Good News-bad News Tuna Salad

I know it's a long name, but it's descriptive. The Good News - my DH loves tuna salad. The Bad News - he devours it faster than I can make a batch of std tuna salad. So I found this way to extend the "refrigerator life" of our tuna salad & he likes it better! Despite the expanded bulk, you don't lose the tuna flavor. This makes a good tuna melt too, but he's always impatient & slathers it on wheat bread. *Enjoy* ! *Edited to Add* DH prefers fresh tomato to sun-dried, but I esp like Redsie's sub of sun-dried tomato -- so consider it an opt chg you can make w/my blessing. :-)

Number Of Ingredients 9

1 (6 ounce) can tuna in vegetable oil or 1 (6 ounce) can tuna in water, drained
2/3 cup mayonnaise
2 eggs (hard-boiled & diced)
2 tablespoons sweet pickle relish
1/4 cup onion (diced, but I often use leek)
1/4 cup cucumber (seeded & diced)
1/4 cup fresh tomato (seeds removed & diced)
1/4 cup cheddar cheese (grated or shredded)
1/2 cup iceberg lettuce (thinly sliced, see prep note)

Steps:

  • Combine the 1st 8 ingredients, mix well & chill in refrigerator.
  • NOTE: When ready to serve -- If you expect to use the entire mixture, add the full amt of lettuce & serve. However, if you expect to have leftovers, add half the lettuce & then add the rest of the lettuce when you serve any leftovers.

1 (6 ounce) can solid white tuna packed in water, drained
1/2 cup tomatoes, seeded and chopped
1/4 cup celery, chopped
1 small carrot, chopped
3 tablespoons reduced-fat mayonnaise
2 tablespoons onions, finely chopped
1 tablespoon capers, drained
1 tablespoon red wine vinegar
2 kaiser rolls, split horizontally

Steps:

  • Mix tuna, tomatoes, celery, carrot, mayo, onion, capers, and vinegar in bowl. Spread 3/4 cup of the salad on bottom of each roll, add the tops, and cut in half.

Simple and easy to make, yet a crowd pleaser. I usually make this for picnics or as finger foods when we are cooking out. Make any changes as necessary to suit your tastes.

2 (6 ounce) cans tuna
2 celery ribs, finely chopped
1 yellow onion, finely chopped
3 tablespoons mayonnaise (more or less to suit your tastes)
1 tablespoon mustard
1 tablespoon relish
pepper (optional)
8 slices whole wheat bread (or whichever type you prefer)
lettuce
sliced ripened tomatoes

Steps:

  • Drain tuna fish and put in mixing bowl.
  • Add in celery, onion, mayo, mustard, relish and pepper.
  • Spread tuna salad on bread (tastes great toasted as well).
  • Top with tomato slices and lettuce.
  • Enjoy!

1 teaspoon yellow mustard
1 (6 1/2 ounce) can tuna, drained
1 -2 tablespoon mayonnaise
1 hard-boiled egg, chopped
1/2 teaspoon salt
1 teaspoon onion, finely chopped
4 slices whole wheat bread
1 tablespoon celery, finely chopped
1 tomatoes, sliced thinly
1 teaspoon sweet pickle relish (or dill)
2 lettuce leaves
1 teaspoon Dijon mustard

Steps:

  • In a medium bowl place tuna, egg, onion, celery, pickle relish, both mustards, mayonnaise and salt.
  • Mix all ingredients well.
  • Spread tuna mixture on 2 of the bread slices.
  • Cover with tomato slices and lettuce.
  • Top with remaining bread slices. Enjoy!
