Recreated from the Good Earth restaurant in Cupertino, California by Diana McAnulty's search for a veggie burger her kids would devour! Adapted from Vegetarian Times magazine.

Yield 9-12 burgers

Number Of Ingredients 11

3 cups cooked brown rice
12 ounces cooked chickpeas, mashed
1 medium onion, chopped fine (about 1 1/2 cups)
4 ounces cooked red beans, mashed (or adzuki beans)
1 medium carrot, shredded (1/2 cup)
1/2 cup ground almonds (or almond flour or breadcrumbs)
1/2 cup roasted unsalted sunflower seeds
1/2 cup fresh parsley, minced (or 3 large tbls.dried)
1/4 cup soy sauce
2 large eggs, lightly beaten
1 teaspoon dried thyme

Steps:

  • Stir all the ingredients together in a large bowl. Shape into large patties.
  • Coat a skillet with cooking spray. Heat over medium high heat.
  • Cook the patties 4-5 minutes per side, or until browned on outside and cooked through on the inside. Use a wide spatula to flip the burgers, they can be fragile.
  • Place in burger buns, or on bread. Use your favorite condiments.
  • Enjoy!

Good Earth Vegetable Bean Soup image

This is the house soup at Good Earth restaurant. It is so good.

Number Of Ingredients 16

3 medium carrots coined
1 medium yellow onion 1/4 inch dice
3 stalks celery 1/4 inch dice
1/2 pound mushrooms sliced
2 cloves garlic chopped
1 tablespoon fresh basil chopped
1 tablespoon fresh oregano chopped
1 tablespoon fresh tarragon chopped
2 cups frozen corn
2 cups fresh peas
3 quarts vegetable stock
1 teaspoon kosher salt
2 cans whole peeled tomatoes
1/2 tablespoon ground black pepper
1 pound anasazi beans cooked
1 tablespoon fresh thyme

Steps:

  • In a large soup pot, combine carrots, onions, celery, mushrooms, garlic and herbs. Add stock and bring to a boil. Immediately reduce to a simmer. Add tomatoes, corn, peas and mushrooms. Cook 15 minutes. Add cooked beans*, salt and pepper. *To cook beans: Soak overnight in cold water. After soaking, rinse thoroughly. Cover with water and cook until soft. Drain and rinse before adding to soup.
