Gooey Pecan Bars image

Feed a crowd and bring in the flavors of pecan pie easily with these gooey pecan bars. Someone get the coffee!

1 box spice or butter pecan cake mix
1 egg
2 cup sticks unsalted butter (melted and divided into a 1/2 each)
1 8 ounce package cream cheese (softened)
16 ounces powdered sugar
2 eggs
1 1/2 cups chopped pecans or nut of your choice

Steps:

  • Preheat the oven to 350.
  • Lightly grease a 9x13 baking pan.
  • In a medium bowl mix the cake mix, one egg and 1/2 cup of melted butter (that's one stick melted).
  • Stir to combine, it will be thick.
  • Using wet fingertips, spread the cake mix evenly over the bottom of the pan. You may have to wet your fingers several times to get it in there evenly.
  • In a small bowl mix the cream cheese, powdered sugar, 2 eggs and remaining 1/2 cup melted butter with a hand mixer until smooth.
  • Stir in the pecans.
  • Spread over the cake mix.
  • Bake 45-50 minutes, tenting your pan lightly with foil after about 35 minutes. The top will brown slightly.
  • Allow to cool completely in the pan before cutting slices.

1 box Butter cake mix (18.25 ounces)
3 large eggs
1/2 cup butter (softened)
2 cups chopped pecans
8 ounces cream cheese (room temperature)
3 1/2 cups powdered sugar

Steps:

  • Pre-heat oven to 350 degrees.
  • In a large mixing bowl, combine the cake mix, 1 egg, butter, and pecans. Mix well.
  • Press into a greased 9x13 pan.
  • In the bowl of a stand mixer, beat together the cream cheese, 2 remaining eggs, and the powdered sugar until well combined. Pour over the crust.
  • Bake for 45-50 minutes or until the top is golden brown and the center is set. It should be gooey, but not runny.
  • Cool completely before cutting, 1-2 hours. Store in the refrigerator.

2 cups all-purpose flour
½ cup granulated sugar
⅛ teaspoon salt
¾ cup butter or margarine
1 cup packed brown sugar
1 cup light-colored corn syrup
½ cup butter or margarine
4 eggs, lightly beaten
2 ½ cups finely chopped pecans
1 teaspoon vanilla

Steps:

  • In a large mixing bowl, stir together the flour, granulated sugar, and salt. Using a pastry blender, cut in 3/4 cup butter until the mixture resembles fine crumbs. press the mixture evenly into a greased 13x9x2-inch baking pan. Bake in a 350 degree F oven for 15 to 18 minutes or until lightly browned; set aside.
  • In a medium saucepan, combine the brown sugar, corn syrup, and 1/2 cup butter. Bring to boiling over medium heat, stirring constantly. Remove from heat.
  • Place the eggs in a medium bowl. Gradually stir about 1/2 cup of the hot mixture into eggs. Return all mixture to saucepan. Stir in pecans and vanilla. Pour nut mixture over baked crust.
  • Bake the bar cookies for 30 to 32 minutes more or until the filling is set. Cool in the pan on a wire rack. Cut into bars to serve.

A friend of mine, who picks pecans every year, brought me some of these yummy bars along with a sack of pecans. They are incredibly rich and gooey, and freeze like a dream. Easy and perfect for the holiday season.

¾ cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square baking pan.
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. Beat in the eggs and vanilla. Stir in the flour and pecans until just blended. Spread the mixture evenly into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven, or until edges begin to pull away from the sides of the pan. Allow bars to cool in the pan before cutting.

This recipe is popular with our entire family. It originated (in our family) with my husband's Aunt Ruby. She was a wonderful cook and a great hostess. These are very rich and gooey, which makes them great with coffee. I only make them around Christmas and we share them with our neighbors.

1 box butter cake mix
4 large eggs
2 stick butter or margarine
1 c chopped pecans
8 oz cream cheese
1 tsp vanilla
4 c confectioners' sugar
1 pinch salt

Steps:

  • 1. Mix together cake mix, one egg, one stick margarine (or butter) and one cup chopped pecans.
  • 2. Pat the above mixture into a 9" x 12" pan, forming crust.
  • 3. Mix together cream cheese, vanilla, one stick margarine (or butter), three eggs, powdered sugar and a pinch of salt.
  • 4. Pour this mixture over crust mixture. Bake at 325 for about 45 minutes.
  • 5. Let cool completely. These are very rich, cut into small, bite size pieces to serve. Store in refrigerator. Really good with coffee. Keeps well for weeks.

I begged for this recipe from my next-door neighbor, when I was in jr. high. She and her sisters used to do some catering on the side, and this was one of their most requested items. This recipe utilizes yellow cake mix for the crust, and not a single egg! Rich, gooey, and oh so good! (NOTE: Pillsbury Moist Deluxe is the best cake mix for these.)

1 (18 ounce) box Pillsbury yellow cake mix (Moist Deluxe)
1/4 cup butter (no substitutes)
4 cups pecan halves
1 cup brown sugar
1/2 cup white sugar
1/2 cup honey
1 cup butter
1/4 cup cream

Steps:

  • Grease a 9x13 pan. Preheat oven to 350 F degrees.
  • Cut butter into cake mix. Pat into greased pan.
  • Cover crust with the pecan halves.
  • In a saucepan, cook the brown sugar, white sugar, honey, and butter over medium heat. Bring to a boil, and boil for 3 minutes.
  • Remove from heat, and add the cream.
  • Pour mixture over pecan halves.
  • Bake 17 - 22 minutes or until bubbly.
  • Let cool completely before cutting into squares.

These bars are awesome, good for any occasion. They are very rich, even though you can only eat a few at a time, I've seen people manage to get half the pan down. I don't know if anyone has seen or had these bars but my mom made them for me when I was a kid and I have no idea where she got it from, but they are to good to wonder. Make it exactly as it says or it won't come out right. This is so not hard to make even though it might seem that way just reading it, try it you won't be sorry. Enjoy for any occassion.

1 (18 ounce) box yellow cake mix
1/2 cup melted butter (1/2 c)
1 egg
1 (8 ounce) package cream cheese
1 lb powdered sugar (1 lb)
2 eggs

Steps:

  • Spray 13x9 in pan, Preheat oven to 350 degrees (a must, timing is critical).
  • Mix cake mix, egg and melted butter in a bowl together with a spoon until cake mix is completely moist. Press into bottom of pan.
  • In another bowl mix cream cheese, the 2 eggs together slowly until it starts to get a little smooth. Then SLOWLY start adding the powder sugar. Mix until smooth and creamy; well blended. Pour over the cake mix crust.
  • Put in the oven right away after its preheated. Bake at 350 for 30 minutes. Top will be golden brown all over, if not it needs just a few extra minutes until it is evenly golden.
  • Let cool before you dig in so you don't burn yourselt and to let it completely set up. Once cooled for the most part ENJOY HEAVEN!
