This bread pudding recipe has been passed down three generations. I have included the brown sugar sauce and lemon sauce recipes to serve with this pudding. My youngest daughter's favourite.

3 eggs, beaten
1 cup whipping cream
1 cup milk
3/4 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
4 cups stale bread, cubes (white bread is best)
1/2 cup raisins (optional)
cinnamon
2 tablespoons flour
1 tablespoon butter
1 cup packed brown sugar
1 cup boiling water
1 teaspoon vanilla
1/2 cup sugar
1 1/2 tablespoons cornstarch
1/8 teaspoon salt
1 cup boiling water
2 tablespoons butter
1/2 tablespoon lemon rind, grated
3 1/2 tablespoons fresh lemon juice
3 -5 drops lemon extract

Steps:

  • Whisk together eggs, whipping cream, milk, salt, sugar, and vanilla.
  • Stir in bread cubes and raisins.
  • Turn into greased 9x9 inch pan.
  • Sprinkle with cinnamon.
  • Bake 350 degrees F.
  • for about 30 minutes.
  • Serve with brown sugar sauce or lemon sauce.
  • Brown Sugar Sauce: In saucepan, work together flour and butter.
  • Add brown sugar.
  • Stir.
  • Gradually add boiling water.
  • Stir until smooth.
  • Boil until thick.
  • Remove from heat.
  • Stir in vanilla, serve warm.
  • Lemon Sauce: Combine sugar, starch, and salt.
  • Gradually add boiling water.
  • Stir until smooth.
  • Cook over low heat until thick and clear.
  • Remove from heat.
  • Add remaining ingredients.
  • Serve warm.

OLD FASHIONED BREAD PUDDING



Old Fashioned Bread Pudding image

Old fashioned bread pudding is made with just a few simple ingredients. This recipe is foolproof because of the handy oven temperature trick!

2 tablespoons unsalted butter
6 cups bread chunks ((you can use stale or fresh but stale is more old fashioned))
2 cups milk
1 teaspoon vanilla extract
1/2 cup granulated sugar
2 tablespoons granulated sugar
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
4 eggs
1/2 cup raisins

Steps:

  • Preheat the oven to 400 F. Put the butter in a 9 inch cake pan or pie plate, and place the pan in the oven for a couple of minutes to melt the butter.
  • Remove the pan and swirl the butter evenly over the bottom of the pan.
  • Sprinkle 2 tablespoons of granulated sugar in the bottom of the pan. Set aside.
  • In a large mixing bowl, combine the milk, sugar, salt, nutmeg, cinnamon,vanilla, eggs. Whisk briefly until just combined.
  • Add the bread chunks to the mixing bowl. If you are using raisins, add them now as well.
  • Stir until well saturated with liquid. Use your fingers to massage the mixture and break up any large chunks.
  • Gently place the soaked bread chunks in the pan, on top of the butter/sugar mixture. Fill in any gaps in the bread and gently press down on the top to make it even. Pour any remaining liquid evenly over the top.
  • Place the pan in the oven. Bake for 15 minutes at 400 F, then turn the oven down to 300 F and bake another 15 minutes. The bread pudding is done when the temperature in the middle reaches 175 F, or when the center jiggles but does not slosh.
  • Remove from oven and cool on a rack for 30 minutes. Serve slightly warm, or let cool to room temperature, then refrigerate. Also tastes wonderful chilled.

This bread pudding recipe is easy to make with just a few simple ingredients. This is one of our family's favorite recipes and perfect served with a big scoop of ice cream!

1 loaf day-old challah bread (cubed into 1-inch pieces)
5 large eggs (lightly beaten)
1 cup (200 grams) granulated sugar
4 cups (960 ml) whole milk
1 teaspoon pure vanilla extract
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon

Steps:

  • Spray a 9x13 baking dish with nonstick cooking spray. Place the cubed challah bread into the prepared baking dish and spread it around into an even layer. Set aside.
  • In a very large mixing bowl, whisk together the eggs, sugar, milk, vanilla, nutmeg, and cinnamon until fully combined. Pour the mixture evenly over the bread in the prepared baking pan, making sure all of the bread is coated. Allow to sit and soak up the mixture for about 15 minutes.
  • Meanwhile, preheat the oven to 350°F (177°C). Once the 15 minutes is over, place the bread pudding in the oven and bake for 45 to 50 minutes or until the top is set.
  • Remove from the oven and allow to cool slightly before serving.

500g white or wholemeal bread
500g/1lb 2oz mixed dried fruit
85g mixed peel
1½ tbsp mixed spice
600ml milk
2 large eggs, beaten
140g light muscovado sugar
zest 1 lemon (optional)
100g butter, melted
2 tbsp demerara sugar

Steps:

  • Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
  • Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
  • Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
  • Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
  • Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
  • Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

Steps:

6 large eggs beaten
1 c light Karo syrup
1 c heavy cream
1/2 c butter, melted
2 tsp vanilla extract
1 c sugar
1/4 c dark rum or bourbon
8 c cubed bread (use a hearty or heavy bread) does not have to be stale or toasted
1 c chopped or halved pecans divided
RUM SAUCE
1 stick butter
1 c sugar
1/4 c dark rum or bourbon
1/4 c water (if you want a heavy rum or bourbon flavor omit water and use liquor in its place

Steps:

  • 1. I mix mine in the mornings, let sit until I finish dinner and pop it in the oven before we sit down to eat :)
  • 2. In a large mixing bowl add eggs and slightly beat.
  • 3. Add everything but the bread and pecans. Mix well until it is combined really good.
  • 4. Fold in bread and half the pecans.
  • 5. Let sit at room temperature for 1 hour mixing every so often to coat bread well. Cover and refrigerate until you are ready to bake. This recipe is best if left to sit for 6-8 hours or overnight. It gives the bread plenty of time to soak everything up!
  • 6. Preheat oven to 350 degrees. Prepare a 9x13 baking dish with butter or cooking spray. (I use a little smaller size because I like a thicker bread pudding.) Use whatever size you want :)
  • 7. Pour everything into your prepared baking dish.
  • 8. Top with remaining pecans.
  • 9. Pop in the oven and bake for 60 minutes.
  • 10. RUM SAUCE: While bread pudding is baking, in a saucepan melt stick of butter.
  • 11. Add sugar, dark rum or bourbon, and water. Mix well and simmer for 10 minutes stirring occasionally. Turn stove eye off and let sit to keep warm until bread pudding is finished.
  • 12. Remove from oven.
  • 13. While still hot, pour half the rum sauce over the top. Letting it get down between the pudding and sides of baking dish.
  • 14. Let sit for 15 minutes and pour more sauce over it. You judge how much of the sauce you want - some or all it is up to you. I use it all, lol.
  • 15. Enjoy! I like mine warm with vanilla ice cream and hubby eats his with fresh whipped topping.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 10x12-inch baking pan.

12 slice bread
1 stick butter, softened or melted
1 tsp cinnamon
1 c raisins
1 c pecans or walnuts, chopped
4 c milk
1 c white sugar, separated into 1/2 cups each
3 eggs
1 tsp vanilla
FOR THE SAUCE:
1/2 c butter
2/3 c light cream, or evaporated milk
1/3 c white sugar
1-2 drops amaretto extract

Steps:

  • 1. Mix together the cinnamon and 1/2 cup sugar.
  • 2. Spread bread slices generously (on both sides) with softened or melted butter, then liberally dust both sides of the bread with the cinnamon/sugar mixture. Cut each slice into quarters.
  • 3. In a square baking dish or a DEEP pie dish layer the buttered bread with raisins, and nuts.
  • 4. Make a second layer using the remaining bread, raisins, and nuts.
  • 5. Heat milk. Add the eggs, vanilla, and the remaining 1/2 cup sugar and stir until sugar is dissolved. Pour mixture over the bread until fully covered.
  • 6. Set baking dish in shallow pan of hot water and bake at 350F for 45 minutes.
  • 7. While the bread pudding is baking, combine sauce ingredients in a medium saucepan. Cook and stir over medium heat until creamy. (If using amaretto liqueur for flavoring, heat it long enough for the liquor to cook out.) Ladle over top of the bread pudding, or over each serving of pudding.
