GOOF BALLS
A marshmallow treat covered with caramel and crispy rice cereal.

Steps:
- Line a baking sheet with waxed paper. Pour the crispy rice cereal into a large bowl.
- Combine the margarine, sweetened condensed milk, and caramels in the top of a double boiler. Stirring constantly, cook over lightly simmering water until melted and combined, about 5 minutes.
- Use a wooden skewer to dip each marshmallow in the hot caramel mixture. Immediately roll caramel coated marshmallow in the crispy rice cereal. Remove from skewer and place on the waxed paper to harden.

GOOF BALLS
This is a delicious candy for the holiday season, and is a real hit at school concession stands. I got the recipe from my sister-in-law's mother-in -law. It does take some time, but is well worth the effort. I double the recipe to use a whole can of sweetened condensed milk.

- Dip the marshmallows in the caramel.
- Roll the covered marshmallow in the crispies.
- Cool on wax paper or tinfoil.
OREO® BALLS
This is a major hit at my house! Made them for Christmas and also for my mother on Mother's Day! Hint: when mixing Oreos® and cream cheese, do it with your clean hands! Store remaining Oreo® balls in a covered container in the refrigerator.

- Line a baking sheet with parchment paper.
- Mix cookie crumbs and cream cheese together in a bowl; roll into balls and arrange on the prepared baking sheet. Freeze cookie balls until solid, about 1 hour.
- Melt almond bark in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Dip cookie balls in the melted almond bark, removing balls using 2 forks to allow excess bark drip back into double boiler. Arrange coated cookie balls on the baking sheet; refrigerate until coating is firm, about 10 minutes.

- In a large bowl, beat peanut butter and butter until blended; gradually beat in confectioners' sugar until smooth. Stir in cereal. Shape into 1-in. balls. Refrigerate until chilled., In a microwave, melt chocolate chips and 1/4 cup shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. Place on a waxed paper-lined pan. Let stand until set. , In a microwave, melt white baking chips and remaining shortening. Stir until smooth. Drizzle over candies. Refrigerate until set.

- Melt the butter in a microwave safe bowl. In a large bowl, combine the oats, peanut butter, honey, cinnamon, and cocoa. Pour the melted butter on top and stir until the mixture becomes homogeneous. Place the bowl into the freezer for 10 to 20 minutes. Form the mixture into individual balls, using your hands or a #20 ice cream scooper, and drop them onto wax paper to set. Try adding chopped walnuts, raisins, or crisped rice to add a little spin to the recipe. If the result is too gooey, add more oats. If it's too dry, add more peanut butter or honey.
