SOUTHERN PEACH COBBLER



Southern Peach Cobbler image

The best peach cobbler made with fresh or frozen peaches, cinnamon, brown sugar, and a little half and half to make the crust rich and delicious.

4 cups peach slices (can use fresh or frozen)
1/2 cup water (usually need 1 cup if using frozen peaches)
1/4 cup brown sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp vanilla
1 1/2 sticks unsalted butter
1 1/2 cups self-rising flour*
1 1/2 cups granulated sugar
1 1/2 cups half-and-half or whole milk

Steps:

  • Preheat oven to 350. Place butter in 9 x 13-inch dish and melt in oven. Remove dish from oven when butter is melted.
  • Cook peach slices in water with brown sugar, cinnamon, nutmeg, and vanilla until boiling then turn down to a simmer and cook for about 5 minutes.
  • Stir together flour and sugar, then stir in half-and-half (or milk). Slowly pour the batter into the melted butter but do not stir.
  • Gently pour peaches and accumulated juice over the batter. No stirring!
  • Bake at 350 for about an hour or until crust is golden brown.

1/3 cup unsalted butter (, melted)
1 cup pecans (, coarsely chopped)
3/4 cup whole milk
2 teaspoons vanilla extract
1 1/2 cups sugar
1 1/2 cups flour
2 1/4 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups light brown sugar (, packed)
1 1/2 cups hot water

Steps:

  • Preheat oven to 350 degrees.
  • Spray baking spray in a 9x13 baking pan, then pour butter into pan and sprinkle with chopped pecans.
  • In a large bowl whisk together the milk, vanilla and sugar.
  • Add in the flour, baking powder and salt and whisk until just combined.
  • Spoon batter over the butter and pecans, careful to not mix the butter in.
  • Sprinkle the brown sugar over the batter.
  • Gently pour the water over the batter and sugar.
  • Bake for 30-35 minutes. Cool for 10 minutes before serving.

Number Of Ingredients 11

12 -14 ripe peaches, peeled and sliced
1/4 cup sugar
1 teaspoon fresh lemon juice
2 teaspoons cinnamon
3/4 teaspoon powdered ginger
3/4 teaspoon vanilla
1/2 cup unsalted butter
1 1/4 cups flour
1 cup sugar
2 teaspoons baking powder
1 cup milk

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, mix together all the filling ingredients.
  • Set aside.
  • The filling will be a bit juicier than most pies.
  • Melt butter in a 9x13 baking dish in the oven.
  • In another bowl, stir together flour, sugar, and baking powder, and then add the milk.
  • Mix until lightly blended.
  • Spoon the mixture evenly over the melted butter.
  • DO NOT STIR.
  • Pour the peach filling evenly over batter.
  • Bake 45 minutes.
  • Serve warm, with vanilla ice cream or whipped cream if desired.

One 15.25-ounce box yellow cake mix
Two 15.25-ounce cans sliced peaches in light syrup
1/2 cup (1 stick) butter, (melted)
1 tablespoon sugar + 1/4 teaspoon cinnamon ((optional))

Steps:

  • Preheat the oven to 350 degrees F. Spray a rectangular baking dish with nonstick spray (the one we used was slightly smaller than 9x13, but you can use 9x13 if that's what you have).
  • Sprinkle half of the dry cake mix into your prepared dish. Then pour both cans of peaches (with the syrup) on top of the cake mix. Use a spoon to stir the peaches and syrup into the cake mix a little bit. Then sprinkle the rest of the cake mix on top and stir again. Drizzle the melted butter evenly over the top. Add the optional cinnamon/sugar on top, if using.
  • Bake for 45 to 50 minutes, or until nice and golden brown on top. Serve warm with scoops of vanilla ice cream (if desired). Leftovers are also good at room temperature!

So I put some of both along with a little imagination into this recipe. Here is the result. Gooey peachy deliciousness. This would work well with any cobbler friendly fruit.

CRUST
1 c bisquick baking mix
1/2 c brown sugar, firmly packed
1/2 c sugar
2/3 c milk
1/2 stick butter, unsalted
1 tsp pure vanilla extract
GOOEY LAYER
1 pkg cream cheese 8 oz
2 eggs
3 1/2 c powdered sugar
1 stick butter, unsalted melted
1 tsp pure vanilla extract
PEACHES LAYER
3 c fresh or frozen peaches
1/2 c sugar
3 Tbsp flour
1 pinch salt

Steps:

  • 1. Preheat oven to 350 degrees. Place 1/2 stick of butter in a 9x13 pan and melt in the oven.
  • 2. TO MAKE CRUST LAYER: mix all remaining crust ingredients (except butter) until smooth. Pour 1/2 of the mixture in bottom of pan with melted butter. DO NOT STIR.
  • 3. TO MAKE PEACHES LAYER: Put peaches in a medium saucepan mix in flour, sugar and salt. Heat until mixture thickens slightly. Spoon peaches over crust mixture in pan.
  • 4. TO MAKE GOOEY LAYER: Mix all ingredients until smooth and creamy. Pour over peaches. Make sure each layer is distributed evenly in pan as you pour it. DO NOT mix layers once in pan.
  • 5. Drizzle remaining crust mix on top of cobbler (it will not completely cover the gooey layer). iBake for 45-50 min. Let cool at least 15 minutes before digging in. Excellent warm but good cold too.
