MARY BERRY'S BOOZY RUM TRUFFLES
These easy no-cook truffles are ready in a jiffy and are a lovely homemade Christmas gift to make with children

Steps:
- You will need about 40 petit four cases on a baking sheet. Measure the rum, raisins, jam, biscuits and cake into a large bowl. Add the melted chocolate and mix together very thoroughly until all of the mixture is covered in chocolate.
- Shape into about 40 little truffle balls and roll each one in the chocolate vermicelli strands. Place in the petit four cases.
- Leave to chill in the fridge for about 1 hour before eating
'GOOD FOR YOU' BERRY TRUFFLES
This is just the thing for when you get a chocolate craving but don't want to go for anything too unhealthy. Creamy smooth, deep chocolate flavor with a hint of berry. Very easy to make, and pretty much guilt-free! I used only about 10 dates and added stevia to taste so there would be less sugars.

- Blend all, except crushed walnut or coconut, in a food processor, scraping sides occasionally till the mixture is smooth.
- Shape into small balls and roll in walnut or coconut.
- Store in refrigerator.

- In a small sauce pan simmer heavy cream. Remove from heat, add softened butter and stir until butter is completely melted and combined with heavy cream. Add powdered dried blueberries and stir to combine. Set aside.
- Over a double boiler melt chopped white chocolate, stirring casually until smooth and completely melted. DO NOT heat above 105 F (if touched with your finger, it will feel about the same temperature as your body).
- Gently stir in lukewarm blueberry mixture into melted chocolate. It should be approximately the same temperature as melted chocolate when you combine them.
- Cool to room temperature, cover with plastic wrap and refrigerate until firm enough to roll the balls (2-3 hours or overnight). While it’s cooling take it from the fridge and stir with a fork to prevent the fat separate on top. Cover with plastic wrap and place back into the fridge.
