Steps:
- Fill 6-quart pot two thirds full of water, add crab boil and stir until blended. Cut potatoes in half and slice in 3/8 inch thick pieces. Add potatoes to pot. Bring to boil and cook until fork tender. While potatoes are cooking, fry bacon on medium heat in saute pan until crispy. Remove and drain on paper towels. Add red onion to bacon grease and cook until caramelized. Just before onions are done, add garlic and cook until lightly brown.
- In serving bowl; add butter, half the cheese, half the bacon bits, half the green onions, cooked red onion, garlic, cayenne pepper, paprika, salt, pepper and sour cream. Mix thoroughly. Strain potatoes and add to bowl. Let stand for a few minutes or until cheese starts to melt. Fold ingredients together, trying not to break of the potatoes excessively. Top with remaining cheese, bacon and green onion. Check seasonings and adjust to taste.
PEPPER JACK AND HORSERADISH DOUBLE BAKED POTATOES "BIG DUNKEE"
Steps:
- Preheat oven to 350 degrees F. Scrub potatoes well to remove all dirt. Pierce with a fork, rub with kosher salt and bake on a sheet pan for 1 hour.
- Meanwhile, in medium skillet over medium heat cook bacon until crisp, remove, drain on paper towels and chop. Remove all but 2 tablespoons bacon grease from the pan and heat over medium-high heat. Add onions and saute for 2 minutes. Stir in the jalapenos and saute for 2 minutes more. Add the garlic and lightly saute for 1 more minute. Set aside to cool to room temperature.
- Remove potatoes from oven and let cool to a workable temperature. Slice potatoes in half, lengthwise and remove the flesh of the potato with a spoon to a bowl. Mix in butter, add pepper and salt to taste. Reserve 8 of the skin halves, discard the other 8.
- Gently fold in the onion, jalapeno and garlic mixture into the potato. Combine the horseradish, sour cream, half the pepper jack cheese and the bacon; add to the potato mixture. Gently fold in the avocado.
- Stuff the potatoes with mixture, top with the remaining cheese and place back in the oven on a baking sheet for 20 minutes at 350 degrees F.

- Combine the potatoes, garlic and bay leaves in a large pot and cover with cold water by about an inch. Add some salt, then cover with a lid and bring to a boil. Lower the heat and simmer the potatoes until a fork can easily pierce the skin, 15 to 20 minutes.
- Preheat the oven to 375 degrees F. Drain the potatoes and return them to the pot with the garlic (be sure to discard the bay leaves). Add the oil and butter and sprinkle with salt and pepper. Using a potato masher, smash the potatoes into a chunky mixture.
- Spread the potato mixture in an even layer in a large casserole or gratin dish. Season the potatoes again with salt and pepper, drizzle with additional oil and sprinkle the Parmesan over the top. Bake the potatoes until a crispy, golden crust forms on top, 35 to 45 minutes. Dot sour cream across the top and garnish with dill, chives and lemon zest while hot.

Steps:
- Slice the potatoes on a mandoline and set aside. Heat a large saute pan and add the butter and olive oil. Add the onions and garlic and saute until translucent, about 3 minutes. Add the potatoes and spread out evenly. Season with salt and pepper and paprika. Deglaze with white wine and add the chicken stock. Cover and cook over medium heat until most of the liquid is absorbed and the potatoes are tender. Add more chicken stock, if needed.
