This tasty recipe is being posted per a request on the boards. I got it from a fund raiser cookbook put out by the ladies who live in our retirement park. It's very easy to prepare...Takes no time at all...They go nicely on Christmas trays, or, for that fact, any time of year! Yield and prep. times are guesses on my part. I've included freeze time, approx. an hour or so, and prep. time to mix ingredients, 15 min., together. Times may differ for you depending on how quick your freezer will set up the "Golf Balls"...so you can dip them in the chocolate and paraffin mixture. Don't know whether you want to call these candy or cookies...They're made with peanut butter and Rice Krispies, and become a sweet little treat no matter what you call them.

Number Of Ingredients 8

3 cups Rice Krispies
2 cups chunky peanut butter
1 lb powdered sugar
3/4 cup melted margarine
1 teaspoon vanilla
1 (6 ounce) package semi-sweet chocolate chips
1 (6 ounce) package sweet chocolate chips
3 ounces paraffin wax

Steps:

  • Mix first five ingredients together.
  • Form into balls and freeze.
  • Melt chocolate chips and paraffin wax together.
  • Dip balls in chocolate mixture while balls are still frozen.
  • You can also use 1 lb.
  • of white almond bark, melted, with food coloring of your choice, ie.
  • ,red, green, blue, etc.
  • ,instead of the chocolate, adding as many drops as desired.
  • Or, for vanilla affect, use 1 lb.
  • of white almond bark, without food coloring.

Kid-Friendly Rum Balls image

Super easy and kid-friendly rum balls made from crushed biscuits, sweetened condensed milk, cocoa and coconut and ready in just 5 minutes. This is a great recipe to make with the kids (and great for school lunch box treats).

250 g plain sweet biscuits
395 g sweetened condensed milk
85 g (1 cup) desiccated coconut
25 g (1/4 cup) cocoa powder
130 g (1 and 1/2 cups) desiccated coconut (for rolling, extra)

Steps:

  • Crush the biscuits until they resemble fine crumbs using either a food processor, blender, Thermomix or rolling pin (see notes) and then place into a large bowl.
  • Stir through the cocoa powder, desiccated coconut and sweeteened condensed milk until well coated.
  • Using your hands, roll heaped teaspoons of the mixture into balls and then roll through the extra coconut to coat.
  • Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 2 months.
  • Place the biscuits into the Thermomix bowl and crush on Speed 8, 10 seconds. Scrape down the sides of the bowl.
  • Add the cocoa powder, desiccated coconut and sweeteened condensed milk and mix on Reverse, Speed 4, 10 seconds. Scrape down the sides and repeat for a further 5-10 seconds or until combined.
  • Using your hands, roll heaped teaspoons of the mixture into balls and then roll through the extra coconut to coat.
  • Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 2 months.

2 c creamy peanut butter
2 c rice krispies cereal
2 c powdered sugar
1 stick butter or margarine, softened
1/2 bar paraffin wax
6 oz butterscotch chips
6 oz chocolate chips

Steps:

  • 1. Mix the peanut butter, rice krispies, powdered sugar and soft butter together. Shape into balls and place on wax paper.
  • 2. Slowly melt together the paraffin wax, chocolate chips and butterscotch chips.
  • 3. Dip each ball into melted mixture and place back onto cookie sheet lined with waxed paper. Refrigerate.
