LUCKY PEA SOUP
This delicious black-eyed pea soup is a favorite of ours especially when the weather is chilly. It's a great way to start the year with a kicked-up, spicy serving of black-eyed peas! Top with shredded cheese, parsley, green onions, and crumbled bacon to add even more flavor.

Steps:
- Place the bacon in a skillet and cook over medium-high heat until crisp and evenly brown. Drain on paper towels. When cool, crumble into small pieces.
- Using the same skillet, add the peppers and onion; stir and cook over medium-high heat until transparent and tender, about 5 minutes.
- Pour the black beans, tomatoes, and water into a large pot. Stir in the peppers, onion, salt, cumin, dry mustard, chili powder, curry powder, pepper, and sugar. Bring to a boil, reduce heat to medium, cover, and simmer 20 to 25 minutes. Serve hot sprinkled with bacon, and other toppings of your choice.

GOOD LUCK SOUP IN A JAR

This brings much luck and never to go hungry and always wanting to share with those in need or want. I make 12 pint jars and give for Christmas gifts. Oh So So so perrrfect for the cold weather to come......................

- In a 1 1/2 pint jar, layer the bouillon, to the Bay leaves. Tap jar so ingredients settles. Wrap the pasta in a baggie, and place in the jar. Seal tightly.
- Attach a label to the jar with the following instructions:.
- TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef and drain excess fat add garlic to brown slightly. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 minutes, or until the pasta, peas, lentils and barley are tender.
- Season with salt and pepper if needed.

This soup will bring you good luck for the new year! It is a yummy way to make sure you have your black-eyed peas - a Southern New Year's tradition.

- In a large saucepan with enough water to cover, soak the black-eyed peas 8 hours, or overnight.
- Drain and rinse the soaked black-eyed peas, and return to the saucepan. Mix in the beef broth, dry onion soup mix, sausage, rice, and green chilies. Season with pepper. Bring to a boil, reduce heat, and simmer 1 hour and 30 minutes, or until the beans are tender. Add water as necessary to keep the ingredients covered with liquid.

Steps:
- Wash beans.
- Place bouillon, chicken and beans in large pot with water.
- Boil; reduce to slow boil for 45 minutes.
- Sauté onion in oil and add tomatoes and thyme.
- Mix well.
- Pour tomatoes into bean pot.
- Continue to cook at a low boil; add sausage and chili powder.
- Let simmer for 1 hour and 45 minutes.
- After that time has passed, turn stove off and stir in the sherry.
- Let stand for 15 minutes before serving.

- In a large stock pot or Dutch oven, brown sausage along with onion and garlic. When the sausage browned add all of the other ingredients and mix well. Bring up to a boil. Reduce heat to simmer and cook for 45 minutes to an hour.
- If you want to do this in your slow cooker. Brown the sausage with the onion and garlic first in a skillet. When browned place the meat with the other ingredients in a 5 - 6 quart slow cooker and cook on low 6-8 hours or on high for 3-4 hours.
- Serve with your favorite cornbread. Letting this soup sit a day or 2 will meld the flavors even more.
GOOD LUCK SOUP
Also called New Year's Day Soup. We had leftover ham; so I searched through my cookbooks and found this recipe (in Southern Living book)! I made a few changes. It is absolutely wonderful and healthy! I could eat it everyday! It you would like a vegetarian version use vegetable broth and leave out the ham.

- 1. Saute first 5 ingredients over medium heat in a large soup pan, until vegetables are tender.
- 2. Stir in black eyed peas and next 4 ingredients; bring mixture to a boil. Cover, reduce heat, and simmer 1 1/2 hours. Stir in spinach, parsley and pepper. Serve.
- 3. Note: I used dried black eyed peas (soak over night), and then cook for 1 1/2 hours; drain most of the liquid and then proceed with recipe. I used frozen spinach and dried parsley and added when I added the beans to the sauteed veggies. If you want to cook in the slow cooker just throw everything in and cook for 5 or 6 hours.
