Steps:
- Preheat oven to 400 degrees F. Line muffin pan with liners and set aside.
- In a large bowl, stir together the flour, sugar, baking powder, and salt, and make a well.
- In a medium bowl, beat egg lightly, add creamer and vegetable oil and beat until combined.
- Pour wet ingredients into the well of the dry ingredients and mix gently just until combined, do not overmix, it's okay if the batter is slightly lumpy.
- Add 2 tablespoons of batter to each liner, place an unwrapped caramel in the center, top with another tablespoon of batter. Repeat for the remaining liners.
- Mix topping ingredients together with a fork in a small bowl until crumbly, sprinkle over the top of the muffins and bake for 20 to 25 minutes until golden brown.
- Drizzle with caramel sauce before serving if desired and use caution as caramel center will be molten after removed from the oven. Bake off remaining batter the same way.
GOOEY CARAMEL SAUCE
This caramel is very rich and gooey. It can be thinned with a little water to make a sauce for ice cream or it can be used as-is for a gooey candy filling. Great with apples too! Recipe can be doubled. Because the sugar can turn from caramel to burned rather quickly it is best to have all ingredients measured before starting.

Steps:
- Heat 1/4 cup sugar in a stainless saucepan on medium heat, do not stir until sugar begins to melt.
- Once sugar begins to melt, stir it until it has completely melted and begins to turn golden brown.
- When sugar has started to turn caramel colored, remove pan from heat and immediately add butter and brown sugar and quickly stir together.
- Once the butter and brown sugar are completely melded with the caramel (add gentle heat if needed to incorporate brown sugar), add the vanilla, corn syrup, cream and salt.
- Stir together well.
- The caramel will thicken as it cools.
- If a thinner caramel is required, add water one tablespoon at a time until the desired thickness is reached; if a thicker caramel is needed, reduce the amount of corn syrup used.

Steps:
- Place water and sugar in a medium-sized saucepan on medium-high heat and vigorously stir until sugar is dissolved and begins to boil.
- Once boiling, stop stirring and let boil until the sugar's temperature reads 370 F on a candy thermometer.
- Immediately remove from heat and carefully add butter. Swirl the pan until the butter is completely melted.
- Add the heavy whipping cream and immediately stir vigorously to combine.
- Stir in salt.
- Cool to room temperature.
- Place all ingredients in a mixing bowl and use your hands to mix until the ingredients come together to form fine crumbs.
- Press into the bottom of a greased 8"x8" pan.
- Top with 3/4 cup of the salted caramel from above. If needed, tilt the pan slightly so the caramel will flow to evenly cover the whole crust.
- Preheat oven to 350 F.
- In a mixing bowl, beat sugar and butter until fully combined.
- Mix in the corn syrup and egg.
- Alternately add the flour and the evaporated milk in three additions, mixing until just combined (the batter will appear slightly curdled).
- Evenly distribute topping over caramel.
- Bake for 35 minutes or until the edges of the bars are just turning brown. When you shake the pan, the center should still be somewhat loose but not liquid. Be careful not to over-bake, as you will then lose the gooey aspect of the gooey butter bars.
- Cool to room temperature and optionally drizzle remaining salted caramel sauce on top.
- Cut into squares and serve.

- Caramel Apple Drip Cake with Candied Walnuts. Grated apples give this spiced cake a moist, dense texture, while a caramel glaze and candied walnuts make it truly showstopping.
- Leche Flan with Grapefruit. For the clearest caramel and smoothest custard, ceramic or glass baking dishes work best for cooking this Filipino-American–style dessert.
- Chai-Spiced Monkey Bread. No butter? No problem! This ooey-gooey monkey bread, ribboned with layers of sweet, aromatic spiced pecans and pumpkin seeds and drizzled with caramel sauce, doesn’t need it.
- Saffron–Rose Water Brittle with Pistachios and Almonds. This brittle recipe is a riff on an Iranian candy known as sohan. Its snappy texture and fragrant flavor pair well with bitter tea.
- Giant Chocolate Caramel Cookie Bars. Buttery pat-in-pan shortbread takes the place of mass-produced cookies and gets smothered in from-scratch caramel and silken chocolate in this jumbo version of a classic candy.
- Candy Pork. Large chunks of pork shoulder are braised in a Vietnamese-style caramel sauce (made from a combination of fish sauce and palm sugar) that’s laced with Thai chilies, ginger, garlic, and shallots.
- Burnt-Caramel Custards. These baked custards have all the flavor of crème brûleé without the hassle of kitchen torches or fiery broilers. Get This Recipe.
- Pumpkin-Caramel Tart with Toasted-Hazelnut Crust. A press-in crust, short bake time, and do-ahead option liberate you (and your oven) on Thanksgiving day (or anytime you decide to make this insanely good tart).
- Caramel Corn Clusters. Fall harvest snack? Check. Homemade Halloween treat? Movie-night munchie? Deploy these nutty clusters for any and all occasions.
- Dried Fig and Marsala Tart. Figs soak up a Marsala wine caramel sauce as this tarte Tatin–inspired dessert bakes in the oven. Get This Recipe.

- You can mix the dough by hand, with a stand mixer, or in a bread machine: Combine the milk, eggs, butter, sugar, salt, and instant yeast. The butter will look clumpy.
- Add the bread flour and 1-1/4 cups of the all-purpose flour. Mix by hand or with the stand mixer or bread machine. If you are using a bread machine turn the machine to dough setting. You may need to help the ingredients blend together in the first minute of mixing by stirring the edges with a spatula.
- If the dough is too sticky, gradually add the rest of the all-purpose flour. Continue to knead until the dough is soft and smooth. (See the video to see the texture of the dough).
- Place the dough in an oiled boil. Cover and let rise for 1 to 2 hours. It will get puffy and almost double in size.
