baking tray to catch any spills that may happen (makes for easier cleanup). Bake for 50 minutes or until bubbly and the top is golden brown and crispy.
  • Carefully remove from the oven and allow to cool for 30 minutes or so before serving. This allows the crumble to set up and cool down.
  • Serve as is or with ice cream. Drizzle the gooseberry juices/syrup over top for an extra punch of flavour!

GOOSEBERRY CAKE

Make the most of British summer berries in this fruity gooseberry cake, lifted with a sweet elderflower drizzle

300g gooseberries, fresh or frozen, topped and tailed
325g caster sugar
200g plain flour
2 tsp baking powder
100g ground almonds
4 tbsp elderflower cordial
100ml natural yogurt, plus extra to serve
4 eggs
1 tsp vanilla extract
150ml olive oil
to serve greek yogurt or crème fraîche
50g caster sugar
3 tbsp elderflower cordial

Steps:

  • To make the elderflower syrup, put the sugar and 75ml water in a pan. Slowly bring to the boil then simmer for 5 minutes until thickened slightly. Stir in the cordial and cool.
  • Toss the gooseberries with 50g of the caster sugar and leave to sit while you make the cake.
  • Heat the oven to 180C/fan 160C/gas 4 and line the base and sides of a deep 23cm springform cake tin with baking paper. Mix together the flour, baking powder, ground almonds and a pinch of salt in a bowl.
  • In a separate bowl, whisk together the rest of the caster sugar, elderflower cordial, yogurt, eggs and vanilla extract. Gradually whisk in the dry ingredients to form a smooth batter. Fold in the olive oil.
  • Scrape the batter into the prepared tin then spoon the sugary gooseberries all over the top, pressing gently to submerge. Bake for 1 hour (covering with foil after 40 minutes to avoid it getting too dark) until golden and risen, and a skewer pushed into the centre comes out clean. Skewer the cake all over while still warm and spoon over 5 tbsp of the elderflower syrup. Cool in the tin until just warm then serve with greek yogurt or crème fraîche and the rest of the syrup.

Gooseberry's are only in season for a few weeks each year but the freeze well. I got the original recipe from a friend in the Republic of Panama about 27 years ago and Have done some tweeking for my families tastes. My son LOVES these bars.

CRUST:
2 c all-purpose flour
1 c brown sugar
1 c butter, cold
TOPPING:
2 eggs
1 c brown sugar, firmly packed
1 1/4 c all purpose flour
1/2 tsp baking powder
1/2 tsp salt
2 c gooseberries cooked ( i cook mine with 1 tbsp sugar per 1/2 cup berries and a little water for 10-15 minutes then hit with imersion blender till well blended.)
3/4 c honey

Steps:

  • 1. CRUST: Blend together butter flour and brown sugar with pastry blender until crumbly and well blended. Press into pan and bake at 350 degrees for 20 minutes.
  • 2. TOPPING: Beat eggs and brown sugar until fluffy. Add baking powder and salt to flour; blend into egg mixture. Stir in gooseberries. Spread over baked crust. Bake for 20-25 minutes.
  • 3. Cool on cooling rack and cut into bars.

GOOSEBERRY & ALMOND STREUSEL SQUARES

250g chilled butter , chopped
250g self-raising flour
125g ground almonds
125g light muscovado sugar
350g gooseberries , fresh or frozen
85g caster sugar , plus extra
50g flaked almonds

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 27 x 18cm baking tin with baking parchment.
  • Rub the butter into the flour, almonds and sugar to make crumbs, then firmly press two-thirds onto the base and sides of the tin. Toss the gooseberries with the caster sugar, then scatter over the top.
  • Mix the flaked almonds into the remaining crumbs, then scatter over the gooseberries. Bake for 50 mins-1 hr until golden and the fruit is bubbling a little around the edges. Dredge with caster sugar, then cool in the tin. Cut into about 8 squares and enjoy with a cup of tea or serve as a pudding with custard or cream.

I don't have access to fresh gooseberries, so I rely on Oregon Fruit Products Co for its canned berries! The original of this recipe was found on their website, www.oregonfruits.com! Preparation time does not include the time needed for the finished bars to cool.

1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, cold & cut into 8 pieces
3/4 cup pecans, finely chopped
1 (15 ounce) can gooseberries
1 cup granulated sugar
1 1/2 tablespoons cornstarch

Steps:

  • Preheat oven to 350 degrees F & set out a 9-inch square baking pan.
  • In a bowl, combine flour, powdered sugar & nuts, then cut in the butter until mixture resembles coarse meal.
  • Press flour mixture evenly into the baking pan & bake 15 minutes.
  • About 5 minutes before crust is done, in a saucepan combine gooseberries, sugar & cornstarch, cooking & stirring about 4 to 5 minutes or until thickened.
  • Pour over baked crust, then let cool completely, before slicing & serving!
