OLD FASHIONED FLOUR GRAVY
If you have trouble making gravy (trust me, it took me years to make a smooth gravy) try this technique. It's worth the time and effort.

Steps:
- NOTE: Use beef, chicken, or turkey, and broth can be mixed with pan drippings.
- Heat broth.
- In a medium skillet melt butter with peanut oil, add flour, and slowly brown to a dark golden brown (you need to keep an eye on this as it may brown too quickly).
- Slowly add broth, stirring constantly with a whisk.
- Add spices, cook slowly, stirring often, for 20 minutes.
- The cooking time is very important. Flour will have a bitter taste if not completely cooked. This is worth the time.
- If gravy is too thick, it can be thinned with broth to desired consistency.
EASY WHITE GRAVY
Old-fashioned white gravy that uses mainly household items and goes great with biscuits, salmon patties, mashed or other potatoes, eggs, fried bologna or sausage, or your choice of good Southern food. Gravy will thicken further as it cools. Whisk in additional milk to thin as desired.

- Melt butter in 1-quart saucepan until sizzling; add onion. Cook over medium-high heat, stirring occasionally, 2-3 minutes or until softened.

Steps:
- 1. Cook bacon in a skillet until crisp. Remove bacon and crumble on plate.
- 2. Add butter to bacon fat in skillet. Keeping stovve on medium to medium low heat
- 3. Once butter is melted in the pan add your flour and whisk into butter well for about 2 to 3 minutes.
- 4. Now add your milk slowly to the butter and flour mix
- 5. (if desired add in crumbled bacon) Continue whisking till milk comes to boil. Gravy will start to thicken
- 6. Add salt pepper and garlic. (Easy on garlic hard on pepper) to taste
- 7. Whisk in seasoning and continue to whisk gravy till its the desired thickness.
OLD FASHIONED BISCUITS AND GRAVY - COWBOY KENT ROLLINS

- Preheat the oven to 350 degrees F. Lightly butter a 12 inch dutch oven, cast iron skillet or baking pan
- In a large mixing bowl combine the flour, salt, sugar, baking powder and cream of tartar.
- With a pastry cutter or fork, cut the butter into the flour mixture until the butter chunks break down slightly. You don't want to work it to a cracker crumb consistency, but leave some larger butter flakes.
- In a small bowl combine the egg and buttermilk. Stir into the flour mixture just until combined. The dough will be a little sticky. You should be able to see the butter pieces in the dough.
- Turn the dough out onto a generously floured surface. Flour your hands and knead the dough 10 to 15 times. If the dough is still tacky, knead in a little more flour to form a soft dough.
- Pat or roll the dough out to about ¾ to 1-inch thick. Cut with a biscuit cutter.
- Place the biscuits in the skillet, dutch oven or baking sheet. Bake for 10 to 15 minutes or until a light golden brown on top and bottom. Brush the tops with melted butter and serve immediately.

- Place skillet over medium heat.
- Add the pork sausage, break it up with a spoon or fork and let it brown until fully cooked.
- Use a slotted spoon and remove the meat from the pan. Set aside for now.
- Add 2 Tablespoons of butter into the skillet, let melt.
- Add the flour, one Tablespoon at a time, stirring constantly to make a roux.
- Continue to stir and let the mixture cook for a minute or two, don't let it burn.
