GOOEY BUTTER PEACH COBBLER

The best of two worlds. I love cobbler and was trying to come up with something different. I also love gooey butter cake and make them often. So I put some of both along with a little imagination into this recipe. Here is the result. Gooey peachy deliciousness. This would work well with any cobbler friendly fruit.

CRUST
1 c bisquick baking mix
1/2 c brown sugar, firmly packed
1/2 c sugar
2/3 c milk
1/2 stick butter, unsalted
1 tsp pure vanilla extract
GOOEY LAYER
1 pkg cream cheese 8 oz
2 eggs
3 1/2 c powdered sugar
1 stick butter, unsalted melted
1 tsp pure vanilla extract
PEACHES LAYER
3 c fresh or frozen peaches
1/2 c sugar
3 Tbsp flour
1 pinch salt

Steps:

  • 1. Preheat oven to 350 degrees. Place 1/2 stick of butter in a 9x13 pan and melt in the oven.
  • 2. TO MAKE CRUST LAYER: mix all remaining crust ingredients (except butter) until smooth. Pour 1/2 of the mixture in bottom of pan with melted butter. DO NOT STIR.
  • 3. TO MAKE PEACHES LAYER: Put peaches in a medium saucepan mix in flour, sugar and salt. Heat until mixture thickens slightly. Spoon peaches over crust mixture in pan.
  • 4. TO MAKE GOOEY LAYER: Mix all ingredients until smooth and creamy. Pour over peaches. Make sure each layer is distributed evenly in pan as you pour it. DO NOT mix layers once in pan.
  • 5. Drizzle remaining crust mix on top of cobbler (it will not completely cover the gooey layer). iBake for 45-50 min. Let cool at least 15 minutes before digging in. Excellent warm but good cold too.

In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

6 1/3 tablespoons sugar
1 tablespoon cornstarch
1 teaspoon fresh lemon juice
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon table salt
3 tablespoons reduced-calorie margarine
1/2 cup nonfat milk

Steps:

  • Preheat oven to 375°F.
  • In a large saucepan, combine peaches, 1/3 cup of the sugar (5 1/3 tablespoons), cornstarch, lemon juice, and cinnamon; toss to coat peaches.
  • Set pan over medium heat and bring to a boil.
  • Cook until mixture thickens, about 1 minute.
  • Remove from heat and transfer mixture to an 8-inch square baking pan.
  • To make the topping, in a large bowl, combine flour, remaining tablespoon of sugar, baking powder and salt.
  • Work in margarine with a fork until mixture resembles coarse crumbs.
  • Add milk and stir until flour mixture is evenly moistened.
  • Drop 8 tablespoons of topping mixture onto peach mixture.
  • Bake until topping is golden brown and filling is bubbly, about 20 to 25 minutes.

Peach season is coming, so I thought I would post this cobbler recipe. This is nice because it doesn't yield a whole bunch, just enough for four servings. And Oh So Yummy! From Cook's Illustrated.

2 1/2 lbs peaches, ripe but firm (6 to 7 medium)
1/4 cup granulated sugar (1 3/4 ounces)
1 teaspoon cornstarch
1 tablespoon fresh lemon juice
1 pinch table salt
1 cup unbleached all-purpose flour (5 ounces)
3 tablespoons granulated sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon table salt
5 tablespoons unsalted butter, cut into 1/4-inch cubes (cold)
1/3 cup plain yogurt
1 teaspoon granulated sugar

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 425 degrees.
  • For the filling: Peel peaches, then halve and pit each. Using small spoon, scoop out and discard dark flesh from pit area. Cut each half into 4 wedges. Gently toss peaches and sugar together in large bowl; let stand for 30 minutes, tossing several times. Drain peaches in colander set over large bowl.
  • Whisk 1/4 cup of drained juice (discard extra), cornstarch, lemon juice, and salt together in small bowl. Toss peach juice mixture with peach slices and transfer to 8-inch-square glass baking dish. Bake until peaches begin to bubble around edges, about 10 minutes.
  • For the topping: While peaches are baking, in food processor, pulse flour, 3 tablespoons sugar, baking powder, baking soda, and salt to combine. Scatter butter over and pulse until mixture resembles coarse meal, about ten 1-second pulses. Transfer to medium bowl; add yogurt and toss with rubber spatula until cohesive dough is formed. (Don't overmix dough or biscuits will be tough.) Break dough into 6 evenly sized but roughly shaped mounds and set aside.
  • To assemble and bake: After peaches have baked 10 minutes, remove peaches from oven and place dough mounds on top, spacing them at least 1/2 inch apart (they should not touch). Sprinkle each mound with portion of remaining 1 teaspoon sugar. Bake until topping is golden brown and fruit is bubbling, 16 to 18 minutes. Cool cobbler on wire rack until warm, about 20 minutes; serve.

1/2 cup sugar (for peaches)
1/4 lb butter
3/4 cup milk, for batter
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon baking powder
3/4 cup flour

Steps:

  • Heat the peaches in saucepan with 1/2 cup sugar, til good and hot.
  • (if using canned peaches, don't add sugar).
  • Melt butter in 2 qt baking dish.
  • Mix dry ingredients for batter.
  • Add 3/4 cup milk, beating until all the lumps are gone.
  • Pour batter onto melted butter.
  • DO NOT STIR!
  • Spoon hot peaches onto the batter.

This recipe is adapted from an old community cookbook from Oklahoma. It is different from traditional cobblers because it doesn't have a biscuit or pastry crust. It has a sugar cookie-type crust and the filling has a meringue-like texture. This is delicious served warm with vanilla ice cream.

1 cup all-purpose flour
5 tablespoons powdered sugar
1/2 cup margarine, melted
2 eggs
1 1/2 cups granulated sugar
1/3 cup flour
3/4 teaspoon baking powder
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon cinnamon
4 cups peeled sliced fresh peaches

Steps:

  • Preheat oven to 350ºF.
  • In a small bowl, combine the 1 cup flour and powdered sugar. Add the melted margarine and stir until well mixed. Pat this mixture into the bottom of a greased 9x13" baking dish. Bake for 15 minutes. Remove from oven.
